Abstract
A los efectos de preparar una sustancia granulada (G) de un producto alimenticio aireado, como por ejemplo merengue granulado, en donde dicha sustancia posee una superficie externa que parece continua ala vista, se proporciona una estructura alveolar (12), y un precursor líquido del producto alimenticio aireado (por ejemplo, la llamada ômezcla espumada de merengueö en el caso del merengue) se introduce (20, 22) en las cavidades (18) de la estructura. La consolidacion del precursor introducido en las cavidades (18), obtenida, por ejemplo, mediante calentamiento (24), conduce a la formacion, en las cavidades mencionadas anteriormente (18) de respectivas partículas del granulado (G), que se extraen finalmente de las cavidades (18), generalmente al producirse la deformacion del material que forma a la estructura alveolar.
