Abstract

Se obtiene una proteína con actividad de descomposición de la saponina, más específicamente, una proteína capaz de descomponer un glucósido que contiene sojasapogeno B como aglicona y, de ese modo, producir sojasapogeno B, un polinucleótido que codifique tal proteína y un método para producir sojasapogenol B a gran escala utilizando dicha proteína y dicho polinucleótido . Una proteína tal que es (a) una proteína que comprende una secuencia de aminoácidos seleccionada del grupo que consiste en las secuencias de aminoácidos presentadas en el N° de identificación de secuencia: 2, 4 y 6, o (b) una proteína que tiene por lo menos una homología del 50% con la proteína que comprende la secuencia de aminoácidos de la secuencia descripta en (a) y que tiene actividad de descomposición de saponina; (c) una proteína que tiene por lo menos una homología del 50% con la proteína que comprende la secuencia de aminoácidos de la secuencia descripta descriptas en (a) pero modificada, que contiene uno o más residuos aminoácidos suprimidos, sustituídos, insertados o agregados, y que presenta actividad de descomposición de saponina; (c) una proteína que comprende una secuencia de aminoácidos de las descriptas en (a) pero modificada, que contiene uno o más residuos aminoácidos suprimidos, sustituídos, insertados o agregados y que se presenta actividad de descomposición de saponina.
