Abstract

"PROCESSO DE FORMAçãO DE INGREDIENTE ALIMENTAR FUNCIONAL". A presente invenção fornece processos de produção de um ingrediente alimentar funcional de soja inovador. Um material de soja contendo menos de 65% de proteína de soja em peso em base livre de umidade é hidratado. Em um aspecto da presente invenção, o material de soja é hidratado com pelo menos 2 partes de água por parte de material de soja, em peso. Pelo menos 1 parte de proteína de soja no material de soja hidratado é então parcialmente desnaturada. Em um aspecto da presente invenção, um material de soja hidratado contendo pelo menos 2 partes de água por parte de material de soja, em peso, é desnaturado através do tratamento do material de soja hidratado a uma temperatura de aproximadamente 75<198>C aproximadamente 160<198>C. Em outro aspecto da presente invenção, um material de soja hidratado é desnaturado através da submissão do material de soja hidratado a corte a uma temperatura de pelo menos 40<198> material de soja hidratado e parcialmente desnaturado é então seco de forma que o material de soja seco possua índice de solubilidade de nitrogênio de cerca de 30% a cerca de 80% e teor de proteína de menos de 65% em peso em base livre de umidade.
