Abstract

Se describe un proceso para la produccion de un biohidrolizado de proteínas vegetales que comprende formar una suspension acuosa de una proteína vegetal, en una cantidad de 5 a 50%, en peso de la suspension, ajustar el pH si fuera necesario, hidrolizar la suspension a una temperatura de 50 degree C hasta 60 degree C con una enzima proteolítica que contenga proteasas, exopeptidasas, endopeptidasas o glutaminasas e incubando durante un período de 8 hasta 24 horas, para obtener un grado de hidrolisis de al menos 60%, calentar para inactivar la enzima y separa el biohidrolizado.
