Abstract
The invention discloses meal replacement powder containing dietary fibers for pets, which is characterized by comprising the following components in percentage by weight: 5 to 30 percent of high-purity dietary fiber, 15 to 30 percent of meat meal, 10 to 30 percent of milk powder, 5 to 20 percent of whey protein powder, 15 to 30 percent of rice flour, 0.1 to 1 percent of compound vitamin and mineral substance and 0.1 to 1 percent of unsaturated fatty acid. According to the invention, the pet meal replacement powder is added with various high-purity dietary fibers, so that the satiety time can be effectively prolonged, the purpose of meal replacement is achieved, meanwhile, the pet meal replacement powder is rich in nutrition and meets the nutritional requirements of pets through the interaction of various raw materials, and the barley seedling enzyme powder is also added, so that the product smell has the fragrance of green grass, the color is more fresh, the appetite of pets is increased, and the antioxidation function of the meal replacement powder is greatly improved because the barley seedling enzyme contains antioxidants such as polyphenol.

Technical Field
The invention belongs to the technical field of food, and particularly relates to meal replacement powder containing dietary fiber for pets.
Background
At the time of the steep trend toward pet personification, there is an increasing association of food and pet food consumed by pet owners and individuals. Dietary fiber is an indispensable element of the diet for humans, and naturally for pets. Today, pet food manufacturers are challenged to develop health-trending products that appeal to both the pet owner and the young children.
The pet food in the market takes full-value food as the main stream, and a proper amount of fiber is added in the formula so as to meet the requirements of production and cost. Corn and peanut hulls are the most common sources of inexpensive fiber, but they cause increased fecal waste which is unacceptable to the pet owner. At present, beet pulp and cellulose powder are one of the most commonly used fiber sources in pet foods, and high-quality ingredients such as sweet potatoes, ophiopogon roots, fruits, peas and mung beans rich in natural fibers are also more and more selected by people, but the natural fibers have the common characteristic that the fiber content is very low, a large amount of natural fibers are required to achieve the expected effect, and the forming and the taste of the product are greatly influenced by the large amount of natural fibers.
In addition, traveling with pets is also a current fashion trend, but each trip needs to be accompanied by burdensome full-value grains or heavy wet-grain cans, which causes great trouble, so that the problem is solved urgently, and how to develop a meal replacement product which can meet the diet requirements of the pets, can attract pet owners, and is convenient to carry and use becomes a hot point in the technical field of pet foods.
Disclosure of Invention
The invention aims to provide meal replacement powder containing dietary fibers for pets, which can meet the nutritional and energy requirements of the pets and can effectively prolong the satiety time.
In order to achieve the above object, according to one aspect of the present invention, a meal replacement powder for pets, which contains dietary fibers, comprises the following components by weight percent: 5 to 30 percent of high-purity dietary fiber, 15 to 30 percent of meat meal, 10 to 30 percent of milk powder, 5 to 20 percent of whey protein powder, 15 to 30 percent of rice flour, 0.1 to 1 percent of compound vitamin and mineral substance and 0.1 to 1 percent of unsaturated fatty acid.
According to the invention, the meal replacement powder containing the dietary fiber for the pet comprises the following components in percentage by weight: 15 to 25 percent of high-purity dietary fiber, 20 to 27 percent of meat meal, 16 to 24 percent of milk powder, 14 to 18 percent of whey protein powder, 19 to 28 percent of rice flour, 0.4 to 0.8 percent of compound vitamin and mineral substance and 0.4 to 0.7 percent of unsaturated fatty acid.
According to the invention, the high-purity dietary fiber comprises one or more of psyllium husk powder, konjac powder, functional oligosaccharide and water-soluble dietary fiber.
According to the invention, the purity of the Plantago ovata forsk shell powder is more than or equal to 99%; the functional oligosaccharide is one or more of isomaltooligosaccharide, fructo-oligosaccharide, xylo-oligosaccharide, mannose oligomer and inulin; the water-soluble dietary fiber is resistant dextrin. Preferably, the rice flour is puffed rice flour.
According to the invention, the meal replacement powder containing the dietary fiber for the pet also comprises 8-12% of wheat seedling ferment powder.
According to the invention, the preparation steps of the wheat seedling ferment powder are as follows: s1, preparing a barley seedling homogenate liquid, namely freezing barley seedlings in a refrigerator for 12-14 hours, cutting the frozen barley seedlings, adding water, homogenizing, sieving by a 80-mesh sieve, taking a slurry, performing rotary evaporation and concentration until the content of soluble solids is 3.0%, and homogenizing; s2, hydrolyzing the barley seedling homogenate by enzyme, adding cellulase into the barley seedling homogenate to perform enzymolysis on cellulose substances which are difficult to utilize by microorganisms in the barley seedling homogenate, wherein the addition amount of the cellulase is 1200U/mL, and the pH value is 5.2 and the temperature is 55 DEG CCarrying out enzymolysis for 3 hours; s3, preparing a fermentation substrate, namely adding 6.0% of cane sugar and nutrient substances into the homogenized liquid of the barley seedlings after enzymolysis, adjusting the initial pH to 4.0, and sterilizing the barley seedlings to prepare for inoculation; s4, inoculating and fermenting saccharomycetes, inoculating 0.40% of Saccharomyces cerevisiae (Saccharomyces cerevisiae) at 32 ℃, fermenting for 18 hours, adjusting the pH value of the obtained fermentation liquid to 6.3-6.5, inoculating 1.5% of Lactobacillus plantarum (Lactobacillus plantarum) at 37 ℃, fermenting for 24 hours, concentrating the obtained wheat seedling enzyme, and performing spray drying to obtain wheat seedling enzyme powder; the obtained wheat seedling enzyme SOD activity is 277.2U/mL, and the Saccharomyces cerevisiae concentration is 8.79 × 108CFU/mL, Lactobacillus plantarum concentration 8.31X 108CFU/mL。
According to the invention, the nutrient substances comprise 0.2% of yeast extract, 0.1% of magnesium sulfate and 0.1% of zinc chloride.
According to the present invention, the step of concentrating and spray-drying the wheat ferment in step S4 includes: s41, adding a drying aid into the wheat seedling ferment, wherein the adding ratio of the drying aid is that the weight ratio of solid matters in fermentation liquor to the drying aid is 1:1, and the drying aid is maltodextrin; s42, concentrating the wheat ferment until the solid content is 9%, wherein the inlet temperature of spray drying is 160 ℃, the outlet temperature is 90 ℃, and the rotation speed of an atomizer is 18000 r/min.
The invention has the beneficial effects that:
1) the meal replacement powder containing the dietary fibers comprises the raw materials of high-purity dietary fibers, meat powder, milk powder, whey protein powder, rice flour, amino acid, compound vitamin, mineral substances and unsaturated fatty acid, and various high-purity dietary fibers are creatively added into the meal replacement powder for pets, so that the satiety time can be effectively prolonged, and the purpose of meal replacement is achieved. The meal replacement powder can meet the drinking requirement of pets, simultaneously, the meal replacement powder can meet the requirement of rich nutrition and the nutrition of the pets through the interaction of all raw materials, the meal replacement powder is packaged by independent small bags, the meal replacement powder is convenient for a pet owner to carry, the meal replacement powder is directly eaten after being brewed by warm water, the pet owner is convenient to feed, and the requirement of the pet owner on pet food in the present generation is met.
2) The invention also adds barley seedling ferment powder which is obtained by fermenting barley seedlings serving as raw materials by saccharomyces cerevisiae and lactobacillus plantarum, and adopts the optimal fermentation process: pulping frozen barley seedling, pretreating, adding 6.0% sucrose and other nutrients, adjusting initial pH to 4.0, sterilizing, inoculating 0.40% Saccharomyces cerevisiae at 32 deg.C, fermenting for 18h, adjusting pH to 6.3, inoculating 1.5% Lactobacillus plantarum at 37 deg.C, and fermenting for 24 h. The wheat seedling enzyme prepared by the process has grass fragrance, and the product is fresh green. The wheat seedling enzyme prepared under the process conditions is added into the meal replacement powder containing dietary fibers for pets, so that the product smell has grass fragrance, the color is fresher, the appetite of the pets is increased, and the antioxidation function of the meal replacement powder is greatly improved due to the fact that the wheat seedling enzyme contains antioxidants such as polyphenol.

The functional oligosaccharide includes but is not limited to isomaltooligosaccharide, fructooligosaccharide, xylooligosaccharide, mannose oligomer, inulin, etc. The water soluble dietary fiber is a resistant dextrin.
The seed shell of Plantago ovata forsk is also called fiber king, and the fiber in Plantago ovata forsk is a pure natural plant fiber source, and can absorb water and expand by about 50 times to form jelly-like sticky matter. The Plantago ovata forsk shell powder has high water retention and expansibility, has volume effect on gastrointestinal tracts, is easy to generate satiety, and reduces food intake. Simultaneously, the activity of carbohydrate and lipid can be inhibited, and the absorption in the small intestine is influenced. In addition, for constipation and gastrointestinal discomfort patients, the plantain seed husk powder is a herbal medicine with remarkable drug effect, and is very suitable for constipation and gastrointestinal discomfort patients due to the curative effect of moistening intestines and freeing stool; for people with high cholesterol, the placenta hominis husk powder can adsorb and wrap cholesterol and toxic substances in intestinal tracts, reduce secondary absorption of cholesterol, accelerate removal and effectively remove redundant cholesterol in vivo.
Preferably, the rice flour is puffed rice flour. The amino acid proportion of the rice protein is reasonable, the utilization rate is high, the anaphylaxis is low, the starch is completely cured after the puffing, the digestibility is further improved, the probability of diarrhea and abdominal flatulence can be effectively reduced, and meanwhile, the rice flour is used as carbohydrate to provide energy for pets. In addition, the rice flour is used as a carrier of the whole system, so that the product is pasty when being brewed by warm water, and is convenient for pets to eat.
The adding amount of the rice flour is controlled to be 15% -30%, the influence on the brewing performance is mainly considered when the adding amount is too small or too large, and if the adding amount is less than 15%, the rice flour is not pasty after brewing, has strong liquidity and is not suitable for pets to lick; if the content is more than 30%, the tea should not be dispersed after brewing, and is inconvenient to feed. The application method comprises soaking in 2-5 times of warm water.
In a preferred embodiment of the invention, the meal replacement powder for pets containing dietary fibers further comprises 8% -12% of wheat seedling ferment powder. The preparation steps of the wheat seedling ferment powder are as follows:

S3, preparing a fermentation substrate, namely adding 6.0% of cane sugar and nutrient substances into the homogenized slurry of the barley seedlings after enzymolysis, adjusting the initial pH to 4.0, and sterilizing the mixture to prepare for inoculation; the nutrient substances comprise 0.2% of yeast extract, 0.1% of magnesium sulfate and 0.1% of zinc chloride.
S4, inoculating yeast, fermenting, inoculating 0.40% of Saccharomyces cerevisiae (Saccharomyces cerevisiae) at 32 ℃, fermenting for 18 hours, adjusting the pH value of the obtained fermentation liquid to 6.3-6.5, inoculating 1.5% of Lactobacillus plantarum (Lactobacillus plantarum) at 37 ℃, and fermenting for 24 hours; concentrating the obtained wheat seedling ferment, and spray drying to obtain wheat seedling ferment powder; the obtained wheat seedling enzyme SOD activity is 277.2U/mL, and the Saccharomyces cerevisiae concentration is 8.79 × 108CFU/mL, Lactobacillus plantarum concentration 8.31X 108CFU/mL。
The invention relates to a barley seedling (growing to 5-15cm in length) and a Haitong food group; saccharomyces cerevisiae, Lactobacillus plantarum, and microbial strain preservation center of Guangdong province. The utilization rate of the nutrient components by the lactic acid bacteria is higher than that of the yeast, so that the yeast fermentation and the lactic acid bacteria fermentation are carried out in the fermentation process of the wheat seedling ferment. The measured indicators include yeast concentration and SOD activity. SOD in the wheat seedling ferment is obtained from raw materials and yeast fermentation, and needs to be measured respectively. In the fermentation process, 10mL of fermentation liquor is taken every 6 hours for centrifugation, the supernatant is taken and measured as the activity of the extracellular SOD, the precipitate is taken and extracted by a toluene wall breaking method, and the activity of the intracellular SOD is measured. The determination method is referred to GB/T5009.171-2003.
The invention adopts barley seedlings as raw materials, uses saccharomyces cerevisiae and lactobacillus plantarum commonly used in the fermentation industry as strains, and prepares the barley seedling ferment product through the steps of homogenate, enzymolysis, sterilization, fermentation and the like. The ferment SOD is one of the main functional enzymes and biological active substances of the wheat seedling.
Preferably, the step of concentrating and spray-drying the wheat ferment in the step S4 includes: s41, adding a drying aid into the wheat seedling ferment, wherein the weight ratio of the drying aid to the solid matters in the fermentation liquor is 1:1, and the drying aid is maltodextrin; s42, concentrating the wheat ferment until the solid content is 9%, wherein the inlet temperature of spray drying is 160 ℃, the outlet temperature is 90 ℃, and the rotation speed of an atomizer is 18000 r/min.
Because the solid content of the wheat seedling ferment is low, if direct spray drying consumes time and energy, the invention concentrates the wheat seedling ferment to a certain solid content by rotary evaporation so as to improve the productivity. If the concentrated wheat seedling ferment is directly spray-dried, although ferment powder is generated, the yield of the product is low (below 20%), the sensory quality such as color and flavor of the product is poor, the solubility is low, moisture absorption is easy, and nutrient substances such as SOD, total phenols and the like in the wheat seedling ferment are easy to damage, which is not favorable for the production, storage and sale of the ferment powder and meal replacement powder. The invention creatively adds macromolecular substances such as maltodextrin and the like into the spray-dried feed liquid, not only can better protect nutrient substances in the feed liquid, but also can improve the glass transition temperature of the feed liquid, thereby improving the drying effect of the spray-dried feed liquid and reducing the hygroscopicity of spray-dried powder.
The technical scheme of the invention is further explained by combining specific examples.
Example 1
The formula of the meal replacement powder comprises the following components: 30% of high-purity dietary fiber, 20% of meat meal, 13% of milk powder, 12% of whey protein powder, 15% of rice flour, 1% of compound vitamin and mineral, 1% of unsaturated fatty acid and 8% of wheat seedling ferment powder.
The preparation method of the wheat seedling ferment powder comprises the following steps:s1, freezing the barley seedlings in a refrigerator for 12 hours, cutting the frozen barley seedlings, adding water, homogenizing, sieving with a 80-mesh sieve, taking the slurry, performing rotary evaporation and concentration until the content of soluble solid matters is 3.0%, and homogenizing; s2, adding cellulase into the barley seedling homogenate to carry out enzymolysis on cellulose substances which are difficult to utilize by microorganisms in the barley seedling homogenate, wherein the addition amount of the cellulase is 1200U/mL, and the enzymolysis is carried out for 3 hours at the temperature of 55 ℃ and the pH value of 5.2; s3, adding 6.0% of cane sugar and 0.2% of nutrient yeast extract, 0.1% of magnesium sulfate and 0.1% of zinc chloride into the homogenized slurry of the barley seedlings after enzymolysis, adjusting the initial pH to 4.0, and sterilizing the mixture to prepare inoculation; s4, inoculating yeast, fermenting, inoculating 0.40% of Saccharomyces cerevisiae (Saccharomyces cerevisiae) at 32 ℃, fermenting for 18 hours, adjusting the pH value of the obtained fermentation liquid to 6.3-6.5, inoculating 1.5% of Lactobacillus plantarum (Lactobacillus plantarum) at 37 ℃, and fermenting for 24 hours. Examples 2 to 3
The formulation and preparation method are the same as those of example 1, except that the drying aids used are beta-cyclodextrin and soluble starch, respectively. Different kinds of drying aids have different influences on the spray drying of the feed liquid due to different structures of the drying aids. The spray drying effect and enzyme powder sensory evaluation of three different drying aids, maltodextrin, beta-cyclodextrin and soluble starch, are shown in table 1.

It can be seen from table 1 that the addition of maltodextrin gives better spray drying than the other two drying aids. Sensory evaluation results show that the wheat seedling ferment powder added with the same level of maltodextrin is greener and easier to dissolve than the wheat seedling ferment powder added with the other two drying aids.
The result of the color difference measurement shows that the wheat seedling enzyme powder added with maltodextrin is greenest and darker, the enzyme powder added with soluble starch is used as the second enzyme powder, the color of the enzyme powder added with beta-cyclodextrin is lighter, the above result is mainly determined by the structure of the beta-cyclodextrin, and the outer cavity of the annular structure of the beta-cyclodextrin is hydrophilic and the inner cavity is hydrophobic, so that the chlorophyll in the wheat seedling enzyme can be embedded more easily, and the green color of the wheat seedling enzyme powder is lighter.
The foregoing is only a preferred application of the present invention, and it should be noted that, for those skilled in the art, various modifications and improvements can be made without departing from the technical principle of the present invention, and these modifications and improvements should also be considered as the protection scope of the present invention.

3. A meal replacement powder for pets containing dietary fiber according to claim 1 or 2, wherein the high-purity dietary fiber comprises one or more of psyllium husk powder, konjac powder, functional oligosaccharide, and water-soluble dietary fiber.

The meal replacement powder containing dietary fiber for pets according to claim 1 or 2, wherein the purity of the Plantago ovata husk powder is not less than 99%; the functional oligosaccharide is one or more of isomaltooligosaccharide, fructo-oligosaccharide, xylo-oligosaccharide, mannose oligomer and inulin; the water-soluble dietary fiber is resistant dextrin. Preferably, the rice flour is puffed rice flour.
5. The meal replacement powder for pets containing dietary fibers according to any one of claims 1 to 4, further comprising 8% -12% of wheat ferment powder.

s4, inoculating and fermenting saccharomycetes, inoculating 0.40% of Saccharomyces cerevisiae (Saccharomyces cerevisiae) at 32 ℃, fermenting for 18 hours, adjusting the pH value of the obtained fermentation liquid to 6.3-6.5, inoculating 1.5% of Lactobacillus plantarum (Lactobacillus plantarum) at 37 ℃, fermenting for 24 hours, concentrating the obtained wheat seedling enzyme, and performing spray drying to obtain wheat seedling enzyme powder;
the obtained wheat seedling enzyme SOD activity is 277.2U/mL, and the Saccharomyces cerevisiae concentration is 8.79 × 108CFU/mL, Lactobacillus plantarum concentration 8.31X 108CFU/mL。
7. The meal replacement powder containing dietary fibers for pets according to claim 6, wherein the nutrients are yeast extract 0.2%, magnesium sulfate 0.1% and zinc chloride 0.1%.
8. The meal replacement powder for pets containing dietary fiber according to claim 6, wherein the step of concentrating and spray-drying the wheat ferment in step S4 comprises:
s41, adding a drying aid into the wheat seedling ferment, wherein the weight ratio of the drying aid to the solid matters in the fermentation liquor is 1:1, and the drying aid is maltodextrin, soluble starch or beta-cyclodextrin;
s42, concentrating the wheat ferment until the solid content is 9%, wherein the inlet temperature of spray drying is 160 ℃, the outlet temperature is 90 ℃, and the rotation speed of an atomizer is 18000 r/min.
