Verfahren zur Herstellung von Fruchtsaft.
Zusatspatent zum Patente Nr. 68766.
Man hat vorgeschlagen, den in Früchten enthaltenen Saft in der Weise zu gewinnen, dass sie mit Zucker durchmischt und mit einem Siebe bedeckt werden, auf welchem sich weitere Mengen Zucker befinden. Dieses Sieb übt einen Druck auf die Früchte aus ; der Saft sättigt sich mit dem auf dem Siebe befindlichen Zucker, sinkt nach unten und gelangt durch ein weiteres Sieb, auf welches die Früchte gelegt sind, auf den Boden des Gefässes.
Nach dem Stammpatent Nr. 66766 geht man ebenfalls davon aus, dass die Früchte ohne Zerrührung mit der erforderlichen Menge Zucker gemischt werden, die Mischung in bekannter Weise in ein mit einem Filtrierboden versehenes Gefäss gebracht und unterhalb des Kochpunktes erhitzt wird, während von oben ein schwacher Dampfstrom auf die Früchte geleitet wird.
Bei besonders saftreichen Früchten ist die Zuleitung des Dampfstroms nicht erforderlich ; es wird auch so der grösste Teil des zuckerhaltigen Saftes infolge der Erhitzung der Mischung von Frucht und Zucker austreten und durch den Filtrierboden abfliessen.
Das ist dann, an einem Ausführungsbeispiele beschrieben, folgendes : Es wird schichtweise Frucht und Zucker in das mit einem Filtrierboden versehene Gefäss gefüllt, welches auf das Sammelgefäss für den Fruchtsaft gesetzt und zusammen mit diesem in das Kochgefäss eingestellt wird. Das Filtriereinsatzgefäss wird oben mit einem Deckel geschlossen, ebenso das Eochgefäss. Man bringt nun das Wasser in dem Kochgefäss zum Kochen und sorgt durch Anbringung eines Ventils dafür, dass ein Überdruck in dem Kochgefässe vermieden wird. Je nach der Grösse des Gefässes und der Menge der zu verarbeitenden Frucht lässt man 2 bis 5 Stunden stehen, bis der Saft in das Sammelgefäss soweit als möglich abgeflossen ist.
Man kann auch das vorstehend beschriebene Verfahren vereinigen mit dem Vcrfahrren des Stammpatentes in der Weise, dass man zunächst den Dampfstrom nicht zu den Früchten zutreten lässt, bis der grösste Teil des Fruchtsaftes abgeflossen ist, und dass man dann den
Deckel des Filtriereinsatzgefässes abhebt oder aber die Öffnung des Deckels, welche bisher geschlossen war, öffnet, so dass nachträglich der Dampfstrom zu dem Fruchtrückstand hinzutreten kann.
Der Saft, welcher vor Zutritt des Dampfstroms abgeflossen ist, wird gesondert gewonnen, also das Sammelgefäss von dem Fruchtsaft entleert, bevor man den Dampfstrom zu dem Rückstande der Frucht hinzutreten lässt
Diese verschiedenen Ausführungsformen des Verfahrens werden je nach dem besonderen
Zwecke und nach der besonderen Fruchtart zur Anwendung gebracht ; in dem Falle, in welchem man den nicht mit Dampf behandelten Rückstand als Zusatz verwerten will zu anderen Fruchterzeugnissen, lässt man während der ganzen Dauer des Verfahrens das
Filtriereinsatzgefäss geschlossen, so dass der Dampfstrom und das aus dem Dampfe verdichtete
Wasser überhaupt keinen Zutritt zu der Frucht erhält.
Auch bei diesen Ausführungsformen wird ohne Zerrührung der Früchte, ohne Ab- pressung des Fruchtsaftes, ohne seine Klärung und Filtrierung unmittelbar aus der Frucht ein klarer pektin-und eiweissfreier haltbarer Saft gewonnen, der das volle Aroma der
Früchte besitzt.
PATENT-ANSPRÜCHE :
1. Das durch Patent Nr. 66766 geschützte Verfahren zur Herstellung von Fruchtsäften aus Mischungen von Frucht und Zucker in der Ausführungsform, dass die Mischung von
Frucht und Zucker, die in bekannter Weise in einem bedeckten, mit einem Filtrierboden versehenen Gefässe untergebracht ist, darin erhitzt wird, bis der Fruchtsaft möglichst voll- ständig ausgetreten und abgeflossen ist.

It has been proposed to extract the juice contained in fruits in such a way that they are mixed with sugar and covered with a sieve on which there are additional quantities of sugar. This sieve exerts pressure on the fruit; the juice becomes saturated with the sugar on the sieve, sinks to the bottom and passes through another sieve on which the fruit is placed on the bottom of the vessel.
According to the parent patent no. 66766, it is also assumed that the fruits are mixed with the required amount of sugar without stirring, the mixture is placed in a container with a filter base in a known manner and heated below the boiling point, while a weak one from above Steam stream is directed onto the fruit.
In the case of particularly juicy fruits, it is not necessary to supply the steam flow; the greater part of the sugar-containing juice will escape as a result of the heating of the mixture of fruit and sugar and flow off through the filter base.
