La viande de porc utilisée se présente en un bloc congelé qui est passé dans un hydroflaker puis ramené à une température d'environ - 6 C. Les morceaux de porc sont alors hachés à travers une grille de hachage de 3/8".
On prépare une mixture préliminaire en commençant par mélanger ensemble les condiments, le liant au phosphate, les biscottes, l'eau et l'extrait de soja dans un récipient mélangeur. La mixture est mélangée à une température comprise entre + 2 et 0 oC.
Les morceaux de porc grossièrement hachés sont alors introduits dans un mélangeur-broyeur, où est ajoutée la mixture préliminaire.

Les produits façonnés en forme de côtes sont ensuite frits en profondeur à une température de 145 C pendant 173 secondes environ pour obtenir au coeur de la côte façonnée une température de pasteurisation de 70 C.
Les côtes partiellement refroidies ainsi formées subissent une congélation-éclair, puis sont emballées et congelées de manière à être prêtes à la vente.
L'expérience nous a montré que la proportion spécifique d'ingrédients utilisés et surtout la basse température de cuisson préservent la saveur du produit et ne caramélisent pas le sucre dans l'assaisonnement extérieur. Les conditions de cuisson assurent une caramélisation partielle de l'assaisonnement intérieur et aboutissent ainsi à un produit acceptable du point de vue tant organoleptique qu'esthétique. Le goût, la texture et l'aspect du produit sont proches de celui des côtes découvertes pour barbecue. Les conditions particulières de cuisson sont également essentielles pour le contrôle de la contraction et des dégâts microbiens. L'expérience nous a montré que le réchauffement des sucres contenus dans les assaisonnements revêt une importance cruciale pour conférer au produit un arôme et un aspect de barbecue.
Il y a dans le mélange d'ingrédients secs un niveau élevé de protéines qui joue un rôle critique la texture et la consistance du produit final.
La viande contient 80 % de petites viandes de porc maigres.
