Abstract
従来と同等の大豆配合量で従来よりも大豆固形分濃度が高い豆乳を製造することができ、かつ、大豆由来の不快臭も低減することができる豆乳の製造方法及び豆乳の風味を維持しつつ大豆由来の不快臭が低減された豆乳を提供する。 大豆又は脱脂大豆を摩砕した後固液分離して得た未滅菌豆乳を、間接加熱方式又は電気加熱方式により、液温が90℃以上になるまで予備加熱する工程S3と、予備加熱後の未滅菌豆乳をスチームインジェクション方式又はスチームインフュージョン方式などの蒸気直接加熱方式で滅菌処理を行う工程S4と、滅菌処理後の滅菌豆乳を、液温が85℃以下になるまで減圧冷却する工程S5を連続して行うと共に、予備加熱時の液温と減圧冷却時の液温の差を5~35℃にして、大豆タンパク質を3質量%以上含有し、大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下の豆乳を得る。
Description
本発明は、豆乳の製造方法及びこの方法により製造された豆乳に関し、より詳しくは高濃度豆乳の製造技術に関する。
現在市販されている飲用の豆乳は、一般に、吸水させた大豆を麿砕した後、固液分離して得られた液体成分を滅菌処理し、更に、必要に応じて真空脱臭脱気処理や均質化処理を行うことで製造されている。また、近年の健康志向の高まりから、大豆固形分濃度が高い高濃度豆乳が注目されている。
一方、豆乳には特有の臭い(青臭さ)があり、大豆固形分濃度が高いとその青臭さも強くなって消費者の嗜好性を低下させる原因となるため、風味の改善が求められている。豆乳の青臭さを低減する方法としては、例えば、大豆若しくは脱脂大豆から得られた酸沈殿を行っていないスラリー又は溶液に、100~140℃で30~90秒と、140~160℃で3~30秒の直接蒸気吹き込み高温瞬間加熱減圧処理を行う方法がある(特許文献1参照)。
また、磨砕工程後、直ちに大豆磨砕物の昇温速度が1秒間に1℃~70℃となるように、該大豆磨砕物の温度を65℃~90℃の温度範囲まで昇温させ、該昇温状態を1秒~180秒間保持する第1加熱工程と、次いで、該大豆磨砕物の昇温速度を所定条件に設定して、該大豆磨砕物の温度を所定温度まで昇温させ、該昇温状態を所定時間保持する第2加熱工程とを直列に連結し、密封連続ラインとする摩砕加熱処理方法も提案されている(特許文献2参照)。
しかしながら、前述した従来の豆乳の製造方法で高濃度豆乳を製造する場合、生産性と品質に問題がある。具体的には、従来の製法では、豆乳の大豆固形分濃度を高めるために抽出時の大豆の配合割合を増やすと、大豆から豆乳へのタンパク質抽出効率が低下して生産性が低下する。また、大豆固形分濃度が高くなると、得られる豆乳の青臭さも強くなるが、前述した特許文献1,2に記載されている方法では、その臭いを十分に低減することができない。
そこで、本発明は、従来と同等の大豆配合量で従来よりも大豆固形分濃度が高い豆乳を製造することができ、かつ、大豆由来の不快臭も低減することができる豆乳の製造方法及び豆乳の風味を維持しつつ大豆由来の不快臭が低減された豆乳を提供することを目的とする。
本発明に係る豆乳の製造方法は、大豆又は脱脂大豆を摩砕した後固液分離して得た未滅菌豆乳を間接加熱方式又は電気加熱方式により、液温が90℃以上になるまで予備加熱する工程と、予備加熱後の未滅菌豆乳を蒸気直接加熱方式で滅菌処理する工程と、滅菌処理後の滅菌豆乳を液温が85℃以下になるまで減圧冷却する工程と、を有し、前記各工程を連続して行い、かつ、前記予備加熱時の液温と前記減圧冷却時の液温の差を5~35℃にする。
前記滅菌処理は、例えば、130~160℃の温度条件下で、1~90秒間行ってもよい。
本発明の豆乳の製造方法では、例えば、前記予備加熱時の液温を90~100℃にすると共に、前記減圧冷却時の液温を65~85℃にしてもよい。
本発明の豆乳の製造方法は、例えば、前記予備加熱前の未滅菌豆乳の大豆固形分濃度が6~14質量%である場合、前記減圧冷却後の殺菌豆乳の大豆固形分濃度を、前記予備加熱前の未滅菌豆乳よりも0.3~1質量%高くすることができる。
前記滅菌処理は、例えば、130~160℃の温度条件下で、1~90秒間行ってもよい。
本発明の豆乳の製造方法では、例えば、前記予備加熱時の液温を90~100℃にすると共に、前記減圧冷却時の液温を65~85℃にしてもよい。
本発明の豆乳の製造方法は、例えば、前記予備加熱前の未滅菌豆乳の大豆固形分濃度が6~14質量%である場合、前記減圧冷却後の殺菌豆乳の大豆固形分濃度を、前記予備加熱前の未滅菌豆乳よりも0.3~1質量%高くすることができる。
本発明に係る豆乳は、大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたマルトール量とヘキサナール量との比(マルトール/ヘキサナール)が100以上である。
本発明に係る他の豆乳は、大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたマルトール量と1-オクテン-3-オール量との比(マルトール/1-オクテン-3-オール)が105以上である。
本発明の豆乳では、大豆タンパク質1質量%あたりのマルトール含有量を1.0ppm以上にすることができる。
本発明に係る他の豆乳は、大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたバニリン量と1-オクテン-3-オール量との比(バニリン/1-オクテン-3-オール)が0.45以上である。
本発明の豆乳は、例えば大豆タンパク質を3質量%以上とすることができ、また、大豆固形分濃度を10質量%以上とすることができる。
また、本発明の豆乳は、例えば、前記大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、1-ヘキサノール含有量が5ppb以下である。
本発明に係る他の豆乳は、大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたマルトール量と1-オクテン-3-オール量との比(マルトール/1-オクテン-3-オール)が105以上である。
本発明の豆乳では、大豆タンパク質1質量%あたりのマルトール含有量を1.0ppm以上にすることができる。
本発明に係る他の豆乳は、大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたバニリン量と1-オクテン-3-オール量との比(バニリン/1-オクテン-3-オール)が0.45以上である。
本発明の豆乳は、例えば大豆タンパク質を3質量%以上とすることができ、また、大豆固形分濃度を10質量%以上とすることができる。
また、本発明の豆乳は、例えば、前記大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、1-ヘキサノール含有量が5ppb以下である。
本発明によれば、大豆配合量を増やさなくても大豆固形分濃度を高めることができ、更に、豆乳の風味成分を維持しつつ、大豆由来の不快臭成分を低減しているため、風味が良好で不快臭が低減された高濃度豆乳が得られる。
以下、本発明を実施するための形態について、添付の図面を参照して詳細に説明する。なお、本発明は、以下に説明する実施形態に限定されるものではない。
(第1の実施形態)
本発明の第1の実施形態に係る豆乳の製造方法は、少なくとも、未滅菌豆乳を予備加熱する工程と、予備加熱後の未滅菌豆乳に対して滅菌処理を行う工程と、滅菌処理後の滅菌豆乳を減圧冷却する工程とを連続して行い、高濃度豆乳を得る。図1は本発明の実施形態に係る豆乳の製造方法を示すフローチャートである。本実施形態の豆乳の製造方法では、例えば、図1に示すように、摩砕工程S1と、固液分離工程S2と、予備加熱工程S3と、滅菌処理工程S4と、減圧冷却工程S5とを行う。
本発明の第1の実施形態に係る豆乳の製造方法は、少なくとも、未滅菌豆乳を予備加熱する工程と、予備加熱後の未滅菌豆乳に対して滅菌処理を行う工程と、滅菌処理後の滅菌豆乳を減圧冷却する工程とを連続して行い、高濃度豆乳を得る。図1は本発明の実施形態に係る豆乳の製造方法を示すフローチャートである。本実施形態の豆乳の製造方法では、例えば、図1に示すように、摩砕工程S1と、固液分離工程S2と、予備加熱工程S3と、滅菌処理工程S4と、減圧冷却工程S5とを行う。
[摩砕工程S1]
摩砕工程S1では、例えば、水や湯に浸漬して吸水させた大豆若しくは脱脂大豆をそのまま、又は水や湯を加えて粉砕し、呉(大豆スラリー)を得る。本実施形態の豆乳に用いる大豆は、丸大豆及び脱皮大豆のいずれでもよく、その種類も特に限定されるものではなく、黄大豆、黒大豆、赤大豆、青大豆、白大豆、大粒種、中粒種及び小粒種などの各種大豆を用いることができ、リポキシゲナーゼやサポニンなどの大豆に含有される成分や、大豆貯蔵タンパク質の一部を欠失又は増加させた遺伝子変異大豆でもよい。
摩砕工程S1では、例えば、水や湯に浸漬して吸水させた大豆若しくは脱脂大豆をそのまま、又は水や湯を加えて粉砕し、呉(大豆スラリー)を得る。本実施形態の豆乳に用いる大豆は、丸大豆及び脱皮大豆のいずれでもよく、その種類も特に限定されるものではなく、黄大豆、黒大豆、赤大豆、青大豆、白大豆、大粒種、中粒種及び小粒種などの各種大豆を用いることができ、リポキシゲナーゼやサポニンなどの大豆に含有される成分や、大豆貯蔵タンパク質の一部を欠失又は増加させた遺伝子変異大豆でもよい。
[固液分離工程S2]
固液分離工程S2では、遠心分離法及びろ過法などにより、摩砕工程S1で得た呉からおからを分離して未滅菌豆乳を得る。なお、大豆固形分濃度が10質量%以上の高濃度豆乳を得るには、固液分離後の未滅菌豆乳(予備加熱前の未滅菌豆乳)は大豆固形分濃度が6~14質量%であることが好ましい。
固液分離工程S2では、遠心分離法及びろ過法などにより、摩砕工程S1で得た呉からおからを分離して未滅菌豆乳を得る。なお、大豆固形分濃度が10質量%以上の高濃度豆乳を得るには、固液分離後の未滅菌豆乳(予備加熱前の未滅菌豆乳)は大豆固形分濃度が6~14質量%であることが好ましい。
[予備加熱工程S3]
予備加熱工程S3では、固液分離工程S2で得た未滅菌豆乳を、間接加熱方式又は電気加熱方式により、液温が90℃以上になるまで予備加熱する。ここでいう豆乳の液温は、例えば加熱器出口で測定することができるが、加熱器内で測定してもよい。予備加熱工程S3の加熱方式は、蒸気や熱水などにより配管の外側から豆乳を間接的に加熱する間接加熱、又は、ジュール加熱やマイクロ波加熱などにより豆乳を直接的に加熱する電気加熱方式であるため、予備加熱工程S3では豆乳の濃度は変化しない。
予備加熱工程S3では、固液分離工程S2で得た未滅菌豆乳を、間接加熱方式又は電気加熱方式により、液温が90℃以上になるまで予備加熱する。ここでいう豆乳の液温は、例えば加熱器出口で測定することができるが、加熱器内で測定してもよい。予備加熱工程S3の加熱方式は、蒸気や熱水などにより配管の外側から豆乳を間接的に加熱する間接加熱、又は、ジュール加熱やマイクロ波加熱などにより豆乳を直接的に加熱する電気加熱方式であるため、予備加熱工程S3では豆乳の濃度は変化しない。
このように、滅菌処理工程S4の前に、蒸気などの熱媒が混入しない間接加熱方式又は電気加熱方式により、従来よりも高い温度で未滅菌豆乳を予備加熱することで、滅菌処理工程S4における蒸気の使用量を低減することができると共に、製造工程全体で豆乳への蒸気混入量を減らすことができる。
ただし、予備加熱温度(予備加熱時の豆乳の液温)が90℃未満の場合、滅菌処理工程S4における蒸気使用量低減の効果が十分に得られないことがあるため、本実施形態の豆乳の製造方法では、予備加熱温度は90℃以上とする。なお、予備加熱時の過剰な熱履歴による劣化臭発生を抑制する観点から、予備加熱温度は90~100℃とすることが好ましい。
[滅菌処理工程S4]
滅菌処理工程S4では、予備加熱後の未滅菌豆乳に対して、蒸気を注入するスチームインジェクション方式又は蒸気が充満した空間に未滅菌豆乳を通過させて加熱するスチームインフュージョン方式により滅菌処理を行う。この滅菌処理工程S4で適用する加熱方式は、高温の蒸気を未滅菌豆乳に混合して直接的に加熱する蒸気直接加熱方式であり、混入した蒸気の分だけ豆乳に水分が加わるため、豆乳の濃度は薄まるが、本実施形態の豆乳の製造方法では、予備加熱工程S3により未滅菌豆乳の液温が90℃以上になっているため、従来よりも少ない蒸気混入量で滅菌処理を行うことができる。
滅菌処理工程S4では、予備加熱後の未滅菌豆乳に対して、蒸気を注入するスチームインジェクション方式又は蒸気が充満した空間に未滅菌豆乳を通過させて加熱するスチームインフュージョン方式により滅菌処理を行う。この滅菌処理工程S4で適用する加熱方式は、高温の蒸気を未滅菌豆乳に混合して直接的に加熱する蒸気直接加熱方式であり、混入した蒸気の分だけ豆乳に水分が加わるため、豆乳の濃度は薄まるが、本実施形態の豆乳の製造方法では、予備加熱工程S3により未滅菌豆乳の液温が90℃以上になっているため、従来よりも少ない蒸気混入量で滅菌処理を行うことができる。
滅菌処理条件は、特に限定されるものではないが、予備加熱温度(予備加熱時の豆乳の液温)と滅菌処理温度(滅菌処理時の豆乳の液温)との差が小さいほど直接蒸気混入量は少なくなる。そこで、滅菌効率及び蒸気混入量低減の観点から、滅菌処理は、液温(滅菌処理温度)を130~160℃とし、1~90秒間行うことが好ましく、直接蒸気混入後の液温が140~160℃となる条件で行うことがより好ましい。
[減圧冷却工程S5]
減圧冷却工程S5では、滅菌処理により得た滅菌豆乳を、真空圧に曝して真空圧における飽和蒸気温度まで瞬時に冷却し、滅菌処理工程S4において混入した蒸気を蒸発させて除去する。具体的には、加熱状態の滅菌豆乳を、液温が85℃以下になるまで減圧冷却し、滅菌処理で混入した蒸気を除去する。
減圧冷却工程S5では、滅菌処理により得た滅菌豆乳を、真空圧に曝して真空圧における飽和蒸気温度まで瞬時に冷却し、滅菌処理工程S4において混入した蒸気を蒸発させて除去する。具体的には、加熱状態の滅菌豆乳を、液温が85℃以下になるまで減圧冷却し、滅菌処理で混入した蒸気を除去する。
従来、滅菌処理後の減圧冷却では、混入した蒸気量と同量が蒸発し、未滅菌豆乳と滅菌豆乳とで固形分濃度が同じになる条件で実施されている。これに対して、本実施形態の豆乳の製造方法では、減圧冷却工程S5において滅菌処理で混入される凝集水量よりも多くの水分を除去することによって、未滅菌豆乳に比べて滅菌豆乳の大豆固形分濃度を高めて豆乳を濃縮する。また、不快臭の原因となる成分(以下、「不快臭成分」という。)であるヘキサノールや1-ヘキサノールなどは揮発性であるから、前述した減圧冷却によりこれらの不快臭成分を除去することもできる。
ただし、予備加熱温度(予備加熱時の豆乳の液温)と減圧冷却温度(減圧冷却時の豆乳の液温)との差が5℃未満の場合、豆乳が十分に濃縮されない場合がある。そこで、本実施形態の豆乳の製造方法では、減圧冷却温度(減圧冷却時の豆乳の液温)を予備加熱温度よりも5~35℃低い温度にする。ここでいう豆乳の液温は、例えば加冷却器出口で測定することができるが、冷却器内で測定してもよい。
本実施形態の豆乳の製造方法では、予備加熱を間接加熱方式又は電気加熱方式により行うことで豆乳への蒸気混入量を減らしているため、予備加熱温度に対して減圧冷却温度を低くするほど、滅菌処理時に豆乳に混入された蒸気の量よりも減圧冷却により蒸発する蒸気の量が多くなり、未滅菌豆乳よりも滅菌豆乳の固形分濃度が高くなる。従って、予備加熱温度と減圧冷却温度の差を5~35℃にすることで、豆乳の濃縮率を高め、滅菌豆乳の大豆固形分濃度を未滅菌豆乳よりも0.3~1%程度高くすることができる。
豆乳の濃縮効率及び不快臭成分の除去効率の観点からは、予備加熱温度が90~100℃であった場合、減圧冷却温度は65~85℃とすることが好ましい。これにより、例えば、予備加熱前の未滅菌豆乳の大豆固形分濃度が6~14質量%であった場合、大豆固形分濃度が6.3~15質量%の高濃度滅菌豆乳を得ることができる。なお、豆乳の大豆固形分濃度の測定方法は、特に限定されるものではなく、加熱乾燥法及び赤外分光法などの公知の方法で測定することができるが、例えば、大村 芳正、他1名,“豆乳のフレーバーに及ぼす温水処理の影響”,食品工業学会誌,第37巻,第4号,1990年4月,p.278~280に記載の方法で測定することもできる。
なお、前述した予備加熱工程S3、滅菌処理工程S4及び減圧冷却工程S5は、例えば、例えば当業者で一般的に使用されている直接加熱式滅菌装置を使用して実施することができる。
[高濃度豆乳]
豆乳の青臭さの成分としてはヘキサナールや1-ヘキサノールが知られているが、これらの成分は大豆に含まれる脂肪酸の酸化によって生じるため、高濃度豆乳を製造するために大豆の使用量を増やすほど、得られる豆乳に含まれる青臭さの原因成分の量も多くなる。一方、ヘキサナールや1-ヘキサノールはいずれも揮発性成分であるため、製造工程で実施する減圧処理などによって、これらの成分の含有量が減少することが知られている。
豆乳の青臭さの成分としてはヘキサナールや1-ヘキサノールが知られているが、これらの成分は大豆に含まれる脂肪酸の酸化によって生じるため、高濃度豆乳を製造するために大豆の使用量を増やすほど、得られる豆乳に含まれる青臭さの原因成分の量も多くなる。一方、ヘキサナールや1-ヘキサノールはいずれも揮発性成分であるため、製造工程で実施する減圧処理などによって、これらの成分の含有量が減少することが知られている。
即ち、本実施形態の豆乳は、前述した方法により製造されるものであり、大豆タンパク質を3質量%以上含有し、大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、1-ヘキサノール含有量が5ppb以下である。本実施形態の豆乳における大豆タンパク質含有率は、4質量%以上が好ましく、より好ましくは4.65質量%以上である。
豆乳に含まれる大豆タンパク質の量の測定方法は、特に限定されるものではなく、例えばケルダール法、燃焼法(改良デュマ法)及びフーリエ変換赤外分光法などの公知の方法を用いることができるが、一般的にはフーリエ変換赤外分光計を用いた分析方法が用いられている。また、豆乳の臭気成分の測定方法も、特に限定されるものではなく、高速液体クロマトグラフィー(HPLC)、ガスクロマトグラフィー(GC)、ヘッドスペースガスクロマトグラフィー(HSS-GC)及び固相マイクロ抽出ガスクロマトグラフィー(SPME-GC)などの公知の方法を用いることができるが、ヘッドスペースサンプラ(HSS)法による測定(特許第6122172号公報参照)が好適である。
本実施形態の豆乳は、大豆タンパク質を3質量%以上含有する高濃度豆乳であっても、不快臭の原因となるヘキサール及び1-ヘキサノールの含有量は通常濃度の豆乳と同等以下である。このように、本実施形態の豆乳の製造方法によれば、不快臭が低減された高濃度豆乳が得られる。
以上詳述したように、本実施形態の豆乳の製造方法は、滅菌処理の前に間接加熱方式又は電気加熱方式による予備加熱を従来よりも高い温度で行い、更に、減圧冷却温度を予備加熱温度よりも5~35℃低い温度に設定しているため、大豆配合量を増やさなくても大豆固形分濃度を高めることができ、更に、大豆由来の不快臭も低減することができる。これにより、効率的に豆乳の濃縮及び不快臭成分の除去を行うことができるため、不快臭が低減された高濃度豆乳が得られる。
特許文献1,2に記載されているような従来の製造方法では、不快臭成分の除去率を高めるため、直接加熱による滅菌処理と減圧冷却を2回以上繰り返し行っているが、本実施形態の豆乳の製造方法では、従来の製法よりも豆乳の希釈率を低く抑えることが可能となるため、蒸気直接加熱方式による1回の滅菌処理で十分に不快臭成分の除去を行うことができる。
(第2の実施形態)
次に、本発明の第2の実施形態に係る豆乳について説明する。本実施形態の豆乳は、前述した第1の実施形態の豆乳の製造方法により製造されたものであり、不快臭成分であるヘキサナール(Hexanal)の含有量が大豆タンパク質1質量%あたり15ppb以下であり、1-オクテン-3-オール(1-Octen-3-ol)の含有量が大豆タンパク質1質量%あたりの3.0ppb以下である。
次に、本発明の第2の実施形態に係る豆乳について説明する。本実施形態の豆乳は、前述した第1の実施形態の豆乳の製造方法により製造されたものであり、不快臭成分であるヘキサナール(Hexanal)の含有量が大豆タンパク質1質量%あたり15ppb以下であり、1-オクテン-3-オール(1-Octen-3-ol)の含有量が大豆タンパク質1質量%あたりの3.0ppb以下である。
ヘキサナール及び1-オクテン-3-オールは、大豆に含まれる脂肪酸の酸化により生じる臭気成分であり、豆乳の不快臭(大豆由来の青臭さ・きのこ臭・土臭さ)の原因となる成分である。このため、豆乳中のヘキサナール量及び1-オクテン-3-オール量は少ない方が好ましい。具体的には、大豆タンパク質1質量%あたりのヘキサナール含有量を15ppb以下、又は、1-オクテン-3-オール含有量を3.0ppb以下にすると、不快臭を感じにくくなる。
その一方で、本実施形態の豆乳は、良好な風味を呈する成分であるマルトール(Maltol)及びバニリン(Vanillin)を一定量以上含有する。具体的には、本実施形態の豆乳は、大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、かつ、マルトール量とヘキサナール量との比(マルトール/ヘキサナール)が100以上である。マルトール/ヘキサナール比を100以上にすることにより、甘く好ましい香りが感じられ、風味が良好な豆乳が得られる。
ここでいう「マルトール/ヘキサナール比」は、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めた値である。なお、マルトール/ヘキサナール比の上限値は、特に限定されるものではないが、生産性などの観点から、160以下であることが好ましい。
又は、本実施形態の豆乳は、大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、かつ、マルトール量と1-オクテン-3-オール量との比(マルトール/1-オクテン-3-オール)が105以上、若しくは、バニリン量と1-オクテン-3-オール量との比(バニリン/1-オクテン-3-オール)が0.45以上、又はその両方である。マルトール/1-オクテン-3-オール比を105以上、及び/又は、バニリン/1-オクテン-3-オール比を0.45以上にすることにより、甘く濃厚で好ましい香りが感じられ、風味が良好な豆乳が得られる。
ここでいう「マルトール/1-オクテン-3-オール比」及び「バニリン/1-オクテン-3-オール比」は、ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めた値である。なお、これらの成分比の上限値も、特に限定されるものではないが、生産性などの観点から、マルトール/1-オクテン-3-オール比は200以下、バニリン/1-オクテン-3-オール比は0.7以下であることが好ましい。
前述した各臭気成分の比は、例えば、豆乳製造時の予備加熱温度(予備加熱時の豆乳の液温)と減圧冷却温度(減圧冷却時の豆乳の液温)の温度差を変更することで調整することができる。
また、本実施形態の豆乳は、大豆タンパク質1質量%あたりのマルトール含有量が1.0ppm以上であることが好ましい。これにより、大豆由来の甘い香りが強くなり、豆乳の風味が更に向上する。
更に、本実施形態の豆乳が高濃度豆乳である場合は、大豆タンパク質含有量が3質量%以上、及び/又は、大豆固形分濃度が10質量%以上であることが好ましい。これにより、成分濃度が高く、コクや風味が濃厚な豆乳が得られる。
以上詳述したように、本実施形態の豆乳は、不快臭の原因となる成分の量を低減すると共に、甘く好ましい風味を呈する成分の量は維持し、これらの臭気成分の比を特定値以上にしているため、豆乳の風味を維持しつつ、大豆由来の不快臭が低減された豆乳を実現できる。本実施形態の各構成は、特に高濃度豆乳に有効である。
以下、実施例及び比較例を挙げて、本発明の効果について具体的に説明する。
<第1実施例>
本発明の第1実施例として、以下に示す方法で実施例及び比較例の豆乳を作製し、含有する不快臭成分量を比較した。

〔比較例1〕
丸大豆Aを摩砕した後、固液分離して得た未滅菌豆乳(大豆固形分濃度:9質量%)を、蒸気による間接加熱によって加熱器出口での液温が80℃になるまで予備加熱した後、蒸気を注入するスチームインジェクション方式により140℃以上の温度条件で1秒間以上豆乳の滅菌処理を行った。その後、滅菌処理後の滅菌豆乳を、冷却器出口での液温が80℃になるまで減圧冷却して、大豆タンパク質含有率が4.00質量%の豆乳を作製した。
丸大豆Aを摩砕した後、固液分離して得た未滅菌豆乳(大豆固形分濃度:9質量%)を、蒸気による間接加熱によって加熱器出口での液温が80℃になるまで予備加熱した後、蒸気を注入するスチームインジェクション方式により140℃以上の温度条件で1秒間以上豆乳の滅菌処理を行った。その後、滅菌処理後の滅菌豆乳を、冷却器出口での液温が80℃になるまで減圧冷却して、大豆タンパク質含有率が4.00質量%の豆乳を作製した。
〔比較例2〕
丸大豆Aを比較例1よりも20質量%増量して摩砕した後、固液分離して得た未滅菌豆乳(大豆固形分濃度:11質量%)を、蒸気による間接加熱によって加熱器出口での液温が80℃になるまで予備加熱した後、蒸気を注入するスチームインジェクション方式により140℃以上で1秒間以上滅菌処理を行った。その後、滅菌処理後の滅菌豆乳を、冷却器出口での液温が80℃になるまで減圧冷却して、大豆タンパク質含有率が4.65質量%の豆乳を作製した。
丸大豆Aを比較例1よりも20質量%増量して摩砕した後、固液分離して得た未滅菌豆乳(大豆固形分濃度:11質量%)を、蒸気による間接加熱によって加熱器出口での液温が80℃になるまで予備加熱した後、蒸気を注入するスチームインジェクション方式により140℃以上で1秒間以上滅菌処理を行った。その後、滅菌処理後の滅菌豆乳を、冷却器出口での液温が80℃になるまで減圧冷却して、大豆タンパク質含有率が4.65質量%の豆乳を作製した。
〔実施例1〕
比較例1と同量の丸大豆Aを摩砕した後固液分離して得た未滅菌豆乳(大豆固形分濃度:9質量%)を、蒸気による間接加熱によって加熱器出口での液温が95℃になるまで予備加熱した後、蒸気を注入するスチームインジェクション方式により140℃以上で1秒間以上滅菌処理を行った。その後、滅菌処理後の滅菌豆乳を、冷却器出口での液温が76℃になるまで減圧冷却して、大豆タンパク質含有率が4.65質量%の豆乳を作製した。

〔比較例3〕
前述した比較例1,2及び実施例1とは異なる丸大豆Bを用い、予備加熱温度を81℃、減圧冷却温度を81℃にした以外は、前述した比較例1と同様の方法及び条件で、大豆タンパク質含有率が4.00質量%の豆乳を作製した。

前述した比較例1~5及び実施例1,2とは異なる丸大豆(丸大豆C)を用い、予備加熱温度を80℃、減圧冷却温度を75℃にした以外は、前述した実施例1と同様の方法及び条件で、大豆タンパク質含有率が4.10質量%の豆乳を作製した。

〔実施例4〕
実施例3と同じ丸大豆Cを用い、予備加熱温度を100℃、減圧冷却温度を65℃にした以外は、前述した実施例1と同様の方法及び条件で、大豆タンパク質含有率が4.30質量%の豆乳を作製した。

[臭気成分の測定]
次に、前述した方法で作製した比較例1~5及び実施例1,2の各豆乳について、特許第6122172号公報の実施例に記載された方法と同様の方法で、大豆タンパク1質量%あたりのヘキサナール含有量及び1-ヘキサノール含有量を求めた。また、比較例1及び実施例2~4の各豆乳について、大豆タンパク1質量%あたりの1-オクテン-3-オール含有量を求めた。ヘキサナール、1-ヘキサノール及び1-オクテン-3-オールの測定は、20mlのバイアル瓶に豆乳10gを入れて密閉したものを用いて、HSS-GC/MS装置により行った。その際の測定条件を以下に示す。
次に、前述した方法で作製した比較例1~5及び実施例1,2の各豆乳について、特許第6122172号公報の実施例に記載された方法と同様の方法で、大豆タンパク1質量%あたりのヘキサナール含有量及び1-ヘキサノール含有量を求めた。また、比較例1及び実施例2~4の各豆乳について、大豆タンパク1質量%あたりの1-オクテン-3-オール含有量を求めた。ヘキサナール、1-ヘキサノール及び1-オクテン-3-オールの測定は、20mlのバイアル瓶に豆乳10gを入れて密閉したものを用いて、HSS-GC/MS装置により行った。その際の測定条件を以下に示す。

(3)不快臭成分量の算出
先ず、各豆乳におけるヘキサナール濃度及び1-ヘキサノール濃度を、クロマトグラム上のピーク面積から、各成分の標準品を外部標準とした検量線にて算出した。次に、各豆乳の大豆タンパク質含有率に基づき、大豆タンパク質1質量%あたりのヘキサナール含有量及び1-ヘキサノール含有量を求めた。以上の結果を下記表1にまとめて示す。
先ず、各豆乳におけるヘキサナール濃度及び1-ヘキサノール濃度を、クロマトグラム上のピーク面積から、各成分の標準品を外部標準とした検量線にて算出した。次に、各豆乳の大豆タンパク質含有率に基づき、大豆タンパク質1質量%あたりのヘキサナール含有量及び1-ヘキサノール含有量を求めた。以上の結果を下記表1にまとめて示す。
上記表1に示すように、本発明の方法で作製した実施例1及び実施例2の豆乳は、それぞれ同じ大豆原料を用い、予備加熱と減圧冷却を同じ温度(液温差0℃)にして作製した比較例2及び比較例4,5の高濃度豆乳と大豆タンパク質含有率が同等であるにもかかわらず、不快臭成分であるヘキサナールが約40%、1-ヘキサノールが約60%低減されていた。また、実施例1及び実施例2の豆乳は、それぞれ同じ大豆原料を用いた比較例1及び比較例3の通常濃度の豆乳と比べても、大豆タンパク質1質量%あたりのヘキサナール含有量及び1-ヘキサノール含有量が低かった。
更に、大豆原料に丸大豆Cを用いた実施例3及び実施例4の豆乳は、比較例1及び比較例3の豆乳よりも大豆タンパク質含有率が高いにもかかわらず、大豆タンパク質1質量%あたりのヘキサナール含有量、1-ヘキサノール含有量及び1-オクテン-3-オール含有量は低かった。
以上の結果から、本発明によれば、従来と同等の大豆配合量でも大豆固形分濃度が高い豆乳を製造することができ、かつ、大豆由来の不快臭も低減することができ、不快臭が低減された高濃度豆乳が得られることが確認された。
<第2実施例>
次に、本発明の第2実施例として、前述した第1実施例の比較例1、実施例2~4の各豆乳について、ヘキサナール、1-オクテン-3-オール、マルトール及びバニリンの含有量を測定し、マルトール/ヘキサナール比、マルトール/1-オクテン-3-オール比及びバニリン/1-オクテン-3-オール比を求めた。
次に、本発明の第2実施例として、前述した第1実施例の比較例1、実施例2~4の各豆乳について、ヘキサナール、1-オクテン-3-オール、マルトール及びバニリンの含有量を測定し、マルトール/ヘキサナール比、マルトール/1-オクテン-3-オール比及びバニリン/1-オクテン-3-オール比を求めた。
[臭気成分の測定]
ヘキサナール、1-オクテン-3-オール、マルトール及びバニリンの測定は、実施例2~4及び比較例1の各豆乳5gを、5mlのアセトンで溶媒抽出を行い、得られた抽出液を用いて、溶媒抽出―ダイナミックヘッドスペースーガスクロマトグラフィー質量分析法により行った。その際の測定条件を以下に示す。
ヘキサナール、1-オクテン-3-オール、マルトール及びバニリンの測定は、実施例2~4及び比較例1の各豆乳5gを、5mlのアセトンで溶媒抽出を行い、得られた抽出液を用いて、溶媒抽出―ダイナミックヘッドスペースーガスクロマトグラフィー質量分析法により行った。その際の測定条件を以下に示す。

(4)臭気成分比の算出
比較例1及び実施例2~4の各豆乳の臭気成分比は、ベースイオンのピーク面積値から算出した。具体的には、ヘキサナール:56m/z、1-オクテン-3-オール:57m/z、マルトール:126m/z、バニリン:151m/zをベースイオンとして各成分のピーク面積値を算出した。そして、このピーク面積値から成分比を求めた。
比較例1及び実施例2~4の各豆乳の臭気成分比は、ベースイオンのピーク面積値から算出した。具体的には、ヘキサナール:56m/z、1-オクテン-3-オール:57m/z、マルトール:126m/z、バニリン:151m/zをベースイオンとして各成分のピーク面積値を算出した。そして、このピーク面積値から成分比を求めた。
[風味の評価]
比較例1及び実施例2~4の各豆乳の風味は、5名の分析型官能評価パネル(訓練期間:3年以上)により実施した。評価は、液温差0℃の比較例1の豆乳を基準試料とし、基準試料(比較例1の豆乳)との風味の違いの程度を下記の3段階で評価した。そして、5人のパネルのうち、最も多くの人数が選択した評価を総合評価とした。
◎:基準試料よりも風味が非常によい
○:基準試料よりも風味がよい
×:基準試料と同等
比較例1及び実施例2~4の各豆乳の風味は、5名の分析型官能評価パネル(訓練期間:3年以上)により実施した。評価は、液温差0℃の比較例1の豆乳を基準試料とし、基準試料(比較例1の豆乳)との風味の違いの程度を下記の3段階で評価した。そして、5人のパネルのうち、最も多くの人数が選択した評価を総合評価とした。
◎:基準試料よりも風味が非常によい
○:基準試料よりも風味がよい
×:基準試料と同等
以上の結果を下記表2にまとめて示す。なお、下記表2には、その評点を選択したパネルの人数を合わせて示す。
上記表2に示すように、不快臭成分であるヘキサナール及び1-オクテン-3-オールの含有量が低く、マルトール/ヘキサナール比、マルトール/1-オクテン-3-オール比、バニリン/1-オクテン-3-オール比が本発明の要件を満たす実施例2~4の豆乳は、これらの臭気成分の比が本発明の範囲から外れている比較例1の豆乳に比べて、不快臭は低減されていたが、甘く好ましい香りは維持されており、良好な風味を呈するものであった。
以上の結果から、本発明によれば、豆乳の風味を維持しつつ、大豆由来の不快臭が低減された豆乳が得られることが確認された。本発明の構成は、特に大豆固形分濃度が高い高濃度豆乳に好適である。
Claims (11)
- 大豆又は脱脂大豆を摩砕した後固液分離して得た未滅菌豆乳を、間接加熱方式又は電気加熱方式により、液温が90℃以上になるまで予備加熱する工程と、
予備加熱後の未滅菌豆乳を蒸気直接加熱方式で滅菌処理する工程と、
滅菌処理後の滅菌豆乳を、液温が85℃以下になるまで減圧冷却する工程と、
を有し、
前記各工程を連続して行い、かつ、
前記予備加熱時の液温と前記減圧冷却時の液温の差を5~35℃にする豆乳の製造方法。 - 前記滅菌処理は、液温が130~160℃の範囲で、1~90秒間行う請求項1に記載の豆乳の製造方法。
- 前記予備加熱時の液温を90~100℃にすると共に、前記減圧冷却時の液温を65~85℃にする請求項1又は2に記載の豆乳の製造方法。
- 前記予備加熱前の未滅菌豆乳は大豆固形分濃度が6~14質量%であり、
前記減圧冷却後の殺菌豆乳は、前記予備加熱前の未滅菌豆乳よりも大豆固形分濃度が0.3~1質量%高い請求項1~3のいずれか1項に記載の豆乳の製造方法。 - 大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、
ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたマルトール量とヘキサナール量との比(マルトール/ヘキサナール)が100以上である豆乳。 - 大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、
ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたマルトール量と1-オクテン-3-オール量との比(マルトール/1-オクテン-3-オール)が105以上である豆乳。 - 大豆タンパク質1質量%あたりのマルトール含有量が1.0ppm以上である請求項5又は6に記載の豆乳。
- 大豆タンパク質1質量%あたりの1-オクテン-3-オール含有量が3.0ppb以下であり、
ヘッドスペース法によるガスクロマトグラフィーのピーク面積から求めたバニリン量と1-オクテン-3-オール量との比(バニリン/1-オクテン-3-オール)が0.45以上である豆乳。 - 大豆タンパク質を3質量%以上含有する請求項5~8のいずれか1項に記載の豆乳。
- 前記大豆タンパク質1質量%あたりのヘキサナール含有量が15ppb以下であり、かつ、前記大豆タンパク質1質量%あたりの1-ヘキサノール含有量が5ppb以下である請求項9に記載の豆乳。
- 大豆固形分濃度が10質量%以上である請求項5~10のいずれか1項に記載の豆乳。
