Productos lácteos o de tipo lácteos acidificados, de vida en estante estable, y métodos de elaboración de los mismos. Los productos lácteos o de tipo lácteos acidificados, de vida en estante estable, son de vida en estante estable con perfiles mejorados en el sabor, la viscosidad y la textura. En una forma de realización general, se proporciona un producto lácteo o de tipo lácteo acidificado, de vida en estante estable, e incluye un componente lácteo y/o de tipo lácteo de vida en estante estable, un sistema estabilizante y una composición de puré. El sistema estabilizante incluye carragenina, pectina, maltodextrina, tapioca y almidón de maíz modificado y ayuda a proporcionar composiciones con un cuerpo más espeso y una sensación bucal cremosa sin la necesidad de emplear cantidades adicionales de proteínas.
