Abstract
Un producto de gelatina con un componente núcleo, donde el componente núcleo está parcial o totalmente recubierto por un gel de gelatina, caracterizado porque el gel de gelatina está preparado de una masa fundida homogénea, que contiene los siguientes componentes disueltos en agua: de 3 a 20% en peso de gelatina con un peso molecular medio determinado por cromatografía de gel de como mínimo 130 kDa, preferentemente como mínimo 145 kDa, siendo la proporción de la fracción de peso molecular en 100 kDa como mínimo 35% en peso, preferentemente como mínimo 45% en peso; hasta 60% en peso, preferentemente de 15 a 60% en peso de jarabe de glucosa con una viscosidad de menos de 1000 mPa·s, preferentemente menos de 800 mPa·s, medido en una sustancia seca de 80% en peso y una temperatura de 60ºC; y hasta 60% en peso, preferentemente de 15 a 60% en peso de sacarosa, donde la masa fundida presenta una sustancia seca de como mínimo 70% en peso. Se refiere además a un procedimiento para la elaboración de tales productos de gelatina.
