Abstract

"PROCESSO ENZIMáTICO PARA O PREPARO DE óLEO DE ESPECIARIAS". A presente invenção fornece um processo para a eficiente extração de óleo de especiarias, de especiárias frescas ou desidratadas por se enfraquecendo enzimaticamente a parede da célula resultando na extração otimizada de óleo utilizando um preparo de enzima, o qual contém enzimas degradantes da parede da célula tais quais celulase, hemicelulases, pectinase, protease etc., obtidas de culturas de fungos ou bactérias podem ser adotadas eficientemente para este propósito.
