Abstract
Se desaborizan los materiales de proteínas de suero de leche tales como el suero de leche procedente de los procesos de elaboración del queso, proteínas de suero de leche concentradas, y proteínas de suero de leche aisladas, mediante el ajuste del pH de una composición acuosa de dichos materiales de proteínas de suero de leche a un valor de aproximadamente 8 a aproximadamente 12 a efectos de solubilizar las proteínas de suero de leche y para liberar los compuestos saborizantes, y seguidamente se hace pasar la composición, de pH ajustado, a una membrana de ultrafiltracion que tiene un paso limite para pesos moleculares de hasta aproximadamente 50.000 Dalton bajo condiciones bajo las cuales los compuestos saborizantes pasan a través de la membrana, quedando el material de proteínas de suero de leche retenido, con un sabor mejorado.
