Se presenta un gen de rafinosa sintetasa que comprende una secuencia nucleotídica hibridizable con una secuencia nucleotídica seleccionada del grupo queintegran: (a) una secuencia nucleotídica que codifica la secuencia aminoacídica representada porS EQ ID Ns 1; (b) la secuencia nucleotídica representada porSEQ ID Ns2, (c) una secuencia nucleotídica que codifica la secuencia aminoacídica representada por SEC ID Ns 3; (d) la secuencia nucleotídica representada porSEQ ID Ns 4 o por losnucleotidos 236s a 2584s de la secuencia nucleotídica representada por SEQ ID Ns4; (e) una secuencia nucleotídica que codifica lasecuencia aminoacídica representada por SEQ ID Ns5; (f) la secuencia nucleotídica representada por SEQ ID Ns 6 o por losnucleotidos 134s a 2467s de lasecuencia nucleotídica representada por SE ID Ns6; (g) una secuencia nucleotídica que codifica la secuencia aminoacídica representada por SEQ ID Ns 7; (h) lasecuencia nucleotídica representada por SEQ ID Ns 8 o por losnucleotidos 1 s a 1719s de la secuencia nucleotídica representada por SEQ ID Ns8; bajo estrictascondiciones, y que codifique una proteina capaz de unir un grupo D-galactosilo a través de un enlace alfa (1->6) al grupo hidroxilo unido al átomo decarbonode la posic ion 6 del residuo de D-glucosa de una molécula de sacarosa, para formar rafinosa.
