PRO'CEDE POUR LA CONSERVATION A FROID DE LEGUMES, FRUITS, etc.,
La présente invention se rapporte à la conservation des légumes, fruits, etc. et a pour but de supprimer les inconvénients qui existent dans les procédés basés sur-une cuisson en boite soudée.
Elle a pour but également de permettre l'utilisation de bocaux transparents (plastique, verre, pirex, etc. ) grâce auxquels la qualité de la marchandise peut être facilement vérifiée de l'extérieur.
Ce procédé est caractérisé essentiellement en ce que, après in- troduction dans le bocal ou autre récipient des produits à conserver on mu- nit ce dernier d'un couvercle ayant été pourvu au préalable d'un moyen per- mettant de créer le vide au travers de la paroi du couvercle, en ce que l'on recouvre ensuite le couvercle d'une couche relativement épaisse d'une matiè- re graisseuse liquide ét en ce que, après mise sous vide de l'intérieur du bocal, le moyen d'amenée du vide est dégagé et la matière graisseuse se so- lidifiant forme avec le couvercle un ensemble compact procurant une ferme- ture étanche.
L'invention s'étend également à des dispositifs de fermeture des bocaux, bouteilles ou autres récipients et futs métalliques conçus en vue de la mise en pratique du procédé ainsi qu'à certains éléments faisant par- tie de ces dispositifs et notamment à des couvercles en caoutchouc ou en une autre matière élastique.
Afin de bien faire comprendre l'invention, on en décrira ci-après quelques exemples de réalisation pratique en se référant aux dessins.
Dans-la forme de réalisation représentée par-la figure 1, le bo- cal 1 est muni vers l'intérieur d'un épaulement périphérique 2 situé très bas en-dessous du bord supérieur 3.
Sur l'épaulement 2 est placé un couvercle 4 en caoutchouc ou en une - autre matière comme par exemple un plastique dont l'épaisseur est aug- mentée vers le centre et est en cet endroit fortement bombé vers le haut afin de résister à la pression atmosphérique.

Au centre du couvercle est prévue en outre une incision,5 afin de permettre le passage de l'extrémité amincie 6 et habituellement aplatie d'un tube 7 en métal ou en une autre matière appropriée.
Les bords du couvercle en caoutchouc 4 sont renforcés (référence 8) afin d'augmenter l'étanchéité par rapport au bocal.
Au-dessus de l'épaulement 2, l'intérieur du bocal est de préfé- rence mat, c'est-à-dire non poli, afin de faciliter l'accrochage de la matière graisseuse.
Le fonctionnement est le suivant :
L'extrémité amincie 6 du tube 7 (voir fig. 4) est introduite dans l'incision 5 et traverse donc complètement l'épaisseur du caoutchouc à cet endroit.
Le couvercle 4 muni du tube 6-7 est ensuite placé dans le bocal comme représenté par la figure 1 et sur le couvercle.est placée une couche 9 de matière graisseuse (paraffinique par exemple) à l'état liquide de fa- gon à le recouvrir suivant une forte épaisseur.
Le tube 6-7 est alors relié à un tuyau 10 (fig. 4) raccordé à une source de vide (non représentée) ce qui permet d'aspirer l'air se trouvant à l'intérieur du bocal. Quand l'état de vide a été obtenu dans ce dernier, le tube 6-7 est retiré de l'incision 5 et cette dernière se referme immédiatement en empéchant la matière graisseuse de pénétrer à l'in- térieur du bocal.
A ce moment, l'extrémité du tube par où se fait l'aspiration doit encore traverser toute l'épaisseur de:la matière graisseuse avant d'entrer en contact avec l'atmosphère. Il est donc pratiquement impossible que l'air ambiant pénètre à l'intérieur au moment où ce tube est retiré.
Dès que toute la masse liquide 9 s'est modifiée, celle-ci forme avec le couvercle un bloc compact susceptible de conserver le vide à l'in- térieur du bocal et de résister à la pression atmosphérique.
Pour retirer le contenu du bocal, il y aura lieu tout d'abord d'enlever le produit solidifié au-dessus du couvercle. On introduira ensui- te une aiguille à tricoter dans l'incision 5 afin de provoquer une introduc- tion d'air dans le bocal. Le bouchon en caoutchouc pourra alors être enle- vé sans difficulté.
Dans la forme d'exécution, suivant la figure 2, le bocal 1 est semblable à celui de la figure 1.
Le couvercle est formé d'une rondelle plate 11 en métal approprié, verre ou plastique dur, etc. munie d'un trou central fermé par un bouchon 12 en caoutchouc ou autre matière flexible muni d'une incision 51 (fig. 2A) dont la fonction est la même que celle de l'incision 5 de la figure 1.
Comme le montre la figure 3, la rondelle 11 peut aussi avoir une forme conique offrant beaucoup plus de résistance à la pression atmosphéri- que.
Les dispositions suivant les figures 2 et 3 ont l'avantage que, pour retirer le contenu du bocal, la ménagère pourra (après avoir au préa- lable retiré le tampon de graisse 9) saisir facilement la rondelle métalli- que 11 par le trou où se place le bouclon 12 et de cette façon retirer la rondelle sans difficulté.
La figure 4 se rapporte à un mode d'exécution basé sur l'utilisa- tion d'un couvercle en caoutchouc 13 de forme spéciale du type de ceux pré- conisés pour les craches à lait et formé.d'une cuvette en caoutchouc ou en une matière analogue qui pénètre dans le col du récipient et possède un dia- mètre supérieur à celui du récipient. Un tel bouchon présentera de préféren- ce certaines ou toutes les caractéristiques du couvercle mis sous protection par le breveté dans le brevet belge N 484.638 du 2 septembre 1948 et les brevets de perfectionnement y rattachés N 488.610 du 21 avril 1949 et 490.183 du 15 juillet 1949.

Dans ce cas, le bocal ne possède aucune particularité et l'épau- lement 2 est inexistant.
Il comporte vers le haut un bourrelet périphérique 14 d'appui sur le 'bord du bocal.
La forme générale du couvercle est celle d'une cuvette'dont lë diamètre va tout d'abord en diminuant à partir du bourrelet 14 pour augmen- ter à nouveau en donnant naissance à un bourrelet inférieur 15 venant en contact avec la face intérieure du bocal.
Le fond 16 surépaissi est fortement bombé vers le haut afin de résister à la pression atmosphérique. De nombreux trous 17 sont pratiqûés dans le couvercle à l'endroit où la cuvette possède son diamètre le plus petit.
Après mise en place du couvercle 13 avec le tube 6-7 (fig. 4) le liquide graisseux 9 est également déversé dans la cuvette et ce liquide non seulement remplit cette dernière mais s'introduit aussi par les trous 17 dans la poche 18 formée entre la paroi du bocal et la paroi latérale ex- térieure courbée du couvercle.
Pour le reste, le fonctionnement est le même que dans le cas des figures 1, 2 et 3.
Un cercle de fer 19 peut être noyé dans l'épaisseur du bourrelet d'appui 14 afin d'éviter que tout le couvercle ne soit chassé dans le fond' du bocal sous la poussée de la pression atmosphérique agissant en opposition au vide régnant à l'intérieur du bocal.
Ce cercle de fer peut éventuellement être remplacé par une bande circulaire 20 en métal (fig. 5) appliquée à l'intérieur de la cuvette à sa partie supérieure immédiatement en-deçu du bourrelet supérieur 14.
Chacune des formes d'exécution décrites ci-dessus est basée sur l'intervention de deux éléments bien distincts : 1/ un couvercle en caoutchouc ou un couvercle combiné, à savoir : métal et caoutchouc. Ce couvercle doit être étanche et de plus être muni d'un moyen permettant l'entrée dans le bocal d'un tube destiné à créer le vi- de à l'intérieur du bocal et doit en outre, après retrait du tube, faire obstacle à l'entrée de la graisse dans le bocal. Il doit aussi pouvoir résister à la pression atmosphérique.
2/ le second élément est la graisse ou autre produit spécialement étudié à cet effet. Celui-ci se place au-dessus du couvercle et a pour mission de former un obstacle infranchissable à l'air ambiant. Ce tampon seconde puissamment le couvercle en caoutchouc.
Il doit se présenter sous forme de liquide afin de remplir par- faitement tous les interstices pendant l'opération de la mise sous vide du bocal et ensuite faciliter la manoeuvre du tube d'arrivée du vide. Dès que cette opération est terminée, le produit graisseux doit pouvoir se solidi- fier afin de former un tout compact avec le couvercle en caoutchouc.
Ces deux éléments distincts sont donc indissolubles et doivent coopérer en vue d'atteindre le but recherché.
Les avantages peuvent être résumés comme suit : 1/ le bocal pouvant être en verre ou autre matière transparente, la ména- gère sera en mesure de vérifier la qualité de la marchandise à l'inté- rieur du bocal, ce qui ne peut se faire¯avec les conserves actuellement dans le commerce.
2/ les légumes et fruits conservent leur saveur comme à l'état frais. Cette saveur ne peut être faussée ou modifiée comme c'est le cas pour la cuis- son en boite soudée.
3/ les vitamines restent intactes, ce qui est particulièrement important au point de vue médical.

La figure 6 concerne une variante dans laquelle il est'fait usa- ge d'un couvercle en métal conçu d'après les principes adoptés pour la réa- lisation du bouchon en caoutchouc selon la figure 4.
Ce bouchon comprend une rondelle Il de forme conique, recevant, comme à la figure 3, un bouchon 12 en caoutchouc. De cette rondelle est solidaire un manchon 20 s'étendant vers le haut et se terminant par un re- bord 141 prenant appui sur la partie supérieure du goulot du récipient 1.
Dans le manchon sont prévus des trous 171 assimilables aux - trous 17 de la figure 6 et une poche est formée en 181 semblable à la po- che 18.
La rondelle 11, munie sur sa périphérie, de préférence d'un'repli 21 s'engage dans un récipient 1 ne comprenant pas d'épaulement intérieur.
