Abstract

FIBRAS DIETÉTICAS SOLÚVEIS COM ELEVADO TEOR DE FIBRAS E BAIXO TEOR DE AÇÚCAR, PRODUTOS QUE INCLUEM AS MESMAS E MÉTODOS PARA PRODUÇÃO E USO DAS MESMAS. A presente invenção fornece fibras dietéticas solúveis, produtos alimentícios e bebidas que incluem as mesmas e métodos para produção e uso das mesmas. Em um aspecto, a invenção fornece uma fibra dietética solúvel que tem um teor de fibras de pelo menos 97%, conforme medido pela norma AOAC 2001.03, e um teor de DP1+DP2 de não mais que 3% em peso (por exemplo, não mais do que 2%) com base em sólidos secos. A fibra dietética solúvel pode ser útil em uma variedade de aplicações alimentícias e bebidas, incluindo alimentos e bebidas fermentados, tais como cerveja e saquê, bem como alimentos e bebidas úteis em dietas cetogênicas.
