Dans les appareils de fabrication de la crème glacée il est né- cessaire de prévoir un nettoyage fréquent car, devant travailler avec des produits à base de lait, on court le risque de créer des zones où les bactéries et les spores se multiplient en souillant ainsi la crème glacée avec des conséquences nuisibles, même graves, pour le consommateur.
Parmi les appareils de fabrication de la crème glacée, il existe des systèmes dans lesquels le récipient où l'on prépare la crème glacée est fixe et par conséquent ne peut pas être lavé avec de l'eau courante.
La présente invention concerne ce genre d'appareils.
Des appareils de ce genre comprennent, on général un récipient dis- posé de manière fixe entre un ensemble isolé thermiquement et muni de pa- rois refroidies au moyen d'un circuit de fluide frigorifique dans lequel est disposé un compresseur. L'appareil selon l'invention élimine les inconvénients d'un la- vage difficile, et est caractérisé essentiellement en ce que le récipient dans lequel on prépare la crème glacée est muni d'au moins une ouverture combinée avec un obturateur et d'un conduit d'évacuation, dans le but d'éliminer facilement du récipient l'eau ou autre liquide de lavage et de désinfection qu'il contient et ayant servi pour le nettoyage du récipient même.
Il n'est pas indispensable que l'obturation soit absolument her- métique, car les ouvertures étant prévues dans des organes métalliques qui sont refroidies énergiquement, le liquide de travail congèle les fissures éventuelles et sert d'obturateur hermétique.

A l'extrémité supérieure de l'arbre 10, qui se prolonge au-delà d de l'arbre creux 6, se trouve prévue une enveloppe ou carter 12 en deux parties qui sont fixées au moyen d'un écrou 13 à l'ensemble de l'appareil.
Dans la dite enveloppe 12 se trouve contenu un train d'engrenages 14, 15,
16, dont le premier 14 est actionné par l'arbre creux 6, par exemple au moyen d'un joint à dents frontales 14a, tandis que l'engrenage 16 actionne un arbre 17 monté sur le carter 12 et muni des ustensiles 17a, 17b, pour la préparation de la crème glacée.
Sur la structure 1 se trouve placée une enveloppe protectrice 18 qui entoure le récipient métallique 19 dans lequel on prépare la crème glacée ; et sur la paroi de fond du dit récipient 19 se trouve placé un sys- tème de serpentins 20 constituant le réfrigérateur à température réglable inséré dans le cycle d'un fluide réfrigérateur selon une disposition con- nue en soi.
Par l'effet de la rotation lente de l'arbre 10, le carter 12 tourne lentement en déplaçant l'arbre 17 qui porte les ustensiles 17a, 17b, le long d'une trajectoire circulaire ; simultanément, le dit arbre est mis en rotation rapide autour de son propre axe géométrique et actionne les us- tensiles 17a, 17b.
L'ensemble du carter 12 avec les ustensiles pour la préparation de la crème glacée peut être enlevé facilement pour le nettoyage, en dévis- sant simplement l'écrou 13.
Pour effectuer le lavage du récipient 19 après avoir enlevé le carter 12, on introduit dans le récipient même le liquide de lavage et éven- tuellement le liquide de désinfection, et on effectue le nettoyage du réci- pient. Un ressort 27 presse l'obturateur 23 contre son siège disposé au- tour de l'ouverture 21.
Alors que normalement l'ouverture 21 reste fermée sous l'effet du ressort 27, quand on doit évacuer du conduit 22 le liquide de lavage au moyen de la poignée 26, on écarte l'obturateur 23 de l'ouver- ture 21.
