métodos de biocatálise de mogrosídeo. trata-se de extratos de fruta-dos-monges contendo glicosídeos de mogrol como mogrosídeo v que podem ser tratados com enzimas sob condições de reação específicas para mudar a distribuição do produto de reação de siamenosídeo i. as enzimas modificadas são também empregadas para mudar a distribuição de siamenosídeo i de modo a aumentar o rendimento de siamenosídeo i e reduzir os contaminantes de reação. são também descritos métodos de purificação de produto de reação de bioconversão. o siamenosídeo i obtido usando esses métodos é um adoçante útil e intensificador de sabor para composições para alimentos e bebidas e similares.
