Abstract
Un procédé de génération d'un mélange de base non laitier comprend : le mélange d'une quantité de sel et d'une quantité de calcium dans un volume d'eau pour générer un premier mélange; le mélange d'une quantité d'amidons, d'une quantité de protéines extraites de plantes, et d'une quantité d'agents stabilisants dans le premier mélange pour former un second mélange, la quantité de protéines extraites de plantes définissant un rapport de protéines correspondant à une fonctionnalité cible et un profil d'arôme cible; pendant une période de mélange, réguler la température du second mélange dans une première plage de température et mélanger un volume d'huile dans le second mélange pour former une émulsion; pasteuriser l'émulsion à des températures dans une deuxième plage de température et pendant une durée cible; et homogénéiser l'émulsion à des températures dans une troisième plage de température pour former le mélange de base non laitier configuré pour former un produit non laitier consommable présentant la fonctionnalité cible et le profil d'arôme cible.
