Abstract
a invenção refere-se a um método para preparar um extrato de ervilha compreendendo fibras, o método compreendendo as seguintes etapas: (a) colocar as ervilhas descascadas em contato com uma solução aquosa de modo a formar uma composição aquosa compreendendo ervilhas; (b) deixar as ervilhas hidratarem na referida composição aquosa por pelo menos 30 minutos e no máximo 15 horas; (c) moer as referidas ervilhas, como resultado, de modo a obter ervilhas moídas; e (d) fracionar as referidas ervilhas moídas de modo a produzir pelo menos um extrato de ervilha compreendendo fibras. a invenção também se refere a um extrato de ervilha que pode ser obtido de acordo com o processo da invenção. a invenção também se refere a uma composição comestível compreendendo o extrato de ervilha de acordo com a invenção.
