Abstract
Proceso para la produccion de un complejo de enzima. Uso del complejo enzimático en un proceso de produccion de un macerado de cervecería. Reivindicacion 1: Un complejo enzimático caracterizado porque deriva de la combinacion de: a) Un producto de expresion que se obtiene por fermentacion de una especie del género Trichoderma; y b) Una o más enzimas de cualquiera de diferentes especies del reino Fungi que se seleccionan entre una xilanasa (EC 3.2.1.8), una celulasa (EC 3.2.1.4), y una beta-glucanasa (EC 3.2.1.6); y donde por lo menos aproximadamente 61% de la actividad beta-1,4- endoglucano hidrolasa tal como se la mide por el método del ôEnsayo 1ö tal como se lo describe aquí, deriva de la fermentacion del género Trichoderma. Reivindicacion 3: El complejo enzimático de acuerdo con la reivindicacion 2, caracterizado porque dicho hongo diferente es del género Penicillium. Reivindicacion 37: Uso de un complejo enzimático caracterizado porque es en la produccion de jugo de frutas, vino, procesamiento de granos, alcohol para combustibles, y alcohol para bebidas.
