Abstract

Se describe un proceso para coagular un gel de colágeno coextruído alimenticio en los cuales se aplica una solucion de sal altamente soluble que tiene unasolubilidad de por lo menos 8 moles por litro de agua a 20sC al gel de colágeno, con lo que elg el de colágeno es coagulado en menos de 60 segundos. El gel decolágeno es acidificado con un ácido inorgánico tal como ácido clorhídrico o ácido sulfurico y tiene una materia seca de entre 3 y 25%. El invento comprendeademás el productoalimenticio o btenido y la solucion de coagulacion utilizada.
