Description
本発明は、水分含有率が高い、飲料、発酵乳、デザート、ソースなどの飲食品に添加した際、食感のよい飲食品添加用カプセル、当該カプセルの製造方法、及び当該カプセルを添加した飲食品に関する。
近年、日本では、食用のカプセルが様々なシーンで使用されている。タブレット式で直接摂食することに加え、食品に添加されることも多い。
ところで、カプセルを添加する食品としては、特許文献1,2,3,4に示すものが知られている。特許文献1には、高温での熱処理に供された食品の風味低下や損失を防ぐため、マイクロカプセルを含む食用製品について記載されている。また、特許文献2には耐熱性に優れる飲料用マイクロカプセルが記載されている。特許文献3には、油性香気成分を封入したマイクロカプセルを添加し、ミルク風味と油性香気成分の風味とをバランスよく調和した風味を付与できるデザート乳製品が記載されている。そして、特許文献4には、粒径の小さいマイクロカプセルでも口中において咀嚼破壊され、従来にない香味発現や食感の多様性をもたらし、さらに嗜好性や色彩的多様性などの趣味感に富む新規なゼリー菓子が記載されている。特許文献5には崩壊可能なシームレスカプセルの製造方法が記載されている。
ところで、カプセルを添加する食品としては、特許文献1,2,3,4に示すものが知られている。特許文献1には、高温での熱処理に供された食品の風味低下や損失を防ぐため、マイクロカプセルを含む食用製品について記載されている。また、特許文献2には耐熱性に優れる飲料用マイクロカプセルが記載されている。特許文献3には、油性香気成分を封入したマイクロカプセルを添加し、ミルク風味と油性香気成分の風味とをバランスよく調和した風味を付与できるデザート乳製品が記載されている。そして、特許文献4には、粒径の小さいマイクロカプセルでも口中において咀嚼破壊され、従来にない香味発現や食感の多様性をもたらし、さらに嗜好性や色彩的多様性などの趣味感に富む新規なゼリー菓子が記載されている。特許文献5には崩壊可能なシームレスカプセルの製造方法が記載されている。
しかしながら、特許文献1,2は、食品の高温殺菌処理にも耐えられる耐熱性の優れたカプセルの発明であり、特許文献3のカプセルは、本発明と同様咀嚼により香気を発生させることをも目的としているが、咀嚼により容易に破壊されるものであり、本発明のように添加される食品の本来の食感に影響を与えるものではなく、特許文献4のカプセルは、半固形状のゼリー(固まっておりほぼ固形)中でも確実に破壊されることを目的とするもので、このカプセルもゼリーの食感に影響を与えることを目的とするものではない。特許文献5のカプセルは、喫煙器具に使用することを想定しており、指で圧縮して崩壊すること想定しており、水分が多い食品に使用して咀嚼することは想定されていない。このようにいずれの文献にもカプセルの食感、破断特性や耐水性、耐酸性等の数値については触れられていない。
飲食品において、風味や食感を変化させる方法は、フルーツ、ジャム、シリアル、はちみつやチョコレートの添加、ソースの多層化や後添加等があるが、一度添加した具材やソースの除去は難しく、飲食品のそのものの風味や食感のみを味わうことはできず、風味や食感の変化は不可逆的である。
一方、食品の分野において可食性の皮膜を有するカプセルなどが利用されている。代表例として、人造イクラやシームレスカプセルなどを挙げることができる。カプセルを噛むことで風味の変化や食感を堪能できる。また、カプセルの咀嚼は消費者の意思で決められ、一口ごとに風味の変化を楽しむことができる。しかし、従来のカプセルは食品や飲料に加えた場合、水分によって膨張して、ぶよぶよとした食感になるため、噛んで食感を楽しむという当初の目的を達成することができなかった。また、含水後に好ましい食感という数値においても知見はなかった。
したがって、本願発明は、水分が多い食品や飲料に添加した際、食感のよい飲食品添加用カプセル、及び当該カプセルの製造方法、及び当該カプセルを添加した飲食品の提供を課題とする。
本発明者らは、上記課題を解決するために鋭意研究した結果、発酵乳などの水分が多い食品や飲料に浸漬した飲食品添加用カプセルの物性値がある値の範囲内であれば、ぷちっとした歯切れのよい食感の得ることを見出し、本発明を完成するに至った。
本発明のフレーバー入りカプセルの特徴は、以下の通りである。
〔1〕内容物とカプセル皮膜を有するカプセルであって、内容物に油性成分とフレーバーを含み、カプセル皮膜に造膜基質を含む、下記式(1)および下記式(2)を満たすことを特徴とする飲食品添加用カプセル。

以下、本発明を詳細に説明する。本明細書においては、発明の態様に分けて説明をしているが、それぞれの態様に記載の事項、語句の定義、及び実施形態は、他の態様においても適用可能である。
本発明のカプセルの粒径は、2.0~2.8mmφ、好ましくは2.3~2.8mmφであり、これより小さい粒径では、咀嚼時に破壊できない可能性が高くなり、食感に与える影響も少なくなり、これ以上大きいと口中での存在感が強くなり過ぎ、食感が劣ってくる。
また、本発明ではカプセルの食感を表す物性値を下記のように定義できることが明らかとなった。
食品物性を測定する際、一般的にプランジャーで食品に連続2回負荷を加えて、最大荷重や凝集性(1回目と2回目の変形量の比)などでその食品の物性を表現する。しかし、本発明のカプセルはプランジャーによる1回目の負荷においてカプセルが破裂する。2回目の負荷ではカプセルは破裂しており、皮膜の厚さに対する荷重しか算出されない。本発明者らは、1回目の負荷によって算出された荷重などのデータを、以下の考え方に基づいて解析すれば、本発明におけるカプセルのぷちっとした食感を適切に表す物性を定義できることを見出した。
本発明のカプセルは、いわゆる滴下法と呼ばれる製造方法で製造され、所望の条件となるように処理をすることにより製造される。滴下法は、ノズルから液滴を流体中に滴下して、表面張力で球状になる現象を利用して製造する方法である。
本発明のカプセルの皮膜を形成するための造膜基質としては、タンパク質と水溶性多価アルコールとの混合物、タンパク質と水溶性多価アルコールと多糖類との混合物、もしくは多糖類と水溶性多価アルコールとの混合物等が挙げられる。上記タンパク質としては、例えばゼラチン、コラーゲン等があげられる。水溶性多価アルコールとしては、ソルビトール、マンニトール、グリセリン、プロピレングリコール、ポリエチレングリコール、グルコース、フルクトース、ガラクトース、アラビノース、マンノース、ラムノース、マルトース、ラフィノース、スクロース、エリスリトール、マルチトール、トレハロース、ラクトース、キシロース等を挙げることができる。多糖類としては、寒天、ゲランガム、キサンタンガム、ローカストビーンガム、ペクチン、サイリウムシードガム、グアーガム、ファーセレラン、アラビノガラクタン、アラビノキシラン、アルギン酸(塩)、カラギナン、アラビアガム、(変性)デキストリン、(変性)デンプン、プルラン、カルボキシメチルセルロース(塩)等があげられる。アルギン酸(塩)、ゲランガム、ペクチン、もしくはカラギナンを使用する場合は、適宜アルカリ金属塩、アルカリ土類金属塩、アンモニウム塩などを添加してもよい。
皮膜の耐酸性を付与するために、アルギン酸(塩)、カルボキシメチルセルロース(塩)、低メトキシペクチン、および高メトキシペクチンからなる群から選択される少なくとも1種を添加することが好ましい。

本発明のカプセルでは、水との接触によっても所望の物性とするために、当該カプセルの皮膜の架橋処理および当該カプセルの被覆処理のうちの少なくとも一方の表面処理を行うことが好ましい。上記皮膜の架橋処理は、タンパク質を含む皮膜の処理に好適である。例えば、従来から知られている架橋剤を用いた化学反応による架橋、あるいは酵素反応による架橋を採用することができる。
化学反応による架橋に用いられる架橋剤としては、アルデヒド、ミョウバンなどが挙げられる。アルデヒドは、アルギニン、リジン、ヒスチジンなどの塩基性アミノ酸において、α-アミノ基以外の塩基性部位と反応してシッフ塩基あるいはエナミンを生じることにより、架橋を行う性能を有する。ミョウバンは、グルタミン酸、アスパラギン酸などの酸性アミノ酸において、α-カルボキシル基以外のカルボキシル基とイオン結合を形成することにより、架橋を行う性質を有する。本発明に用いられ得る架橋剤としては、次の化合物が挙げられる:フォルムアルデヒド、アセトアルデヒド、イソブタナール、エチルバニリン、シトロネラール、シンナムアルデヒド、デシルアルデヒド、バニリルアルデヒド、バレルアルデヒド、ヒドロキシシトロネラール、ブチルアルデヒド、プロピオンアルデヒド、l-ペリラアルデヒド、ベンズアルデヒド、trans-2-ペンテナール、2-メチルブチルアルデヒド、trans-2-メチル-2-ブテナール、3-メチル-2-ブテナール、カリミョウバン等。これらの架橋剤により皮膜の架橋処理を行う場合は、例えば上記方法により湿カプセルを調製した後、充分水洗し、架橋剤を含む水溶液に加え、皮膜の架橋を行う。
架橋剤の使用量、作用させる時間は、架橋剤によっても異なる。具体的には、0.1~10%、好ましくは0.5~2%の架橋剤を含む水溶液に得られたカプセルを加え、10~300秒間接触させる。通常、撹拌することにより効果的に接触が行われる。架橋剤を含む水溶液の質量は、カプセル質量の0.1~100倍が好適である。皮膜を架橋させた後、充分水洗し、架橋剤を含む水溶液を除去することによりカプセルが得られる。適宜、乾燥により皮膜中に含まれる水分を除去してもよい。このようにして化学反応による架橋処理が行われる。
酵素反応による架橋に用いられる酵素としては、トランスグルタミナーゼなどが挙げられる。トランスグルタミナーゼは、遊離アミノ基と遊離カルボキシル基とによりペプチド結合を形成させることにより架橋を達成させる機能を有する。トランスグルタミナーゼを用いて架橋を行う場合には、0.5~10%、好ましくは0.5~2%の当該酵素を含む水溶液に、上記方法により得られた未架橋のカプセルを加え、1~300分間接触させる。
通常、撹拌することにより効果的に接触が行われる。架橋剤である酵素を含む水溶液の質量は、カプセル質量の0.1~100倍が好適である。カプセルを水洗し、架橋されたカプセルが得られる。適宜、乾燥により皮膜中に含まれる水分を除去してもよい。
上記の各処理は、架橋剤のpHおよび温度を調整することにより、架橋の度合いを調整することも可能であり、所望のテクスチャーを与える事が可能である。
本発明のカプセルは内容物と皮膜の2層になっており、カプセルの物性は応力の極大値が2カ所出ることが特徴となっている(図1参照)。ここで、「第1極大値」とは、食品の硬さを意味し、1回目にプランジャーで食品に負荷を加えたときにでる1つ目の応力(N)で表される。「第2極大値」とは、1回目にプランジャーで食品に負荷を加えたときに出る2つ目の応力(N)であらわされる。第1極小値は第1極大値と第2極大値の間の応力(N)であり、カプセルの1段階目の破裂により生じるものと考えられる。なお、この測定における応力(N)は、80%荷重において、テクスチャーアナライザー(型式:TX-XT Plus、英弘精機株式会社製)で測定した値である。80%荷重とはプランジャーが荷重を感知した点からサンプルステージまでの距離を100%と表す時、20%になるまでプランジャーを押し込んだ状態である。
本発明のカプセルは内容物と皮膜の2層になっており、カプセルの物性は応力の極大値が2カ所出ることが特徴となっている(図1参照)。ここで、「第1極大値」とは、食品の硬さを意味し、1回目にプランジャーで食品に負荷を加えたときにでる1つ目の応力(N)で表される。「第2極大値」とは、1回目にプランジャーで食品に負荷を加えたときに出る2つ目の応力(N)であらわされる。第1極小値は第1極大値と第2極大値の間の応力(N)であり、カプセルの1段階目の破裂により生じるものと考えられる。なお、この測定における応力(N)は、80%荷重において、テクスチャーアナライザー(型式:TX-XT Plus、英弘精機株式会社製)で測定した値である。80%荷重とはプランジャーが荷重を感知した点からサンプルステージまでの距離を100%と表す時、20%になるまでプランジャーを押し込んだ状態である。
本発明のカプセルの内容物として含まれるものは、添加される飲食品に合わせ適宜選択可能であるが、例えば、ハニー香料やミント香料、レモンオイル、オレンジオイル等が好適に使用できる。
本発明のカプセルが添加される飲食品としては、飲料や発酵乳、デザート、ソースなどが挙げられ、半固形の食品であっても、カプセルを添加した時の物性が、本発明の数値範囲内であれば使用できる。本発明に関わる「飲料や発酵乳などの飲食品」は、好ましくは水分含有率が60%以上である飲食品であり、さらに好ましくはpH7以下である飲食品である。
本発明者らによる官能試験の結果から、咀嚼時に「ぷちっ」とした食感を得るためには、カプセルの下記式(1)および下記式(2)を満たすことが重要であることを突き止めた。

ここで、Yは、80%荷重においてカプセルにプレスをかけてカプセルを破壊したときの荷重変化を、縦軸を荷重(N)、横軸を時間(秒)としてプロットして描かれる曲線から求められる、第1極大値から第1極小値に到達するまでの積算面積値(荷重(N)×時間(秒))である。
さらに、カプセルの急激な崩壊を表す第1極大値から第1極小値までの傾きはカプセルの内容物が勢いよく噴出することでぷちっとしたカプセルの食感を表現できる点から、-30N/秒以下、好ましくは-40N/秒以下であるであることが望ましい。また、カプセルの崩壊によって生じる第1極小値はカプセルの内容物の噴出完了を表現できる点から、0.9N以下であることが望ましく、カプセルの皮膜そのものの硬度を表す第2極大値は内容物が抜けきったカプセルであることを表しており、2.5N以下、好ましくは2.3N以下であることが望ましい。
以下、実施例を挙げて本発明をさらに詳細に説明するが、本発明はこれにより限定されるものではない。特に説明がない限り、本明細書中の「%」は重量%を示し、本明細書中の「部」は重量部を示す。
[カプセルの製造例]
本発明のフレーバーカプセルを以下のように製造し、製造されたフレーバーカプセルを使用して各種実験を行った。
ゼラチン75部とグリセリン20部、低メトキシペクチン5部を、蒸留水400部に混合して、60℃で溶解し、静置脱泡して、カプセル皮膜層液を作製した。
前記カプセル皮膜層液と、カプセル内容物液としてレモンフレーバー36部と、l-メントール12部、中鎖脂肪酸トリグリセリド250.5部、油溶性着色剤1.5部とを混合したものを用いて、カプセル製造装置に投入し、同心2重ノズルを用いて、カプセル内容物液の温度を20℃、カプセル皮膜層液の温度を60℃とし、流動する中鎖脂肪酸トリグリセリド(10℃)中に吐出し、カプセルを製造した。次いで、当該カプセルを、脱油し反応液としての同重量の0.3%トランスグルタミナーゼ水溶液に加え2時間撹拌した。その後、当該水溶液を脱水し、乾燥(25℃、湿度50%RH以下)処理して、粒径2.3mmのフレーバーカプセルを得た。
本発明のフレーバーカプセルを以下のように製造し、製造されたフレーバーカプセルを使用して各種実験を行った。
ゼラチン75部とグリセリン20部、低メトキシペクチン5部を、蒸留水400部に混合して、60℃で溶解し、静置脱泡して、カプセル皮膜層液を作製した。
前記カプセル皮膜層液と、カプセル内容物液としてレモンフレーバー36部と、l-メントール12部、中鎖脂肪酸トリグリセリド250.5部、油溶性着色剤1.5部とを混合したものを用いて、カプセル製造装置に投入し、同心2重ノズルを用いて、カプセル内容物液の温度を20℃、カプセル皮膜層液の温度を60℃とし、流動する中鎖脂肪酸トリグリセリド(10℃)中に吐出し、カプセルを製造した。次いで、当該カプセルを、脱油し反応液としての同重量の0.3%トランスグルタミナーゼ水溶液に加え2時間撹拌した。その後、当該水溶液を脱水し、乾燥(25℃、湿度50%RH以下)処理して、粒径2.3mmのフレーバーカプセルを得た。
製造例2-5
製造例1の条件を表1に記載の構成に変更したこと以外は製造例1と同様にフレーバーカプセルを調製した。

[カプセルの物性測定]
上記「カプセルの製造例」で製造されたフレーバーカプセルを、テクスチャーアナライザー(型式:TX-XT Plus、英弘精機株式会社製)を用いて、以下に示すパラメーターで測定した。
<テクスチャーアナライザーのパラメーター>
貫入速度 0.5mm/sec
接触確認(トリガーフォース) 0.02N
歪み率 80%荷重
サイクル 2回
上記「カプセルの製造例」で製造されたフレーバーカプセルを、テクスチャーアナライザー(型式:TX-XT Plus、英弘精機株式会社製)を用いて、以下に示すパラメーターで測定した。
<テクスチャーアナライザーのパラメーター>
貫入速度 0.5mm/sec
接触確認(トリガーフォース) 0.02N
歪み率 80%荷重
サイクル 2回
(比較例1)
脱脂粉乳を11%、乳タンパク質を0.5%、砂糖を7%、クリームを3.7%となるように水で溶解して得た脂肪分1.9%の水溶液を、80℃まで加熱した後、均質機にて18MPaの均質圧力で均質化を行い、プレート型殺菌機にて93℃6分間殺菌後45℃に冷却した。その後乳酸菌スターター(ラクトバチルス・ブルガリクス及びストレプトコッカス・サーモフィラスの混合スターター)を添加・混合した。その混合物を43℃のステンレス容器で発酵させ、pHが4.6となった時点で、シェアリングバルブでカードを破砕してプレート式冷却装置で10℃に冷却し、発酵を停止させて、破砕した発酵乳(ヨーグルト)を得た。
破砕したヨーグルトに製造例1記載の2.3mm径のフレーバーカプセルを5日間浸漬し、フレーバーカプセル入り発酵乳を得た。

比較例1と同様に破砕した発酵乳(ヨーグルト)を得た。破砕したヨーグルトに製造例2に記載のフレーバーカプセルを5日間浸漬し、フレーバーカプセル入り発酵乳を得た。

比較例品1~2と実施例品1~3について、ヨーグルト浸漬5日目に官能評価を実施し、ぷちっとした食感を有しているかを判断した。
評価は、訓練された社内パネラー5名で行い、食感の評価基準は以下の通りである。

ぷちっとした食感を有していることを「ほどよく感じた」か「わずかに感じた、又は、感じなかった」か、を判断した。
<5名の評価のまとめ方>
◎ ぷちっとした食感をほどよく感じたパネラーが4~5名
〇 ぷちっとした食感をほどよく感じたパネラーが2~3名

比較例品1~2及び実施例品1~3の評価結果を下記表2に示す。

実施例品1~3では、浸漬5日目の時点において、比較例品1~2と比較して良好な食感を有していた。
[カプセルの粒径と食感の評価]
比較例1と同様に破砕した発酵乳(ヨーグルト)を得た。その破砕したヨーグルトに、製造例5記載の構成にて、粒径が1.5,2.0,2.3,2,5,2.8,5.0mmのフレーバーカプセルを作製し、それらを、夫々ヨーグルトに5日間浸漬し、フレーバーカプセル入りヨーグルトを得た。
比較例1と同様に破砕した発酵乳(ヨーグルト)を得た。その破砕したヨーグルトに、製造例5記載の構成にて、粒径が1.5,2.0,2.3,2,5,2.8,5.0mmのフレーバーカプセルを作製し、それらを、夫々ヨーグルトに5日間浸漬し、フレーバーカプセル入りヨーグルトを得た。
得られたヨーグルトについて、ぷちっとした食感を有しているかの官能評価を行った。結果は表3に示す。評価は、訓練された社内パネラー5名で行い、食感の評価基準は以下の通りである。
<評価基準>
ぷちっとした食感を有していることを「ほどよく感じた」か「わずかに感じた、又は、感じなかった」か、を判断した。
<5名の評価のまとめ方>

口腔内でぷちっとした食感を感じられるサイズとして、粒径2.0~2.8mmが好ましいことがわかった。
以上より、本発明のフレーバーカプセル入り発酵乳において、フレーバーカプセルの第1極大値までの積算面積値が1.5N・秒から2.0N・秒、好ましくは1.6N・秒から1.9N・秒、第1極大値から第1極小値までの積算面積値が0.09N・秒から0.16N・秒、好ましくは0.11N・秒から0.16N・秒、第1極大値から第1極小値までの傾きを-30N/秒以下、好ましくは-40N/秒以下、第1極小値の硬度を0.9N以下、第2極大値を2.5N以下、好ましくは2.3N以下、粒径2.0~2.8mmにすることで咀嚼時の食感がぷちぷちしたフレーバーカプセル入りヨーグルトを得ることができた。
Claims (12)
- 内容物とカプセル皮膜を有するカプセルであって、内容物に油性成分とフレーバーを含み、カプセル皮膜に造膜基質を含む、下記式(1)および下記式(2)を満たすことを特徴とする飲食品添加用カプセル。

Xは、80%荷重においてカプセルにプレスをかけてカプセルを破壊したときの第1極大値に到達するまでの積算面積値(荷重(N)×時間(秒))。
0.09<Y<0.16 式(2)
Yは、80%荷重においてカプセルにプレスをかけてカプセルを破壊したときの第1極大値から第1極小値に到達するまでの積算面積値(荷重(N)×時間(秒))。 - 前記カプセルの粒径が、2.0~2.8mmφである請求項1に記載のカプセル。
- 第1極大値から第1極小値までの傾きが-30N/秒以下である請求項1に記載のカプセル。
- 第1極小値が0.9N以下である請求項1に記載のカプセル。
- 第2極大値が2.5N以下である請求項1に記載のカプセル。
- 第1極大値から第1極小値までの傾きが-30N/秒以下である請求項2に記載のカプセル。
- 第1極小値が0.9N以下である請求項2に記載のカプセル。
- 第2極大値が2.5N以下である請求項2に記載のカプセル。
- 内側ノズルと外側ノズルと、が同心円状に存在する二重ノズルから同時に吐出した吐出液を冷却液中に滴下する滴下法によるカプセルの製造方法であって、内側ノズルからカプセル内容物液を吐出し、外側ノズルから皮膜層液を吐出し、前記カプセル内容物液が、油性成分とフレーバーを含み、前記皮膜層液が、前記造膜基質を含み、得られたカプセルを架橋剤液に浸漬する工程を含むことを特徴とする請求項1~8のいずれか1項に記載のカプセルの製造方法。
- 請求項1~8のいずれか1項に記載のカプセルを添加した飲食品。
- 水分含有率が60%以上である請求項10に記載の飲食品。
- pHが7以下である請求項10に記載の飲食品。
