Abstract
"PROCESSAMENTO DE FARINHA DE MANDIOCA FERMENTADA OU PUBA". A presente invenção refere-se a uma farinha alimentícia crua, obtido da raiz da mandioca (Manihot esculenta), utilizada em produtos de panificação, massas, mingaus, pudins, bolos, e etc. O processo consiste na fermentação natural das raízes imersas em água, preparo da massa com homogeneização e 'lavagens', prensagem, secagem e/ou desidratação e moagem.
