Abstract

Un procedimiento para elaborar tagatosa que consiste en: a) hidrolizar lactosa o un material inicial que contiene lactosa, para obtener galactosa y glucosa, b) isomerizar la galactosa obtenida con una L-arabinosa isomerasa, y c) separar por cromatografía los productos y compuestos no convertidos y reciclar los compuestos no convertidos en el procedimiento. De este modo, se obtienen grandes producciones de tagatosa pura. Una L-arabinosa isomerasa preferida es la que deriva de Thermoanaerobacter mathranii DSM 11426.
