Abstract

"INVóLUCRO PARA EMBUTIDOS à BASE DE POLìMEROS E MéTODO PARA A PRODUçãO DO MESMO". é descrito um invólucro para embutidos à base de polímeros, adequado para ser usado com carnes não cozidas, tais como chouriço. Uma resina polimérica é misturada com um agente de controle de barreira à base de silício, preferencialmente um silsesquioxano oligomérico poliédrico, para se aumentar a permeabilidade do invólucro para embutidos. A mistura resultante pode ser estirada orientada biaxialmente para a produção de um invólucro para embutidos à base de polímeros de uma única camada adequado para ser usado com carnes embutidas não cozidas, tal como chouriço, e adequado especificamente para a permeabilidade a gases e umidade necessária durante o processo de cura de carnes embutidas não cozidas. Estes invólucros à base de polímeros também podem ser empregados para embutidos cozidos ao se selecionar um agente de controle de barreira à base de silício que aumente a barreira a gases e umidade, aumentando, desta maneira, a vida útil de embutidos não descascados. é descrito também um método para melhoria da capacidade de desprendimento de invólucro para embutidos cozidos, ao se injetar um revestimento fino de um agente de liberação, sem a adição de um agente tensoativo, no invólucro para embutidos durante o processo de franzimento. O agente de liberaçã e uma solução de hidroxipropil metilcelulose que cria um agente de liberação de baixa viscosidade que melhora efetivamente a capacidade de desprendimento de qualquer tipo de invólucro para embutidos, mas preferencialmente para ser usado com o invólucro para embutidos à base de polímeros da presente invenção.
