상기 들기름은 들기름 전체 향미 성분의 GC-MS 피크 면적을 100으로 보았을 때, 상기 고소한 향미 성분을 15, 17, 19, 21, 23, 25, 26 중에서 선택되는 하나의 하한 및 38, 36, 34, 32, 30, 28 중에서 선택되는 하나의 상한으로 이루어진 군에서 선택되는 범위의 함량으로 포함되는 것일 수 있다. 구체적으로 고소한 향미 성분을 15 내지 38, 17 내지 36, 19 내지 34, 21 내지 32, 23 내지 32, 25 내지 30, 25 내지 28 또는 26 내지 28로 함유할 수 있다.
상기 들기름은 들기름 전체 향미 성분의 GC-MS 피크 면적을 100으로 보았을 때, Butanal을 1, 2, 3, 4, 5 중에서 선택되는 하나의 하한, 및 10, 9, 8, 7 중에서 선택되는 하나의 상한으로 이루어진 군에서 선택되는 범위의 함량으로 포함되는 것일 수 있다. 구체적으로 1 내지 10, 2 내지 9, 2 내지 8, 2 내지 7, 3 내지 7 또는 4 내지 7, 보다 구체적으로는 5 내지 7로 함유할 수 있다.
상기 Butanal은 코코아, 풋풋한, 곡물, 발효된 맛(flavor)과, 풋풋한, 코코아, 몰티(malty)한 향(odor)을 나타내어 풋풋한 향미와 고소한 향미를 모두 나타내는 성분으로, 들기름을 볶는 품온에 따라 함량이 변화할 수 있다. 상기 Butanal은 품온 155 내지 175℃에서 볶아 착유한 들기름에서 그 함량이 높은 것일 수 있다.
본 출원의 구체적인 실시예에서, 상기 Butanal은 품온 155℃에서 볶아 착유한 들기름에서 급격하게 함량이 증가하여 품온 165℃에서 볶아 착유한 들기름에서 최대 함량을 나타냈으며, 품온 175℃에서 볶아 착유한 들기름에서 함량이 감소하고 품온 185℃에서 볶아 착유한 들기름에서는 검출되지 않았다.

본 출원의 구체적인 실시예에서, 상기 3-Methylbutanal은 품온 155℃에서 볶아 착유한 들기름에서 급격하게 함량이 증가하여 최대 함량을 나타냈으며, 들깨의 품온이 올라갈수록 함량이 완만히 감소하였다.

상기 GC-MS 피크 면적은 들기름을 구성하는 성분의 함량과 비례하는 값이다.
본 출원에서 GC-MS 피크 면적은 하기 본 출원의 구체적인 실시예의 [실시예 2]의 [2-1]에서 기재된 GC-MS 분석 기기 및 측정 조건하에서 측정된 수치로부터 산출된 면적 값일 수 있다.

본 출원의 일 양태는, 들깨의 품온이 145℃ 내지 175℃가 될 때까지 들깨를 볶는 단계를 포함하는, 들기름의 제조방법을 제공한다.

다만, 본 출원의 효과는 상기에서 언급한 효과로 제한되지 아니하며, 언급되지 않은 또 다른 효과들은 하기의 기재로부터 당업자에게 명확히 이해될 수 있을 것이다.
도 1은 각 품온 조건 별로 제조한 들기름이 포함된 조미김의 전반기호도, 조미김에서 느껴지는 들기름 고유 풍미, 고소함 강도, 씀/매캐함 강도에 대한 관능 평가 결과를 나타낸 것이다.
이하, 본 출원을 실시예에 의하여 상세히 설명한다. 단, 하기 실시예는 본 출원을 구체적으로 예시하는 것이며, 본 출원의 내용이 하기 실시예에 의해 한정되지 아니한다.
[실시예 1] 들깨의 품온 조건 별 들기름의 제조
경북 농산에서 구매한 중국(길림)산 들깨 7kg를 볶음기(제일기계)에 투입하고, 250℃로 볶음기 가열온도가 일정하게 유지되도록 설정하였다. 볶음기에 부착되어 있는 원료 품온 센서로 들깨의 품온을 측정하였고, 들깨를 12, 14, 16, 18, 21분 순차적으로 가열하여 들깨의 품온이 145℃(12분 가열), 155℃(14분 가열), 165℃(16분 가열), 175℃(18분 가열), 185℃(21분 가열)에 도달하도록 하였다.
그 후, 100℃로 설정된 배치식 프레스(Press) 방식의 착유기(풍진유압기계)에 각 품온 조건에서 볶은 들깨를 전량 투입하고, 650 kg/cm2의 착유 압력으로 30분 동안 착유하여 착유유를 수득하였다. 수득한 착유유를 1주일 동안 정치시키고 상등유 부분을 분리하여 수득한 들기름을 냉장 보관하였다.
[실시예 2] 들기름의 향미 성분 분석 및 향미 성분의 분류
[2-1] 들기름의 향미 성분 분석
고체상 미세추출법(Solid Phase Microextraction, SPME)을 통해 들기름의 향미를 나타내는 휘발성 및 반휘발성 화합물을 흡착하여 기체 크로마토그래피 질량분석법(GC-MS)으로 상기 실시예 1의 각 품온 조건에서 제조한 들기름의 향미를 분석하여 하기 표 1에 나타내었다.
기체 크로마토그래피 질량분석은 고체상미세추출법(Solid phase micro-extraction, SPME)을 사용하여 향미를 흡착시켜 GC/MS로 분석하였으며, 들기름 시료를 바이알(Vial)에 4.0g 넣고 밀봉하여 40℃에서 10분간 250rpm으로 흔들어 평형조건을 맞춘 후, 50/30㎛ DVB/CAR/PDMS SPME 파이버에 40℃에서 30분간 흡착시켰다. 흡착시킨 시료를 GC-MS injector에 투입하여 200℃에서 5분간 탈착시켰다. 분석 기기는 7890A GC (Agilent), 5975C MS (Agilent)를 사용하였고, 컬럼은 DB-WAX (60m length Х 0.25mm i.d. Х 0.25㎛)를 사용하였으며 컬럼 오븐 조건은 40℃에서 5분간 유지하고 이후 5℃/분 속도로 온도를 올려서 200℃ 도달 후 10분간 유지하였다. 유속은 1.4㎖/분으로 진행하였으며 MSD 조건은 Ionization voltage 70eV 이었으며, Mass scan range 35-350 m/z으로 설정하였다.

[실시예 3] 들깨의 품온 조건에 따른 풋풋한 향미 성분과 고소한 향미 성분의 함량 분석
상기 실시예 1의 각 품온 조건(145℃, 155℃, 165℃, 175℃, 185℃)에서 제조한 들기름에 포함된 향미 성분의 함량을 풋풋한 향미를 나타내는 성분 및 고소한 향미를 나타내는 성분들로 구분하여 나타내었다.

각 품온 조건 별 들기름에서 풋풋한 향미를 나타내는 것으로 분류된 성분의 함량을 GC-MS의 면적(Area)으로 분석하였다.

표 3에 나타난 바와 같이, 풋풋한 향미를 나타내는 향미 성분 전체는 들깨 품온이 올라감에 따라 증가하여 품온 165℃에서 최대치를 나타내었으며, 품온 175℃ 및 185℃에서는 감소하는 경향을 나타내었다.
개별적인 풋풋한 향미를 나타내는 향미 성분을 살펴보면, trans-2-Pentenal은 품온 165℃ 이상에서는 검출되지 않고, 3-tetrahydrothiophenone, Dimethyl Trisulfide, 2-Methylthiophene는 품온 175℃ 이상에서만 검출되었다.
또한, Butanal 성분은 품온 155℃에서 급격하게 함량이 증가하여 품온 165℃에서 최대 함량을 나타냈으며, 다시 품온 175℃에서 함량이 감소하고 품온 185℃에서는 검출되지 않아 품온 155℃ 내지 165℃의 범위 내에서 급등한 함량 변화를 나타내는 것을 확인하였다.
또한, 3-Methylbutanal 성분은 품온 155℃에서 급격하게 함량이 증가하여 최대 함량을 나타냈으며, 품온 165℃에서도 높은 함량을 나타내었다. 그러나 품온 175℃ 및 품온 185℃에서 함량이 감소하여 품온 155℃ 내지 165℃의 범위 내에서 급등한 함량 변화를 나타내는 것을 확인하였다.

표 4에 나타난 바와 같이, 고소한 향미를 나타내는 향미 성분 전체는 들깨 품온이 올라감에 따라 증가하였다. 특히, 품온 175℃에서 급격하게 증가하여 품온 185℃에서 최대치를 나타내었다.
개별적인 고소한 향미를 나타내는 향미 성분을 살펴보면, 대부분의 향미 성분은 배전온도가 높을수록 증가하는 경향을 보이나, 과일의 고소함의 특성이 있는 propanal 성분은 165℃ 이상에서는 검출되지 않았으며, 3-methylbutanal, 2-methylbutanal, 2-acetylfuran은 품온이 올라갈수록 증가하다가 감소하는 경향을 보였다.
구체적으로, 3-methylbutanal은 고소한 맛(nutty)과 풋풋한 맛(green)을 모두 가지고 있는 물질로, 품온 155℃에서 급격하게 함량이 증가하여 최대 함량을 나타냈으며, 품온 165℃에서도 높은 함량을 나타내었다. 그러나 품온 175℃ 및 품온 185℃에서 함량이 감소하여 품온 155℃ 내지 165℃의 범위 내에서 급등한 함량 변화를 나타내는 것을 확인하였다.
이와 같이 고소한 향미를 나타내는 향미 성분 전체는 품온이 올라갈수록 급격하게 증가하였으나, 고소한 향미와 동시에 과일 또는 풋풋한 향미를 나타내는 propanal, 3-methylbutanal, 2-methylbutanal, 2-acetylfuran 과 같은 향미 성분은 상대적으로 저온에서 높은 함량을 나타내는 것을 확인하였다.
[실시예 4] 들깨의 품온 조건에 따른 풋풋한 향미 성분과 고소한 향미 성분의 GC-MS 면적비 분석
상기 실시예 3에서 분석한 풋풋한 향미를 나타내는 전체 성분 및 고소한 향미를 나타내는 전체 성분의 GC-MS 면적비를 하기 표 5에 나타내었다.

그 결과, 표 5에 나타난 바와 같이, 고소한 향미 성분 대비 풋풋한 향미 성분의 GC-MS 면적 비율은 품온 155℃에서 100%로 1:1의 비율을 나타냈으며, 품온 온도가 올라갈수록 고소한 향미 성분 함량이 급격하게 증가하면서 고소한 향미 성분 대비 풋풋한 향미 성분의 GC-MS 면적의 비율은 감소하는 경향을 나타내었다.
따라서 품온 145℃ 내지 165℃의 범위에서 풋풋한 향미 성분과 고소한 향미 성분의 GC-MS 면적비가 1:1에 가장 가까운 것을 확인하였다.
[실시예 5] 들기름의 색도 측정
상기 실시예 1의 각 품온 조건 별로 볶아 착유한 들기름의 색도를 로비본드 비색법에 의해 1인치 셀을 가지고 R값을 측정하였다.

그 결과, 상기 표 6에 나타난 바와 같이, 품온이 올라갈수록 색도가 진하게 측정되며, 품온 175℃에서 색도가 급격하게 진해지는 것을 확인하였다. 따라서 품온이 올라갈수록 고소한 향미를 내는 성분의 급격한 함량 증가로 들기름의 색이 진해지는 것을 확인하였다.
[실시예 6] 들기름이 포함된 조미김의 관능 평가
[6-1] 들기름이 포함된 조미김의 제조
상기 실시예 1의 들기름으로 조미김을 제조하였다. 조미김 중 들기름의 함량은 10%로 동일하게 하였고, 마른김이 50%, 소금 5%, 베이스오일은 카놀라유로 30%, 참기름은 5%로 하였다.

[6-2] 조미김의 관능 평가 결과
관능 평가는 평가 요원 20명이 조미김을 직접 취식하여, 들기름이 포함된 조미김의 전반기호도, 조미김에서 느껴지는 들기름 고유 풍미, 고소함 강도, 씀/매캐함 강도에 대해 점수를 매기는 방식으로 진행하였다.

그 결과, 표 8 및 도 1에 나타난 바와 같이, 품온 175℃에서 볶아 착유한 들기름에서는 씀/매캐함 점수가 높게 나타나 탄 맛이 느껴지기 시작하지만 고소한 맛이 잘 어우러지고 들기름 풍미는 강하지는 않아 중간 정도의 전반기호도를 가지는 것으로 평가되었다.
품온 185℃에서 볶아 착유한 들기름으로 제조한 조미김은 씀/매캐함 점수가 매우 높게 나타나 탄 맛이 강하게 느껴지고, 들기름 고유 풍미는 낮으며 고소함은 강해 참기름과 유사한 특성을 나타내고, 들기름김의 특성이 약하여 전반적인 기호도가 낮게 평가되었다.
품온 145℃에서 볶아 착유한 들기름으로 제조한 조미김은 들깨 생취가 강하게 느껴진다는 기타 의견이 있었고, 들기름의 고유 특성은 잘 나타나지만 고소한 맛이 떨어지고 전체적인 향의 강도가 약해 느끼하다는 이유로 전반기호도가 낮게 평가되었다.
품온 155℃ 및 165℃에서 볶아 착유한 들기름으로 제조한 조미김은 들기름 고유 풍미도 잘 느껴지고 고소함이 적당하며, 씀/매캐함 점수도 낮아 전반기호도가 가장 높은 것으로 평가되었다.
따라서, 품온 155℃ 및 165℃에서 볶아 착유한 들기름이 들깨가 가지는 고유의 풍미와 들깨를 볶아 생기는 고소한 풍미가 적절히 조화되어 조미김에 적용하였을 때 가장 높은 기호도를 보임을 확인하였다.
상기에서는 본 출원의 대표적인 실시예를 예시적으로 설명하였으나, 본 출원의 범위는 상기와 같은 특정 실시예만 한정되지 아니하며, 해당 분야에서 통상의 지식을 가진 자라면 본 출원의 청구범위에 기재된 범주 내에서 적절하게 변경이 가능할 것이다.

- 풋풋한 향미 성분과 고소한 향미 성분의 GC-MS 피크 면적비가 1:0.5 내지 1:3인, 들기름.
- 청구항 1에 있어서,들기름 전체 향미 성분의 GC-MS 피크 면적을 100으로 보았을 때,풋풋한 향미 성분의 GC-MS 피크 면적은 10 내지 30, 고소한 향미 성분의 GC-MS 피크 면적은 15 내지 38인, 들기름.
- 청구항 1에 있어서,상기 풋풋한 향미 성분은 Isobutyraldehyde, 3-tetrahydrothiophenone, Dimethyl Trisulfide, Methyl ethyl ketone, 2-Methylfuran, Butanal, Methyl acetate, (E,E)-2,4-heptadienal, 3-Methylbutanal, (E)-2-heptenal, 2-Pentylfuran, Hexanal, trans-2-Pentenal, 2-Pentanol, 2-Methylthiophene, Dimethyl sulfide 및 Hydroxyacetone으로 이루어진 군으로부터 선택되는 어느 하나 이상의 화합물을 포함하는 것인, 들기름.
