946,106. Peeling &c. vegetables; cooking by steam. FRANK BINDER Ltd. Aug. 8, 1961 [May 5, 1960], No. 15988/60. Headings A4C and A4D. Surface layers and blemishes are removed from vegetables or the like, which includes certain hard fruit such as apples, and shellfish such as prawns and lobsters, by subjecting a charge of the vegetables or the like to the successive action of steam under pressure and cold water in a steam-tight vessel. As shown, a cylindrical drum 1 is provided with perforations 2 and rotatably mounted within a steam-tight outer casing 3, which in turn is pivoted on two plummer blocks 9 (only one shown). The perforated drum is closed at one end by a plate 20, and can be rotated by the electric motor 17 via drive shaft 12. The other end of the drum is open and is mounted on an annular bearing 18. This end of the outer casing has a circular aperture 28 which can be closed by a door 30. The axle on which the casing is pivoted in the plummer block 9 is a hollow shaft and communicates with a collar 36 round the casing, and so with the hollow ribs 37, which communicate by holes 38 with the interior of the casing. This hollow shaft also communicates with sources of steam and cold water (not shown). The apparatus also has two drain valves 45 and 46, a pressure gauge 47, a safety valve 48 and a manual exhaust valve 49. In use, the casing is tilted so that the operable end faces upwards. The door is opened, and vegetables or the like charged into the drum. The door is closed and the apparatus restored to the position shown, and the drum is set rotating. Steam and cold water are injected alternately, the external layers and blemishes fall off and into the bottom of the casing. The drum is stopped, and the peel and extraneous matter run out by the drain valves. The door is opened and the prepared vegetables or the like tipped out. The vegetables or the like can be cooked in the apparatus by continuing to inject steam alone after the peel and blemishes have been removed.
