Abstract
When peanuts have been salted hitherto there has been a risk of the detergent used with the brine entering the shells and spoiling the taste. In the new process the peanuts are dipped, without any preliminary oparation, into a satd. brine, the assembly is subjected to a press. of 6-7 bars for 6 minutes at the ordinary temp. They are then dried, avoiding any friction between the shells, and then roasted in the usual manner. The treated peanuts have the same appearance as the roasted, shelled and salted nuts known hitherto, but, on the other hand, they have a quite different original taste. The appts used for the process comprises a cylindrical recipient which can be closed by a cover. The nuts are placed in a cylindrical basket which is lowered into the recipient. Brine is introduced by means of a pump kept under press. for 6 minutes and then withdrawn for filtration and re-use. The nuts are drained and then dried on an endless belt in a tunnel oven by hot air. The normal roasting follows.
