SUMMARY
An objective of the present invention is to provide a method for processing high-quality barley grass meal replacement powder rich in barley grass enzyme. An enzyme is dried to obtain power and is added into meal replacement powder, thereby 5 enriching uses of an enzyme product, and enhancing the weight loss effects of the meal replacement powder. The process used in the method is simple, and the costs are low. An obtained product has a good instant property, a good anti-adhesion property, high color stability, a good taste, and balanced nutrition, has an anti-oxidation capability, and can enhance the immunity and the weight loss effects after being taken for a long time.
A method for processing high-quality barley grass meal replacement powder rich in barley grass enzyme, including the steps of preparation of nano barley grass powder, preparation of nano bean dreg powder, preparation of barley grass enzyme powder and compounding, wherein the steps are:
(1) preprocessing of barley grass: freezing and drying the barley grass after the barley grass is performed with foreign matter removing, cleaning, and dicing, wherein conditions for the freezing and drying are that the temperature of a heating board is 23-25°C, the drying time is 24 h, a vacuum degree is 129.8-130.2 Pa, a material thickness is 4.5-5.5 mm, prefreezing is performed for 4 h at -6°C, and the freezing temperature is -28 to -32°C;
(2) preparation of nano barley grass powder: grinding the barley grass that is frozen 20 and dried in step (1), passing the same through an 80-mesh sieve to obtain coarse barley grass powder, and then grinding the coarse barley grass powder to a nano scale in an impact mill by using a grinding ball, so as to prepare the nano barley grass powder, wherein a mass ratio of the grinding ball to the coarse barley grass powder is 4:1, the temperature is reduced to 0 to -5 °C in a cooling circulation system that uses 5% of aqueous glycerol 25 solution as a cooling liquid, an impact and vibration frequency is 150-200 Hz, the time is
8-10 h, and the coarse barley grass powder is pulverized to have an average particle size of 100-500 nm, so that the nano barley grass powder is prepared;
(3) preparation of nano bean dreg powder: initially grinding bean dregs and then
2018200532 23 Jan 2018 grinding coarse bean dreg powder to the nano scale in an impact mill, wherein a mass ratio of the grinding ball to the coarse bean dreg powder is 4:1, the temperature is reduced to 0 to -5 °C in a cooling circulation system that uses 5% of aqueous glycerol solution as the cooling liquid, an impact and vibration frequency is 150-200 Hz, the time is 8-10 h, and the coarse bean dreg powder is pulverized to have an average particle size of 100-500 nm, so that the nano bean dreg powder is prepared;
(4) preparation of barley grass enzyme powder: adding maltodextrin into barley grass enzyme, a ratio of an addition amount of the maltodextrin to a content of an enzyme solid matter being 1:1; and performing low-temperature ultrasonic auxiliary spray drying to 10 obtain barley grass enzyme powder, wherein the temperature of the auxiliary spray drying is 10-15°C, ultrasonic processing at 30-45 W is performed for 25-40 min, a feeding concentration when the auxiliary spray drying is performed is 6%-9%, an inlet temperature is 140±3°C, an outlet temperature is 90±3°C, and a rotational speed of an atomizer is 15000 r/min;
(5) preparation of barley grass meal replacement powder: evenly mixing the foregoing materials and other materials according to the following parts by mass, to obtain the barley grass meal replacement powder: 25-35 parts by mass of nano bean dreg powder, 25-35 parts by mass of refined amorphophallus konjac powder, 15-25 parts by mass of nano barley grass powder, 5-10 parts by mass of protein powder, 6-8 parts by mass of fish collagen, 0.5 parts by mass of sodium hexametaphosphate, 0.3 parts by mass of zinc chloride, 0.5-0.7 parts by mass of citric acid, 0.2-0.4 parts by mass of stevioside, and 0.2 parts by mass of flavoring essence.
The beneficial effects of the present invention are:
1. Compared with a production process of first mixing raw materials and then drying 25 the same, the process of first respectively making the raw materials into powder and then mixing the powder that is used in this method is simpler, is convenient for operation, has low costs, and is easy to be implemented and promoted.
2. The average particle size of the meal replacement powder is reduced by performing

3. Functional ingredients in the barley grass enzyme are reserved to the greatest extent by using a low-temperature ultrasonic auxiliary spray drying process, so that the functional loss of the barley grass enzyme is relatively small, and the weight loss effects of the meal replacement powder are enhanced to the greatest extent.
DETAILED DESCRIPTION
Embodiment 1: a method for processing a high-quality instant barley grass meal 10 replacement powder (in small batches)
Nano barley grass powder is prepared by freezing and drying barley grass after the barley grass is performed with foreign matter removing, cleaning, and dicing; grinding the frozen and dried barley grass, and passing the same through an 80-mesh sieve to obtain coarse barley grass powder; and then grinding the coarse barley grass powder to a nano 15 scale in an impact mill. After bean dregs are pulverized preliminarily, and coarse bean dreg powder is pulverized to the nano scale in the impact mill, so as to prepare nano bean dreg powder. An amount of maltodextrin is added into self-made barley grass enzyme, and low-temperature ultrasonic auxiliary spray drying is performed to obtain barley grass enzyme powder. The foregoing materials and other materials are evenly mixed according 20 to the following parts by mass, to obtain the barley grass meal replacement powder: 30 g bean dreg powder, 30 g refined amorphophallus konjac powder, 20 g barley grass powder, 10 g protein powder, 8 g fish collagen, 0.5 g sodium hexametaphosphate, 0.3 g zinc chloride, 0.7 g citric acid, 0.3 g stevioside, and 0.2 g flavoring essence.
The product obtained can be quickly dissolved in 30 s after being brewed with warm 25 water. After being tested, in three main indexes that represent the instant property, wettability and dispersibility of this product are respectively 21.6% and 95.3% higher than like products sold in the market, and solubility of this product is equivalent to that of the like products, representing a good instant property. After being tested, a total phenol content in this product reaches 1.864 mg/g; SOD activity reaches 340.5 U/g; and a clearance rate of hydroxyl radicals may reach 52.8% and a clearance rate of DPPH radicals may reach 65.7%, being respectively 25.7% and 5 29.8% higher than the like products sold in the market. In this way, this product shows better anti-oxidation effects. After the product is stored for one week, changes in a color difference value δΕ are smaller than 5%, representing relatively good color stability. After an amount of the meal replacement powder is dissolved in water, the adhesion property (indicated by the mass of remaining adhesive blocks after being filtered) is 10 reduced by 18.7% compared with the like products sold in the market, representing a relatively good anti-adhesion property.
Embodiment 2: a method for processing a high-quality instant barley grass meal replacement powder (in medium batches)
Nano barley grass powder is prepared by freezing and drying barley grass after the barley grass is performed with foreign matter removing, cleaning, and dicing; grinding the frozen and dried barley grass, and passing the same through an 80-mesh sieve to obtain coarse barley grass powder; and then grinding the coarse barley grass powder to a nano scale in an impact mill. After bean dregs are pulverized preliminarily, and coarse bean dreg powder is pulverized to the nano scale in the impact mill, so as to prepare nano bean 20 dreg powder. An amount of maltodextrin is added into self-made barley grass enzyme, and low-temperature ultrasonic auxiliary spray drying is performed to obtain barley grass enzyme powder. The foregoing materials and other materials are evenly mixed according to the following parts by mass, to obtain the barley grass meal replacement powder: 300 g bean dreg powder, 300 g refined amorphophallus konjac powder, 200 g barley grass 25 powder, 100 g protein powder, 80 g fish collagen, 5.0 g sodium hexametaphosphate, 3.0 g zinc chloride, 7.0 g citric acid, 3.0 g stevioside, and 2.0 g flavoring essence.

Nano barley grass powder is prepared by freezing and drying barley grass after the barley grass is performed with foreign matter removing, cleaning, and dicing; grinding the frozen and dried barley grass, and passing the same through an 80-mesh sieve to obtain coarse barley grass powder; and then grinding the coarse barley grass powder to a nano 20 scale in an impact mill. After bean dregs are pulverized preliminarily, and coarse bean dreg powder is pulverized to the nano scale in the impact mill, so as to prepare nano bean dreg powder. An amount of maltodextrin is added into self-made barley grass enzyme, and low-temperature ultrasonic auxiliary spray drying is performed to obtain barley grass enzyme powder.
