la pâte revient dans la chambre annulaire pour recommencer le cycle.
Dans ce type de conche, le travail de la action pâte est principalement opéré par/rotative de palet- tes disposées dans le manteau tronc-conique, et pénétrant dans la masse de la pâte sans soumettre cette dernière à une véritable action de raffinage, puisque les palettes n'exercent aucune action méca- nique sur la pâte, mais la fendent tout simplement.
Ce type de machine, bien qu'il permette une forte production, n'accomplit pas toutefois un travail fin du chocolat.
Suivant l'invention, ces inconvénients sont éliminés en prévoyant un ou plusieurs rouleaux, en matière appropriée, solidaires de l'arbre tour- nant, coaxiaux avec le manteau tronc-conique,destinés à rouler contre la surface intérieure du dit mateau; entre les surfaces des manteaux et des rouleaux arrive continuellement la pâte amenée au moyen de palettes ou organes analogues; les dits rouleaux sont reliés, à l'arbre tournant au moyen d'organes de sou- tien appropriés.

des organes jusqu'ici proposés pour la manipulation de la pâte, en conférant à ces organes une efficaci- té en tout semblable à celle des organes analogues employés dans les cuves bien connues en granit, au moyen desquelles on obtient un produit plus apprécié mais avec une production très réduite.
Dans une forme de réalisation pratique d' une conche suivant les innovations citées ci-dessus, deux ou plusieurs rouleaux sont pourvus, reliés à des bras de souten solidaires de l'arbre moteur auquâ. sont reliées les palettes racle-fond de façon à per- mettre aux rouleaux de faire varier la distance en- tre leur surface de travail et celle opposée par la paroie intérieure du manteau conique tronque, en- tre lesquelles surfaces la pâte vient convoyée sous l'effet combiné des palettes de remuage et de poussée vers l'intérieur du dit manteau ,
Les rouleaux peuvent être faits en granit, de façon que la pâte vienne à se trouver entre deux surfaces en granit, dans des conditions semblables à celles qui existent dans les vasques ordinaires avec rouleaux animés de mouvement alternatif.
Dans le but de pouvoir régler le degré de pression des rouleaux sur la pâte, ces derniers sont reliés à des bras articulés soumis à l'action d'un ou plusieurs ressorts, convenablement disposés, et ré- glable's au moyen par exemple d'organes à vis, de fa- çon à pouvoir faire varier l'intensité de la poussée . continue exercée par les dits ressorts.

Avec référence au croquis annexé, I repré- sente le récipient en forme de conche avec la cham- bre 2 destinée à contenir de l'eau chaude, ou autre, pour le chauffage de la pâte à concher et 3 est le fond, ceséléments constituant la partie fixe de la machine.
Avec 4 est indiqué le manteau de forme tronc-conique, lentement entraîné en rotation par une couronne 5 pourvue de dents périphériques 6 en prise avec le pignon d'entraînement 7, fixé à l'ex- trémité supérieure de l'arbre 8, ce manteau est so- lidaire de la couronne 5 au moyen de la jonction 9 avec les tiges 10 dont 1'extrémité supérieure II est fixée la couronne 5, tendis que leur extrémité inférieure II' est munie de palettes 12 de remuage de la pâte, suivant un ensemble déjà connu.

Au lieu de palettes, précédemment citées mais non montrées sur le dessin, on utilise des rou- leaux 16, par exemple du nombre de deux, arrangés sur le même plan de symétrie qui passe par l'axe géo- métrique de l'arbre 13.
Ces dits rouleaux sont montés fous sur des bras correspondants de soutien 17, qui à l'extrémité inférieure 17a pivotent en 18 avec des bras corres- pondants 19 fixés sur un manchon 20 claveté en 21 sur l'arbre moteur 13.
Vautre extrémité 17b des bras 17 de sou- tien des rouleaux, est constamment influencée par l'action d'un ressort 22, dont la tension peut tre réglée au moyen d'un organe à vis 23 solidaire d'un diaphragme 24 présenté par une armature 25 ren- due solidaire de l'arbre moteur 13 au moyen d'un man- chon 26 fixé par un organe avec vis d'arrêt 27.
Une couple de palettes 28, solidaire du manchon 20 des bras porte-rouleaux, sert à convoyer la pâte de la bouche inférieure du manteau tronc- conique 4 vers l'intérieur de ce dernier et par con- séquent entre les surfaces de travail.
La surface 4a du manteau tronc-conique peut être facilement fabriquée en granit,par exemple en façon d'âme et au moyen de plusieurs secteurs qui faciliteraient la construction de l'âme en g ranit.
@ Grâce aux innovations en question, on réa- lise les meilleures conditions d'opération et de ren- dement ce qui, jusqu'ici n'a pas été obtenu avec les machines de ce genre connues.
