Abstract

La presente descripción se refiere en general a los productos de soja derivados de la soja de alto contenido proteico, y más específicamente a las composiciones de soja con alto contenido proteico y a los métodos de preparación y uso de dichas composiciones de soja. La presente descripción también se refiere a los usos de las composiciones de soja en productos alimenticios. Reivindicación 1: Un método de procesamiento de soja, el método que comprende: a) proporcionar soja con alto contenido proteico, donde la soja con alto contenido proteico comprende una mayor proporción de proteína de soja que la soja de consumo normal b) desgrasar la soja de alto contenido proteico mediante extracción con solventes para producir una composición de soja desgrasada; y c) desolventización de la composición de soja desgrasada para producir directamente copos blancos enriquecidos en proteínas que comprenden al menos aproximadamente 55% de proteínas de soja en peso seco. Reivindicación 32: Una harina de soja, que tiene al menos 55% de proteína en peso seco, producida de acuerdo con un proceso que: (i) usa menos de 500 kg de agua por tonelada de harina de soja producida; o (ii) usa menos de 150 kWh de electricidad por tonelada de harina de soja producida; o (iii) produce la liberación de menos de 0,07 toneladas de CO₂ en la atmósfera por tonelada de harina de soja producida; o cualquier combinación de (i) - (iii) anteriores. Reivindicación 33: Una harina de soja, que tiene al menos 55% de proteína en peso seco, producida de acuerdo con un proceso que produce la liberación de al menos 60% menos CO₂ en la atmósfera por tonelada de harina de soja producida en comparación con una harina de soja producida a partir de soja para consumo normal. Reivindicación 42: Un producto alimenticio, un producto de bebida, un producto de suplemento dietario u otro producto, que comprende copos blancos enriquecidos con proteína de acuerdo con cualquiera de las reivindicaciones 23 - 30, una harina de soja enriquecida con proteína de acuerdo con cualquiera de las reivindicaciones 31 - 39, o una harina de soja texturizada enriquecida con proteína de acuerdo con la reivindicación 40 o 41. Reivindicación 43: Un método de procesamiento de sojas, el método que comprende: a) proporcionar de alto contenido proteico, en donde la soja de alto contenido proteico comprende una mayor proporción de proteína de soja que la soja de consumo normal; b) desgrasar la soja de alto contenido proteico mediante la extracción con solvente para producir una composición de soja desgrasada; y c) desolventizar la composición de soja desgrasada para producir directamente grano molido de soja enriquecido con proteína que comprende al menos aproximadamente 50% de proteína de soja en peso seco.
