Abstract

processo para operar um dispositivo de pasteurização. a invenção se refere a um processo para operar um dispositivo de pasteurização para a pasteurização de alimentos envasados em recipientes vedados. os alimentos são tratados nas zonas de tratamento por aplicação de um líquido de tratamento aquoso temperado em um lado externo do recipiente. o líquido de tratamento é realimentado para pelo menos uma zona de tratamento para reutilização por alimentações do circuito de circulação de um circuito de circulação. um fluxo parcial do líquido de tratamento é continuamente removido do circuito de circulação e filtrado por meio de um dispositivo de filtragem por membrana. além disso, um biocida selecionado de um grupo que consiste em hipoclorito, ácido peracético, dióxido de cloro e bronopol ou uma mistura de biocidas selecionados deste grupo é adicionado ao líquido de tratamento como produtos químicos do processo, de tal forma que uma concentração do biocida ou uma concentração total de biocidas não exceda 0,4 mmol/l. além disso, um agente regulador de ph que compreende pelo menos um ácido inorgânico ou orgânico é adicionado ao líquido de tratamento como produtos químicos do processo, de tal modo que o valor de ph do líquido de tratamento seja ajustado em uma faixa de 3,5 a 7,0.
