Abstract
本実施の形態に係るビタミンD生成方法では、280nm以上315nm以下の波長帯域の光を、食品に対して積算光量45mJ/cm2以上照射する。ここで、食品は、乳製品、鶏卵、貝類、甲殻類および頭足類から選択される食品である。このビタミンD生成方法によれば、多種類の食品についてビタミンDの含有量を増加させることができる。
Description
本発明は、ビタミンD生成方法およびビタミンD生成装置に関する。
波長280nm~330nmの光を強く放射する蛍光ランプ2と、この蛍光ランプの被照射物であるキノコを載置する手段とよりなるキノコのビタミン生成用光照射装置が提案されている(例えば特許文献1参照)。このビタミン生成用光照射装置は、キノコの中に含まれるエルゴステロールに特定の紫外線を照射させるとビタミンD2が生成されることを利用したものである。
ところで、人間の正常な骨または歯の発育促進等を目的として、食品からビタミンDを摂取することが推奨されている。このため、キノコのみならず他の食品についてもビタミンDの含有量を増加させてビタミンDの食品から効率良く摂取することが要請されつつある。
本発明は、上記事由に鑑みてなされたものであり、多種類の食品についてビタミンDの含有量を増加させることができるビタミンD生成方法およびビタミンD生成装置を提供することを目的とする。

上記目的を達成するために、本発明に係るビタミンD生成方法は、
280nm以上315nm以下の波長帯域の紫外光を、積算光量が一定になるように食品に照射する。

本発明によれば、280nm以上315nm以下の波長帯域の光を、積算光量が一定になるように食品に照射する。これにより、乳製品、卵製品、貝類、甲殻類、頭足類等の多種類の食品について、ビタミンDの含有量を増加させることができる。
以下、本開示の実施の形態に係るビタミンD生成方法について図面を参照しながら説明する。本実施の形態に係るビタミンD生成方法では、280nm以上315nm以下の波長帯域の紫外光を、積算光量が一定となるように食品に照射する。例えば、280nm以上315nm以下の波長帯域の光を、食品に対して積算光量45mJ/cm2以上で一定となるように照射する。
例えば図1Aおよび図1Bに示すように、本実施の形態に係るビタミンD生成装置1は、矩形箱状の筐体11と、筐体11の内側における底壁11aに近接した状態で筐体11に固定された複数の光源12と、を備える。筐体11は、例えば金属から形成されており、周壁における底壁11aと対向する部分に食品SPを挿通するための開口部11bが設けられている。
複数の光源12は、それぞれ、280nm以上315nm以下の波長帯域のいわゆるUV−Bの紫外光を放射する。複数の光源12は、それぞれ、例えば複数のUV−Bの紫外光を放射するLED(Light Emitting Diode)が一列に実装された長尺の回路基板と、内側に回路基板が配置されたカバーと、を有する直管型の光線である。
このビタミンD生成装置1は、図1Bに示すように、例えばステージSTに食品SPが載置された状態で、開口部11bから食品SP全体を覆うようにステージST上に載置された状態で使用される。食品SPとしては、乳製品、鶏卵、貝類、甲殻類および頭足類から選択される食品が採用される。ここで、複数の食品SPに対して光源12から放射される紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにする。食品SPに照射される紫外光の積算光量は、例えば45mJ/cm2以上に設定される。
次に、本実施の形態に係るビタミンD生成装置1を用いて、複数種類の食品試料について前述のいわゆるUV−Bの紫外光を照射することによるビタミンDの生成量について評価をした結果について説明する。実験は、各食品試料に対していわゆるUV−Bの紫外光を強度1900μWで10min間照射した前後での食品試料中のビタミンDの含有量を比較し紫外光照射後のビタミンDの含有量の紫外光照射前のビタミンDの含有量に対する倍率を評価した。食品試料としては、文部科学省が提供する食品成分データベースにおいてコレステロールまたはビタミンDの一般含有量が比較的多く、UV−Bの紫外光を照射することによりビタミンDが生成される可能性が高いと思われ且つ現時点において事業化が見受けられていない食品から作製した。具体的には、食品試料として、牛乳、鶏卵、ナチュラルチーズ、プロセスチーズ、寒天プリン、蒸しプリン、甲いかげそ、牛もも肉、豚ばら肉、鶏肝、生牡蠣、むきバナエイエビ、鶏手羽先について鹸化した後、ビタミンDを含む成分を抽出し、その後、精製処理を施したものを採用した。
また、ビタミンDの含有量は、高速液体ガスクロマトグラフィ(HPLC)法により評価した。分離モードとしては、逆相モードを採用した。ここで、カラムとしては、純度99.99%以上の高純度シリカゲルが充填されたシリカ 5SIL 4E(Shodex社製)を使用し、カラム温度を27℃に設定した。また、溶離液としては、濃度50%のアセトニトリル溶離液を使用した。そして、カラム内の流速は、1.6mL/minに設定し、検出器は、示差屈折率検出器RIシリーズ(Shodex社製)を使用した。
前述の各食品試料についてビタミンDの含有量を評価した結果を以下の表1に示す。表1におけるビタミンDの含有量は、相対値であり、検出器により得られるクロマトグラムにおけるビタミンDに対応する保持時間に現われるピーク部分の面積に相当する。また、表1における倍率は、各食品試料に対する紫外光照射後のビタミンDの含有量の紫外光照射前のビタミンDの含有量に対する倍率を示す。
表1に示す結果から、牛乳、鶏卵にUV−Bの紫外光を照射することによりビタミンDの含有量が3倍以上に増加することが判った。特に、牛乳では、ビタミンDが8倍以上に増加することが判った。また、乳製品であるナチュラルチーズ、プロセスチーズについてもUV−Bの紫外光を照射することによりビタミンDの含有量が4倍以上に増加することが判った。但し、鶏卵を含む加工食品である寒天プリン、蒸しプリンでは、ビタミンDの増加が確認されなかった。また、甲いかげそ、生牡蠣、むきバナエイエビのような貝類、甲殻類、頭足類にUV−Bの紫外光を照射することによりビタミンDの含有量が3倍以上に増加することが判った。特に、甲いかげそ、生牡蠣についてはビタミンDの含有量が70倍以上に増加することが判った。また、牛もも肉、豚ばら肉、鶏肝では、ビタミンDの増加が確認されなかった。一方、表皮を含む鶏手羽先にUV−Bの紫外線を照射することによりビタミンDが2.4倍に増加した。このことから、肉類においては、表皮を構成する組織がUV−Bの紫外光を照射することによるビタミンDの生成に寄与していることが判った。これらの結果から、乳製品、鶏卵および貝類、甲殻類、頭足類について、UV−Bの紫外線を照射することによるビタミンDの含有量を増加させることができることが判った。
次に、乳製品、鶏卵について、UV−Bの紫外光の照射時間と食品試料中のビタミンDの含有量との関係を評価した結果について説明する。ここでは、鶏卵、牛乳およびプロセスチーズの食品試料それぞれについて、UV−Bの紫外光を30sec、1min、2min、4min、8min、16min照射した後のビタミンDの含有量を評価した。ここで、各食品試料の質量は100gとし、ビタミンDの含有量は、ビタミンDを予め設定された量だけ含む標準試料のクロマトグラムのビタミンDに対応するピーク部分の面積と各食品試料のクロマトグラムのビタミンDに対応するピーク部分の面積との比率と、標準試料のビタミンDの含有量との積から算出した。
図2A乃至図2CにUV−Bの紫外光の照射時間と食品試料中のビタミンDの含有量との関係を評価した結果を示す。ここで、図2Aは鶏卵の食品試料、図2Bは牛乳の食品試料、図2Cはプロセスチーズの食品試料についての結果を示す。図2Aに示すように、鶏卵の食品試料の場合、紫外光の照射時間が4min以上となると食品試料中のビタミンDの含有量が飽和する傾向が見られた。このことから、鶏卵の食品試料に紫外光を4min以上照射すると食品試料が含有するビタミンD前駆体の大部分がビタミンDに置き換わることが判った。また、図2Bおよび図2Cに示すように、牛乳の食品試料およびプロセスチーズの食品試料の場合も、紫外光の照射時間が4min以上になると食品試料中のビタミンDの含有量が飽和する傾向が見られた。このことから、牛乳およびプロセスチーズの食品試料も紫外光を4min以上照射すると食品試料が含有するビタミンD前駆体の大部分がビタミンDに置き換わることが判った。以上の結果から、少なくとも鶏卵および乳製品については、紫外光を4min以上、即ち、食品試料に照射される紫外光の積算光量が45mJ/cm2以上とすることにより、食品試料中のビタミンD前駆体の大部分をビタミンDに置き換えることができることが判った。
以上説明したように、本実施の形態に係るビタミンD生成方法によれば、UV−Bの紫外光、即ち、280nm以上315nm以下の波長帯域の紫外光を、その積算光量が一定となるように食品SPに照射する。例えば、食品に対して積算光量45mJ/cm2以上で一定となるように照射する。これにより、乳製品、卵製品、貝類、甲殻類、頭足類等の多種類の食品について、ビタミンDの含有量を増加させることができる。また、複数の食品SPに対して紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにすることで、食品SP中に生成されるビタミンDの生成量のばらつきを低減することができる。
以上、本発明の実施の形態について説明したが、本発明は前述の実施の形態によって限定されるものではない。例えば、筐体11における側壁に開口部が設けられており、食品を筐体11の側方から筐体11の内側へ挿入できるものであってもよい。また、光源12の数は特に限定されるものではなく、6つ以下であってもよいし8つ以上であってもよい。更に、光源12は直管型に限定されるものではなくいわゆる電球型の光源であってもよい。
実施の形態では、処理対象の食品SPが載置されたステージSTにビタミンD生成装置1を手作業で被せて使用する例について説明したが、例えば図3Aに示すビタミンD生成装置2のように、筐体211が固定されており、筐体11内へベルトコンベヤ213により搬送されるものであってもよい。なお、図3Aにおいて実施の形態と同様の構成については図1Aおよび図1Bと同一の符号を付している。具体的には、ビタミンD生成装置2は、矩形箱状であり天壁211a近傍に光源12が配置されるとともに互いに対向する2つの側壁211cそれぞれに食品SPを筐体211の内側へ導入するための開口部211bが穿設された筐体211と、光源12から放射される紫外光の強度を制御する調光装置24と、備える。このビタミンD生成装置2は、筐体211内における光源12から放射される紫外光が照射される領域で食品SPに紫外光が当たる状態で食品SPを搬送する搬送手段であるベルトコンベヤ213とともに使用される。
ベルトコンベヤ213は、筐体211の外側における筐体211の2つの開口部211bそれぞれに対向配置された2つのローラ213bと、2つのローラ213bの間に懸架された状態で2つの開口部211bそれぞれに挿通されたベルト213aと、を有し、ローラ213bを矢印AR21に示すように回動させることによりベルト213aを矢印AR22に示す方向へ移動させることで食品SPを筐体211内へ搬送する。そして、調光装置24は、ベルトコンベヤ213のベルト213aの搬送速度に応じて光源12から放射される紫外光の強度を変化させる。なお、食品SPを搬送する搬送手段としては、ベルトコンベヤ213に限定されるものではなく、食品SPが載置されたトレイを搬送する自走式の搬送車両等の他の搬送手段であってもよい。
つまり、このビタミンD生成装置2では、食品SPを筐体211内における光源12から放射される光が照射される領域で移動させつつ食品SPに光源12から放射される光を照射する。ここで、ビタミンD生成装置2は、食品SPに照射される光の積算光量が一定となるように、食品SPを移動させる際の移動速度に応じて光の強度を変化させる。具体的には、ベルトコンベヤ213が、食品SPが載置されたベルト213aの移動速度を変化させると、光源12は、その移動速度の変化に応じて放射する光の強度を変化させる。例えば、ベルトコンベヤ213が、ベルト213aの移動速度を上昇させると、それに応じて、光源12が、放射する光の強度を増加させる。これにより、食品SPが光源12から放射される光が照射される領域を通過する際、食品SPに照射される光の積算光量を一定に維持している。
ここで、ベルト213aの移動速度をv2とし、筐体211の内側におけるベルト213aの延長方向における長さをL2とし、光源12から照射される紫外光の照射強度をIuvとした場合、食品SP内により多くのビタミンDを生成させる観点から、下記式(1)の関係式が成立するように、移動速度v2、照射強度Iuvが設定されることが好ましい。

本構成によれば、複数の食品SPをベルトコンベヤ213等の搬送手段により搬送しながら複数の食品SPそれぞれに紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにすることができる。従って、食品SP中に生成されるビタミンDの生成量のばらつきを低減することができる。
或いは、例えば図3Bに示すビタミンD生成装置3のように、内側に食品SPが配置される領域S3が形成された筐体311と、領域S3内に配置された光源12と、領域S3の一部を覆うように筐体311に取り付けられた扉315と、光源12を点灯させるための点灯装置316と、点灯装置316を操作するための操作部317と、を備えるものであってもよい。なお、図3Bにおいて実施の形態と同様の構成については図1Aおよび図1Bと同一の符号を付している。このビタミンD生成装置3は、利用者が扉315を開けて領域S3内に食品SPを配置し、その後、扉315を閉じてから操作部316を操作して食品SPに光源12から放射される紫外光を照射する。
また、ビタミンD生成方法として、例えば紫外光を放射する光源を電子レンジ等の調理器具の調理スペースに配置し、調理器具による食品の調理時に光源から放射される紫外光を食品に照射するようにしてもよい。
以上、本発明の実施の形態および変形例について説明したが、本発明はこれらに限定されるものではない。本発明は、実施の形態および変形例が適宜組み合わされたもの、それに適宜変更が加えられたものを含む。

例えば図1Aおよび図1Bに示すように、本実施の形態に係るビタミンD生成装置1は、矩形箱状の筐体11と、筐体11の内側における底壁11aに近接した状態で筐体11に固定された複数の光源12と、を備える。筐体11は、例えば金属から形成されており、周壁における底壁11aと対向する部分に食品SPを挿通するための開口部11bが設けられている。
複数の光源12は、それぞれ、280nm以上315nm以下の波長帯域のいわゆるUV−Bの紫外光を放射する。複数の光源12は、それぞれ、例えば複数のUV−Bの紫外光を放射するLED(Light Emitting Diode)が一列に実装された長尺の回路基板と、内側に回路基板が配置されたカバーと、を有する直管型の光線である。
このビタミンD生成装置1は、図1Bに示すように、例えばステージSTに食品SPが載置された状態で、開口部11bから食品SP全体を覆うようにステージST上に載置された状態で使用される。食品SPとしては、乳製品、鶏卵、貝類、甲殻類および頭足類から選択される食品が採用される。ここで、複数の食品SPに対して光源12から放射される紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにする。食品SPに照射される紫外光の積算光量は、例えば45mJ/cm2以上に設定される。
次に、本実施の形態に係るビタミンD生成装置1を用いて、複数種類の食品試料について前述のいわゆるUV−Bの紫外光を照射することによるビタミンDの生成量について評価をした結果について説明する。実験は、各食品試料に対していわゆるUV−Bの紫外光を強度1900μWで10min間照射した前後での食品試料中のビタミンDの含有量を比較し紫外光照射後のビタミンDの含有量の紫外光照射前のビタミンDの含有量に対する倍率を評価した。食品試料としては、文部科学省が提供する食品成分データベースにおいてコレステロールまたはビタミンDの一般含有量が比較的多く、UV−Bの紫外光を照射することによりビタミンDが生成される可能性が高いと思われ且つ現時点において事業化が見受けられていない食品から作製した。具体的には、食品試料として、牛乳、鶏卵、ナチュラルチーズ、プロセスチーズ、寒天プリン、蒸しプリン、甲いかげそ、牛もも肉、豚ばら肉、鶏肝、生牡蠣、むきバナエイエビ、鶏手羽先について鹸化した後、ビタミンDを含む成分を抽出し、その後、精製処理を施したものを採用した。
また、ビタミンDの含有量は、高速液体ガスクロマトグラフィ(HPLC)法により評価した。分離モードとしては、逆相モードを採用した。ここで、カラムとしては、純度99.99%以上の高純度シリカゲルが充填されたシリカ 5SIL 4E(Shodex社製)を使用し、カラム温度を27℃に設定した。また、溶離液としては、濃度50%のアセトニトリル溶離液を使用した。そして、カラム内の流速は、1.6mL/minに設定し、検出器は、示差屈折率検出器RIシリーズ(Shodex社製)を使用した。
前述の各食品試料についてビタミンDの含有量を評価した結果を以下の表1に示す。表1におけるビタミンDの含有量は、相対値であり、検出器により得られるクロマトグラムにおけるビタミンDに対応する保持時間に現われるピーク部分の面積に相当する。また、表1における倍率は、各食品試料に対する紫外光照射後のビタミンDの含有量の紫外光照射前のビタミンDの含有量に対する倍率を示す。
次に、乳製品、鶏卵について、UV−Bの紫外光の照射時間と食品試料中のビタミンDの含有量との関係を評価した結果について説明する。ここでは、鶏卵、牛乳およびプロセスチーズの食品試料それぞれについて、UV−Bの紫外光を30sec、1min、2min、4min、8min、16min照射した後のビタミンDの含有量を評価した。ここで、各食品試料の質量は100gとし、ビタミンDの含有量は、ビタミンDを予め設定された量だけ含む標準試料のクロマトグラムのビタミンDに対応するピーク部分の面積と各食品試料のクロマトグラムのビタミンDに対応するピーク部分の面積との比率と、標準試料のビタミンDの含有量との積から算出した。
図2A乃至図2CにUV−Bの紫外光の照射時間と食品試料中のビタミンDの含有量との関係を評価した結果を示す。ここで、図2Aは鶏卵の食品試料、図2Bは牛乳の食品試料、図2Cはプロセスチーズの食品試料についての結果を示す。図2Aに示すように、鶏卵の食品試料の場合、紫外光の照射時間が4min以上となると食品試料中のビタミンDの含有量が飽和する傾向が見られた。このことから、鶏卵の食品試料に紫外光を4min以上照射すると食品試料が含有するビタミンD前駆体の大部分がビタミンDに置き換わることが判った。また、図2Bおよび図2Cに示すように、牛乳の食品試料およびプロセスチーズの食品試料の場合も、紫外光の照射時間が4min以上になると食品試料中のビタミンDの含有量が飽和する傾向が見られた。このことから、牛乳およびプロセスチーズの食品試料も紫外光を4min以上照射すると食品試料が含有するビタミンD前駆体の大部分がビタミンDに置き換わることが判った。以上の結果から、少なくとも鶏卵および乳製品については、紫外光を4min以上、即ち、食品試料に照射される紫外光の積算光量が45mJ/cm2以上とすることにより、食品試料中のビタミンD前駆体の大部分をビタミンDに置き換えることができることが判った。
以上説明したように、本実施の形態に係るビタミンD生成方法によれば、UV−Bの紫外光、即ち、280nm以上315nm以下の波長帯域の紫外光を、その積算光量が一定となるように食品SPに照射する。例えば、食品に対して積算光量45mJ/cm2以上で一定となるように照射する。これにより、乳製品、卵製品、貝類、甲殻類、頭足類等の多種類の食品について、ビタミンDの含有量を増加させることができる。また、複数の食品SPに対して紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにすることで、食品SP中に生成されるビタミンDの生成量のばらつきを低減することができる。
以上、本発明の実施の形態について説明したが、本発明は前述の実施の形態によって限定されるものではない。例えば、筐体11における側壁に開口部が設けられており、食品を筐体11の側方から筐体11の内側へ挿入できるものであってもよい。また、光源12の数は特に限定されるものではなく、6つ以下であってもよいし8つ以上であってもよい。更に、光源12は直管型に限定されるものではなくいわゆる電球型の光源であってもよい。
実施の形態では、処理対象の食品SPが載置されたステージSTにビタミンD生成装置1を手作業で被せて使用する例について説明したが、例えば図3Aに示すビタミンD生成装置2のように、筐体211が固定されており、筐体11内へベルトコンベヤ213により搬送されるものであってもよい。なお、図3Aにおいて実施の形態と同様の構成については図1Aおよび図1Bと同一の符号を付している。具体的には、ビタミンD生成装置2は、矩形箱状であり天壁211a近傍に光源12が配置されるとともに互いに対向する2つの側壁211cそれぞれに食品SPを筐体211の内側へ導入するための開口部211bが穿設された筐体211と、光源12から放射される紫外光の強度を制御する調光装置24と、備える。このビタミンD生成装置2は、筐体211内における光源12から放射される紫外光が照射される領域で食品SPに紫外光が当たる状態で食品SPを搬送する搬送手段であるベルトコンベヤ213とともに使用される。
ベルトコンベヤ213は、筐体211の外側における筐体211の2つの開口部211bそれぞれに対向配置された2つのローラ213bと、2つのローラ213bの間に懸架された状態で2つの開口部211bそれぞれに挿通されたベルト213aと、を有し、ローラ213bを矢印AR21に示すように回動させることによりベルト213aを矢印AR22に示す方向へ移動させることで食品SPを筐体211内へ搬送する。そして、調光装置24は、ベルトコンベヤ213のベルト213aの搬送速度に応じて光源12から放射される紫外光の強度を変化させる。なお、食品SPを搬送する搬送手段としては、ベルトコンベヤ213に限定されるものではなく、食品SPが載置されたトレイを搬送する自走式の搬送車両等の他の搬送手段であってもよい。
つまり、このビタミンD生成装置2では、食品SPを筐体211内における光源12から放射される光が照射される領域で移動させつつ食品SPに光源12から放射される光を照射する。ここで、ビタミンD生成装置2は、食品SPに照射される光の積算光量が一定となるように、食品SPを移動させる際の移動速度に応じて光の強度を変化させる。具体的には、ベルトコンベヤ213が、食品SPが載置されたベルト213aの移動速度を変化させると、光源12は、その移動速度の変化に応じて放射する光の強度を変化させる。例えば、ベルトコンベヤ213が、ベルト213aの移動速度を上昇させると、それに応じて、光源12が、放射する光の強度を増加させる。これにより、食品SPが光源12から放射される光が照射される領域を通過する際、食品SPに照射される光の積算光量を一定に維持している。
ここで、ベルト213aの移動速度をv2とし、筐体211の内側におけるベルト213aの延長方向における長さをL2とし、光源12から照射される紫外光の照射強度をIuvとした場合、食品SP内により多くのビタミンDを生成させる観点から、下記式(1)の関係式が成立するように、移動速度v2、照射強度Iuvが設定されることが好ましい。

本構成によれば、複数の食品SPをベルトコンベヤ213等の搬送手段により搬送しながら複数の食品SPそれぞれに紫外光を照射する処理を順次実施する場合において、複数の食品SPそれぞれに照射される紫外光の積算光量が一定となるようにすることができる。従って、食品SP中に生成されるビタミンDの生成量のばらつきを低減することができる。
或いは、例えば図3Bに示すビタミンD生成装置3のように、内側に食品SPが配置される領域S3が形成された筐体311と、領域S3内に配置された光源12と、領域S3の一部を覆うように筐体311に取り付けられた扉315と、光源12を点灯させるための点灯装置316と、点灯装置316を操作するための操作部317と、を備えるものであってもよい。なお、図3Bにおいて実施の形態と同様の構成については図1Aおよび図1Bと同一の符号を付している。このビタミンD生成装置3は、利用者が扉315を開けて領域S3内に食品SPを配置し、その後、扉315を閉じてから操作部316を操作して食品SPに光源12から放射される紫外光を照射する。
また、ビタミンD生成方法として、例えば紫外光を放射する光源を電子レンジ等の調理器具の調理スペースに配置し、調理器具による食品の調理時に光源から放射される紫外光を食品に照射するようにしてもよい。
以上、本発明の実施の形態および変形例について説明したが、本発明はこれらに限定されるものではない。本発明は、実施の形態および変形例が適宜組み合わされたもの、それに適宜変更が加えられたものを含む。

本発明は、食品の加工工程において食品中のビタミンD含有量を増加させる工程に好適である。

Claims (7)
- 280nm以上315nm以下の波長帯域の紫外光を、積算光量が一定になるように食品に照射する、
ビタミンD生成方法。 - 前記紫外光が照射される領域で前記食品に前記紫外光が当たる状態で前記食品を搬送することにより前記食品に前記紫外光を照射するビタミンD生成方法であって、
前記食品に照射される前記紫外光の積算光量が一定となるように、前記食品を移動させる際の移動速度に応じて前記紫外光の強度を変化させる、
請求項1に記載のビタミンD生成方法。 - 前記食品は、乳製品、鶏卵、貝類、甲殻類および頭足類から選択される食品である、
請求項1または2に記載のビタミンD生成方法。 - 前記積算光量は、45mJ/cm2以上である、
請求項1から3のいずれか1項に記載のビタミンD生成方法。 - 280nm以上315nm以下の波長帯域の紫外光を放射する光源と、
箱状であり内側に前記光源が固定されるとともに、周壁の一部に食品を挿通するための開口部が設けられた筐体と、を備え、
前記筐体の内側に前記食品が配置された状態で、前記光源から放射される紫外光を、積算光量が一定となるように前記食品に照射する、
ビタミンD生成装置。 - 前記筐体内における前記紫外光が照射される領域で前記食品に前記紫外光が当たる状態で前記食品を搬送する搬送手段とともに使用されるビタミンD生成装置であって、
前記光源は、前記食品に照射される前記光の積算光量が一定となるように、前記食品を移動させる際の移動速度に応じて前記紫外光の強度を変化させる、
請求項5に記載のビタミンD生成装置。 - 前記積算光量は、45mJ/cm2以上である、
