Abstract

Potatoes are peeled by first immersing them in a hot lye soln. and then leaving them for a period either at ambient temp. or in a heated atmosphere. The potatoes are again treated with a hot lye soln. and again held for a short time pref. at ambient temps. They are next subjected to radiant heating and finally the loosened peel is removed by brushing. Efficient peeling results from this method including "eye" removal. Additionally, the waste products are easily disposable.
