método para operar um forno de cozimento. trata-se de um método de controle para operar um forno de cozimento em um programa de fritura por imersão que é configurado para um ajuste de temperatura predeterminado, em que o forno de cozimento tem uma cavidade de forno, uma bandeja disposta na cavidade de forno, um elemento de aquecimento inferior para aquecer a parte inferior da cavidade, uma ventoinha localizada na parede posterior da cavidade e um elemento de aquecimento em anel que circunda a ventoinha. o método compreende os seguintes estágios: (a) uma fase de acaloramento em que o elemento de aquecimento em anel é continuamente operado e o elemento de aquecimento inferior é intermitentemente operado, sendo que a fase de acaloramento é conduzida até alcançar uma temperatura da cavidade de forno que corresponde à temperatura definida mais uma primeira histerese predeterminada; (b) uma fase de conservação subsequente em que o elemento de aquecimento inferior e o elemento de aquecimento em anel estão não operativos; e (c) uma fase de fritura conduzida após alcançar uma temperatura na cavidade de forno que corresponde à temperatura definida menos uma segunda histerese predeterminada, sendo que a fase de fritura compreende operar contínua ou intermitentemente o elemento de aquecimento em anel e operar intermitentemente o elemento de aquecimento inferior, de modo a aumentar a temperatura na cavidade de forno até uma temperatura que corresponde à temperatura definida mais uma terceira histerese predeterminada.
