Abstract

La presente se refiere a un procedimiento para el descube de la vendimia y un descubador de vendimia mediante la inyección a presión de aire u otros gases de forma controlada en tanques de vinificación autovaciantes o similares con el fin de llevar a cabo el vaciado de la vendimia una vez finalizada la maceración de la misma, tras el homogeneizado de la mezcla, trasfiriendo la fracción líquida a otro depósito y la pasta de uva estrujada a la prensa obteniéndose como residuo una fase sólida (orujos) que puede destinarse a la obtención de productos afines. Reivindicación 1: Procedimiento para el descube de la vendimia o similares que comprende las siguientes etapas: inyección a presión de aire por la parte inferior del fondo del depósito de forma continua durante 10 - 20 minutos, previa al inicio de la extracción por bombeo, retirada de la vendimia del depósito a través de una de las bocas convencionales del depósito mediante su extracción por bombeo, manteniendo la inyección a presión de aire, impulsión de la vendimia hasta un tamiz, un sinfín con rejilla de sangrado o una prensa con rejilla de sangrado, donde se escurre la vendimia, enviando la parte líquida a un almacenamiento y, la parte sólida escurrida a un almacenamiento o prensado, según corresponda, extracción de la fracción sólida obtenida en la prensa.
