La présente invention concerne une machine à désosser les jambons.
On sait qu'actuellement, le jambon séché entier est normalement introduit sur le marché sous deux formes différentes, suivant qu'il est désossé ou non.
Le jambon désossé a obtenu et obtient actuellement un succès commercial toujours croissant, avec pour conséquence une demande toujours plus importante de la part des consommateurs.
C'est à cause de cette demande en constante augmentation, qu'est née la nécessité d'exécuter le désossement des jambons d'une façon beaucoup plus simple, plus rapide, plus sûre et plus économique.
On sait qu'actuellement le désossement du jambon séché est effectué de façon purement .manuelle.
Il est évident qu'une telle façon d'opérer un désossement est quelque peu onéreuse parce que cela demande des employés très spécialisés et en outre le temps employé pour chaque désossement est trop élevé. En outre, étant donné la surface grasse du jambon, le désossement est quelque peu dangereux à cause de l'état glissant des jambons, ainsi que des tranchants très aiguisés dont sont munis les ustensiles utilisés pour cette opération. C'est à cause de ces inconvénients que l'industrie de ce secteur a profondément senti le besoin d'une machine pour effectuer le désossement du jambon séché entier.
La présente invention a pour but de procurer une machine pour le désossement des jambons, laquelle, dans le cadre d'une construction simple et rationnelle, élimine les inconvénients ci-dessus indiqués.
Selon l'invention, la machine proposée est constituée d'un plan de travail dans la partie avant duquel est placée une plaque

Sur les côtés du berceau sont disposés symétriquement, selon l'invention, des moyens de serrage, oscillant dans un plan horizontal, pouvant se refermer sur le jambon pour le maintenir pendant l'opération de désossement, et ils sont en combinaison avec des moyens écarteurs également oscillant dans un plan horizontal, lesquels peuvent élargir l'incision qui est effectuée sur le bord du jambon. La machine est de plus munie de moyens pneumatiques
qui commandent en synchronisme les moyens ci-dessus de serrage
et d'écartement.
On prévoit en outre, dans la présente invention, des moyens pour extraire l'os du jambon ainsi bloqué et écarté. Ces moyens, selon une solution préférée, sont constitués d'une colonne postérieure au sommet de laquelle pivote un système articulé constitué de trois bras qui se prolongent jusqu'à rejoindre la zone antérieure de la machine à proximité du berceau sur lequel est placé
le jambon. A l'extrémité inférieure de ce système articulé on prévoit une pince à deux mâchoires, prévue pour serrer l'os du jambon et en effectuer, dans deux temps successifs, la traction vers l'avant et vers le haut.
Il est évident que l'on demande uniquement à l'opérateur de porter et d'introduire le jambon sur le berceau et de l'en retirer.
Le désossement effectué de cette façon est très efficace parce que l'opérateur a une main libre qui lui permet de déplacer des morceaux de viande qui l'empêchent de bien voir l'attachement entre la viande et l'os pendant l'opération de'désossement.
On prévoit, dans une autre solution préférée, des moyens pousseurs, actionnés pneumatiquement et placés sous le plan de travail, et dont les extrémités supérieures sont munies d'une demiventouse ou d'un verre où est introduite "la petite noix" caractéristique ou tête de l'os du jambon, pour le mettre en place sur le berceau ci-dessus.
Dans ce cas, l'extraction de l'os à partir de cette demiventouse est effectuée par poussée du bas vers le haut, la demiventouse ou verre pouvant osciller transversalement à l'axe longitudinal de la machine, pour pouvoir recevoir des "petites noix" à droite ou à gauche.
Dans ce cas également, on ne demande pas à l'opérateur d'effectuer des opérations de traction vers l'avant et vers le
haut de l'os et en même temps puisque l'os est poussé du bas vers le haut, on évite les ruptures éventuelles qui pourraient avoir lieu dans les os, quand ils sont tirés vers le haut, à cause de fêlures éventuelles subies pendant les opérations de massage mécanique.

When the incision is fully open, the operator can perform boning with precision, safely and quickly, because the ham 26, blocked by the two studded plates 6, allows the operator to perform any type of traction on the ham bone 26, while with the other hand he pushes the meat away from the bone by means of a suitable utensil.
For the ultimate extraction, the operator presses again on the toggle 3 and this second pressure, by means of the lever 21, produces on the distribution valve 20, an effect contrary to the previous one.
Because of this, the double-acting cylinder-piston groups 16 withdraw their rod in their internal part, which brings the oscillating levers 10 back to the ham 26.
At the same time, as the spreading legs 5 no longer keep the edges of the incision apart, the operator removes the legs 5 from the ham 26.
During the preceding movement, at a certain point the
