Abstract
本発明は、持続可能な世界を目指す取り組みとして「環境」着目し、環境負荷の高い牛乳の代替乳となる植物乳を提供するために、嗜好性の面で牛乳の代替となり得る、風味の改善された植物乳及びそれを用いた水中油型乳化物を得ることを目的とする。 植物乳を含む水中油型乳化物であって、フィチン酸分解酵素処理された植物乳を含有し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量が重量比0.7以上であることを特徴とする水中油型乳化物。植物乳を加配する水中油型乳化物の製造方法において、フィチン酸分解酵素処理された植物乳を加配し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量を重量比0.7以上とすることを特徴とする水中油型乳化物の製造方法。
Description
本発明は、植物乳を用いた風味の良い水中油型乳化物に関する。
SDGs(持続可能な開発目標)の達成を目指す取組が世界的に進んでおり、「食資源不足」や「環境」といった問題に対する、社会的な危機感は、益々高まっている。
例えば、牛乳を製造するために大量の水が必要とされることや、乳牛の飼育にともない多量の温室効果ガスが排出されること、また乳牛を飼育するためには広大な面積が必要となることから、ライスミルク、豆乳、オートミルク、アーモンドミルクといった植物乳と比較すると、牛乳の環境負荷が非常に大きいことが知られてきている。
例えば、牛乳を製造するために大量の水が必要とされることや、乳牛の飼育にともない多量の温室効果ガスが排出されること、また乳牛を飼育するためには広大な面積が必要となることから、ライスミルク、豆乳、オートミルク、アーモンドミルクといった植物乳と比較すると、牛乳の環境負荷が非常に大きいことが知られてきている。
一方、この人口増加と共に起こる「食資源不足」や「環境」の社会課題に対し、植物性の食の素材を通じた解決が試みられている。
例えば、この人類の社会課題に対し、大豆は有効なソリューションの一つであると考えられる。
なぜならば、大豆は寒冷地から熱帯まで幅広い地域において、動物性のたんぱく源に比べ、わずかな肥料、水で、大量に栽培することが可能だからである。
同様に、他の植物乳も牛乳と比較すると、環境への負荷が少ないため、牛乳の替わりに植物乳を選択する人も少しずつ増えてきている。
例えば、この人類の社会課題に対し、大豆は有効なソリューションの一つであると考えられる。
なぜならば、大豆は寒冷地から熱帯まで幅広い地域において、動物性のたんぱく源に比べ、わずかな肥料、水で、大量に栽培することが可能だからである。
同様に、他の植物乳も牛乳と比較すると、環境への負荷が少ないため、牛乳の替わりに植物乳を選択する人も少しずつ増えてきている。
しかしながら、大豆を水などで抽出しオカラを分離して得られる豆乳や他の植物乳は、原料の植物由来の青臭味やエグ味を理由に敬遠する人も少なからず存在している。
さらに、これまで長年慣れ親しんだ牛乳には、フレッシュ感や、まろやかさ、牛乳由来の旨味、コク、ふくよかな乳の甘味といった、いわゆる好ましい「乳風味」があり、嗜好性の面で、植物乳は牛乳の完全な代替乳となっていないのが現状である。
従って、嗜好性の面で、牛乳の代替となり得る植物乳の風味の改善が求められている。
さらに、これまで長年慣れ親しんだ牛乳には、フレッシュ感や、まろやかさ、牛乳由来の旨味、コク、ふくよかな乳の甘味といった、いわゆる好ましい「乳風味」があり、嗜好性の面で、植物乳は牛乳の完全な代替乳となっていないのが現状である。
従って、嗜好性の面で、牛乳の代替となり得る植物乳の風味の改善が求められている。
また、パンやケーキなどの洋菓子に用いる製菓製パン素材や調理用クリームの原料として利用される水中油型乳化物も、多くは牛乳や生クリームを用いるものであり、風味の良い植物乳を得ることができれば、植物性の水中油型乳化物を用いた製菓製パン素材を提供することが可能になる。
例えば引用文献1には、大豆固形分の割合が8~14.5重量%である豆乳と、25~35℃の融点を有し、かつヤシ油及びパーム油を含み、その重量比がヤシ油/パーム油=99/1~60/40である油脂類、及び水中油型乳化物全体に対して0.01~0.3重量%の乳化剤を含み、乳成分を含まず、かつ油滴の平均径が5~200μmである水中油型乳化物からなるコンパウンドクリームの代替品が開示されている。
引用文献2には、温度(℃)をx、SFC値(%)をyとするSFC曲線において、x座標が10≦x≦20となる任意の点Pにおける接線の傾き(°)の最大値aがa≧-3である油脂を含有することを特徴とする豆乳含有冷菓が開示されている。
しかしながらいずれの方法も、豆乳を原材料とする水中油型乳化物の油脂についてのみ検討されたものであり、呈味面においてさらなる改善が求められていた。
また、引用文献3では豆乳にフィチン酸分解酵素を作用させることで得られる、大豆由来蛋白質あたりのフィチン酸含量が1.5重量%未満であることを特徴とする乳酸菌発酵豆乳が開示されているが、豆乳を原材料とする水中油型乳化物についての検討はなされていない。
本発明は、持続可能な世界を目指す取り組みとして「環境」着目し、環境負荷の高い牛乳の代替乳となる植物乳を提供するために、嗜好性の面で牛乳の代替となり得る、風味の改善された植物乳及びそれを用いた水中油型乳化物を得ることを目的とする。
本発明者らは上記課題に対して鋭意研究を行った結果、植物乳をフィチン酸分解酵素処理し、フィチン酸に対する遊離リン酸含量が重量比0.7以上とすることで、原料の植物由来の風味がマスキングされ、呈味やコク味が付与された良好な風味の植物乳が得られ、さらにその植物乳を配合することで、風味の良好な植物性の水中油型乳化物が得られることを見出し、本発明を完成させるに至った。
すなわち本発明は、下記の発明を包含するものである。
(1)植物乳を含む水中油型乳化物であって、フィチン酸分解酵素処理された植物乳を含有し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量が重量比0.7以上であることを特徴とする水中油型乳化物。
(2)動物由来原料を含まない(1)の水中油型乳化物。
(3)植物乳が豆類あるいは種実類を原料とする(1)の水中油型乳化物。
(4)植物乳を加配する水中油型乳化物の製造方法において、フィチン酸分解酵素処理された植物乳を加配し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量を重量比0.7以上とすることを特徴とする水中油型乳化物の製造方法。
(5)動物由来原料を含まない(4)の製造方法。
(6)植物乳が豆類あるいは種実類を原料とする(4)の製造方法。

本発明により、嗜好性の面で牛乳の代替となり得る、風味の改善された植物乳及びそれを用いた水中油型乳化物を提供することができる。
本発明は、植物乳を含む水中油型乳化物であって、フィチン酸分解酵素処理された植物乳を含有し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量が重量比0.7以上であることを特徴とする水中油型乳化物。以下、本発明を詳細に説明する。
(植物乳)
本発明は、植物乳あるいはそれを原材料とする水中油型乳化物に対してフィチン酸分解酵素処理を行うことを特徴とするが、かかる植物乳とはフィチン酸を含有する植物由来であればよく、例えば、アーモンド、カシューナッツ、クルミ等の種実類、大豆、エンドウ豆、ヘンプ、ルピン豆、そら豆、ひよこ豆などの豆類、キヌア、ココナッツ、米、オーツ、又は亜麻があげられる。植物乳のフィチン酸含量としては、植物乳固形分1gあたり好ましくは5.0mg以上、より好ましくは7.5mg以上、更に好ましくは10.0mg以上であるものが適当である。また、フィチン酸に対する遊離リン酸含量としては、好ましくは重量比0.7未満であるものが適当である。一般に植物乳は、原材料の粉砕、浸水/溶解、混合/攪拌、濾過、均質化、殺菌等の工程によって調製されるが、本発明に用いる植物乳の調製方法は特に限定されず、調製後の植物乳は原料由来の不溶性画分を含んでいても問題ない。また、植物乳として、原料メーカーが提供する、或いは市販の植物乳を購入し、本発明に用いることにしてもよい。植物乳としては、例えば、豆乳、アーモンドミルク、ココナッツミルク等が挙げられる。これらは1種単独で用いられてもよく、2種以上を組み合わせて用いてもよい。
本発明は、植物乳あるいはそれを原材料とする水中油型乳化物に対してフィチン酸分解酵素処理を行うことを特徴とするが、かかる植物乳とはフィチン酸を含有する植物由来であればよく、例えば、アーモンド、カシューナッツ、クルミ等の種実類、大豆、エンドウ豆、ヘンプ、ルピン豆、そら豆、ひよこ豆などの豆類、キヌア、ココナッツ、米、オーツ、又は亜麻があげられる。植物乳のフィチン酸含量としては、植物乳固形分1gあたり好ましくは5.0mg以上、より好ましくは7.5mg以上、更に好ましくは10.0mg以上であるものが適当である。また、フィチン酸に対する遊離リン酸含量としては、好ましくは重量比0.7未満であるものが適当である。一般に植物乳は、原材料の粉砕、浸水/溶解、混合/攪拌、濾過、均質化、殺菌等の工程によって調製されるが、本発明に用いる植物乳の調製方法は特に限定されず、調製後の植物乳は原料由来の不溶性画分を含んでいても問題ない。また、植物乳として、原料メーカーが提供する、或いは市販の植物乳を購入し、本発明に用いることにしてもよい。植物乳としては、例えば、豆乳、アーモンドミルク、ココナッツミルク等が挙げられる。これらは1種単独で用いられてもよく、2種以上を組み合わせて用いてもよい。
(フィチン酸分解酵素)
本発明は、フィチン酸分解酵素処理により、植物乳を原材料とする水中油型乳化物中の遊離リン酸含量がフィチン酸含量に対して重量比0.7以上であることを特徴とする。
本発明に用いることができるフィチン酸分解活性を有する酵素としては、フィターゼやホスファターゼが代表的で、植物由来、微生物由来、さらには遺伝子組換えにより生産されたものなど各種の起源のものが使用できる。なお、本発明に使用するフィチン酸分解酵素は、プロテアーゼ活性がない、もしくは低いことが望ましい。酵素の添加量、処理温度、pH、時間等は、用いる酵素に応じて適宜定めることができる。例えば、プロテアーゼによる蛋白質の加水分解がない、もしくは低い態様は、フィチン酸分解酵素の作用後の蛋白質のTCA可溶化率が20%以下、好ましくは15%以下と規定することができる。
本発明は、フィチン酸分解酵素処理により、植物乳を原材料とする水中油型乳化物中の遊離リン酸含量がフィチン酸含量に対して重量比0.7以上であることを特徴とする。
本発明に用いることができるフィチン酸分解活性を有する酵素としては、フィターゼやホスファターゼが代表的で、植物由来、微生物由来、さらには遺伝子組換えにより生産されたものなど各種の起源のものが使用できる。なお、本発明に使用するフィチン酸分解酵素は、プロテアーゼ活性がない、もしくは低いことが望ましい。酵素の添加量、処理温度、pH、時間等は、用いる酵素に応じて適宜定めることができる。例えば、プロテアーゼによる蛋白質の加水分解がない、もしくは低い態様は、フィチン酸分解酵素の作用後の蛋白質のTCA可溶化率が20%以下、好ましくは15%以下と規定することができる。
フィチン酸分解活性を有する酵素は、植物乳に対して0.1~100unit/g、好ましくは0.5~20unit/g、より好ましくは1~10unit/gとなるように添加されるのが適当である。ただし、1unitのフィチン酸分解活性は所定の反応条件下で、反応初期の1分間に基質のフィチン酸から1μmolのリン酸を遊離する酵素量を表す。
また処理時間、pH、温度等は使用する酵素、酵素の添加量により異なるが、処理温度としては通常20~80℃、好ましくは30~70℃、さらに好ましくは35~60℃が適当である。pHとしてはpH4.0~8.0、好ましくはpH5.0~7.0、最も好ましくはpH5.0~6.5が適当である。処理時間としては10分~3時間、好ましくは30~1時間が好適である。
また処理時間、pH、温度等は使用する酵素、酵素の添加量により異なるが、処理温度としては通常20~80℃、好ましくは30~70℃、さらに好ましくは35~60℃が適当である。pHとしてはpH4.0~8.0、好ましくはpH5.0~7.0、最も好ましくはpH5.0~6.5が適当である。処理時間としては10分~3時間、好ましくは30~1時間が好適である。
上記酵素を作用させた植物乳の水中油型乳化物は、フィチン酸分解物が含まれると共に、分解により遊離したリン酸が含まれる。フィチン酸分解物はイノシトール又はイノシトール1~5リン酸のいずれか1以上を含むものである。
本発明において、植物乳および及びそれを用いた水中油型乳化物のフィチン酸含量および遊離リン酸含量は、酸によるフィチン酸抽出、フィターゼおよびアルカリホスファターゼによるフィチン酸の酵素分解、モリブデン・ブルー法によるリン酸の吸光光度分析法を利用して定量するものとする。具体的には、植物乳またはそれを用いた水中油型乳化物に、混合後の濃度が0.66mol/Lとなるように塩酸を加えて遮光しながら3時間以上撹拌し、16,000g、10分間の遠心分離によって沈殿を取り除いた後、水酸化ナトリウム水溶液により中和したものをフィチン酸抽出液とする。フィチン酸抽出液に対してフィターゼおよびアルカリホスファターゼを作用させ、抽出液中のフィチン酸を完全にミオ-イノシトールと遊離リン酸に分解する。本発明においては、フィチン酸測定キット(Megazyme社製)のフィターゼ、アルカリホスファターゼおよび酵素反応用緩衝液を使用して酵素処理を行う。この酵素処理液10部に対し50重量%トリクロロ酢酸を3部加えた後、16,000g、10分間の遠心分離をして得られた上清をフィチン酸分解抽出液とする。フィチン酸抽出液およびフィチン酸分解抽出液に発色剤を加えて40度で1時間反応させた後、速やかに655nmの波長における吸光度を測定して各抽出液中の遊離リン酸含量を比色定量する。かかる発色剤とは、溶液Aとして10重量%のアスコルビン酸を含む1mol/L硫酸と、溶液Bとして5重量%のモリブデン酸アンモニウム水溶液とを調製し、5部の溶液Aと1部の溶液Bを混合したものとする。比色定量によって得られたフィチン酸抽出液の遊離リン酸含量とフィチン酸分解抽出液の遊離リン酸含量の差から、フィチン酸抽出液中のフィチン酸含量を算出する。
通常の製法で得られた植物乳およびその水中油型乳化物において、原料植物の品種等により差はあるものの、遊離リン酸含量がフィチン酸含量に対して重量比0.2~0.6程度である。一方、本発明においてフィチン酸分解酵素処理植物乳(以下、単に酵素処理植物乳と称する。)およびその水中油型乳化物は、フィチン酸含量に対する遊離リン酸含量はかかる範囲よりも高くなっており、すなわち0.7以上、より好ましくは1.0以上である。かかる範囲にフィチン酸含量に対する遊離リン酸含量が増加されることにより、植物乳特有の臭みやエグ味が少なく、呈味が向上しコクのある植物乳の水中油型乳化物が得られる。
本発明において、植物乳および及びそれを用いた水中油型乳化物のフィチン酸含量および遊離リン酸含量は、酸によるフィチン酸抽出、フィターゼおよびアルカリホスファターゼによるフィチン酸の酵素分解、モリブデン・ブルー法によるリン酸の吸光光度分析法を利用して定量するものとする。具体的には、植物乳またはそれを用いた水中油型乳化物に、混合後の濃度が0.66mol/Lとなるように塩酸を加えて遮光しながら3時間以上撹拌し、16,000g、10分間の遠心分離によって沈殿を取り除いた後、水酸化ナトリウム水溶液により中和したものをフィチン酸抽出液とする。フィチン酸抽出液に対してフィターゼおよびアルカリホスファターゼを作用させ、抽出液中のフィチン酸を完全にミオ-イノシトールと遊離リン酸に分解する。本発明においては、フィチン酸測定キット(Megazyme社製)のフィターゼ、アルカリホスファターゼおよび酵素反応用緩衝液を使用して酵素処理を行う。この酵素処理液10部に対し50重量%トリクロロ酢酸を3部加えた後、16,000g、10分間の遠心分離をして得られた上清をフィチン酸分解抽出液とする。フィチン酸抽出液およびフィチン酸分解抽出液に発色剤を加えて40度で1時間反応させた後、速やかに655nmの波長における吸光度を測定して各抽出液中の遊離リン酸含量を比色定量する。かかる発色剤とは、溶液Aとして10重量%のアスコルビン酸を含む1mol/L硫酸と、溶液Bとして5重量%のモリブデン酸アンモニウム水溶液とを調製し、5部の溶液Aと1部の溶液Bを混合したものとする。比色定量によって得られたフィチン酸抽出液の遊離リン酸含量とフィチン酸分解抽出液の遊離リン酸含量の差から、フィチン酸抽出液中のフィチン酸含量を算出する。
通常の製法で得られた植物乳およびその水中油型乳化物において、原料植物の品種等により差はあるものの、遊離リン酸含量がフィチン酸含量に対して重量比0.2~0.6程度である。一方、本発明においてフィチン酸分解酵素処理植物乳(以下、単に酵素処理植物乳と称する。)およびその水中油型乳化物は、フィチン酸含量に対する遊離リン酸含量はかかる範囲よりも高くなっており、すなわち0.7以上、より好ましくは1.0以上である。かかる範囲にフィチン酸含量に対する遊離リン酸含量が増加されることにより、植物乳特有の臭みやエグ味が少なく、呈味が向上しコクのある植物乳の水中油型乳化物が得られる。
フィチン酸分解酵素の作用を受けた植物乳を含む水中油型乳化物を製造する場合の、酵素を作用させるタイミングは、少なくとも最終的に水中油型乳化物を製品とするまでに作用させておればよい。例えば、
(1)植物原料から植物乳を調製する段階、
(2)植物原料から調製した後の植物乳の段階、
(3)植物乳に副原料を添加した段階、
(4)植物乳を原材料として水中油型乳化物を製造する段階、
(5)植物乳から製造した後の水中油型乳化物の段階、等である。
フィチン酸分解酵素を作用させた後は酵素を失活させるために加熱処理の工程が必要となるため、(1)~(4)のタイミングが好ましい。
(1)植物原料から植物乳を調製する段階、
(2)植物原料から調製した後の植物乳の段階、
(3)植物乳に副原料を添加した段階、
(4)植物乳を原材料として水中油型乳化物を製造する段階、
(5)植物乳から製造した後の水中油型乳化物の段階、等である。
フィチン酸分解酵素を作用させた後は酵素を失活させるために加熱処理の工程が必要となるため、(1)~(4)のタイミングが好ましい。
(酵素失活)
フィチン酸分解活性を有する酵素にて処理した植物乳および植物乳を含む水中油型乳化物は加熱処理により酵素を失活させる。酵素失活のための加熱処理は使用する酵素により異なるが、フィチン酸分解活性が失活する温度で加熱することが望ましい。かかる加熱処理の方法は特に限定されず、直接加熱、間接加熱のいずれでも良く、加熱装置としては蒸気注入式等の直接加熱装置、プレート式やレトルト式の間接加熱装置等を自由に使用できるが、特に直接高温瞬間加熱がより好ましい。直接高温瞬間加熱は、フラッシュパンにおける減圧による脱臭効果が植物乳および植物乳を含む水中油型乳化物の風味改善に寄与していると考えられる。直接高温瞬間加熱の温度は通常110~150℃、加熱時間は通常1~120秒とすることができるが、2~10秒がより好ましい。
フィチン酸分解活性を有する酵素にて処理した植物乳および植物乳を含む水中油型乳化物は加熱処理により酵素を失活させる。酵素失活のための加熱処理は使用する酵素により異なるが、フィチン酸分解活性が失活する温度で加熱することが望ましい。かかる加熱処理の方法は特に限定されず、直接加熱、間接加熱のいずれでも良く、加熱装置としては蒸気注入式等の直接加熱装置、プレート式やレトルト式の間接加熱装置等を自由に使用できるが、特に直接高温瞬間加熱がより好ましい。直接高温瞬間加熱は、フラッシュパンにおける減圧による脱臭効果が植物乳および植物乳を含む水中油型乳化物の風味改善に寄与していると考えられる。直接高温瞬間加熱の温度は通常110~150℃、加熱時間は通常1~120秒とすることができるが、2~10秒がより好ましい。
(水中油型乳化物)
本発明に係る水中油型乳化物は特に限定されず、ホイップクリームやアイスクリームミックス、ドレッシング、及びこれらに類する他の食品が挙げられる。また、水中油型乳化物には動物性原料が含まれてもよく、「植物性水中油型乳化物」としては動物由来原料が全原料中50重量%未満が好ましい。より好ましい態様としては動物由来原料が全原料中40重量%以下、30重量%以下、20重量%以下、10重量%以下又は0重量%であり得る。
本発明の水中油型乳化物の製造方法は、上記植物乳と動物油脂(ラード等)、植物油脂(ヤシ油、パーム油、パーム核油等)、培養油脂(酵母や藻類等)などの食用油脂とを混合して乳化させる工程を含む。また、動物性原料を有しない水中油型乳化物の場合、植物油脂や培養油脂の使用が好ましい。乳化工程においての混合方法は特に限定されず、慣用の攪拌手段、例えば、攪拌棒などを用いた手攪拌であってもよく、機械的攪拌手段(攪拌子や攪拌翼を備えた手段)、超音波分散機などが利用できる。これらのうち、機械的攪拌手段が汎用される。機械的攪拌手段としては、例えば、ホモミキサー、ホモジナイザー、ホモディスパー、ヘンシェルミキサー、バンバリーミキサー、ボンミキサー、V型ミキサー、インラインミキサーなどの慣用のミキサーなどが挙げられる。機械的攪拌手段の回転速度は、処理量に応じて適宜選択できる。乳化工程において加熱温度は、例えば50~90℃程度である。得られた水中油型乳化物は、油脂類の結晶状態を安定化させ、適度な粘度に調整するため、熟成(エージング)処理する熟成工程に供してもよい。得られた水中油型乳化物は、殺菌処理しても品質劣化を抑制でき、処理方法としては加熱処理などが挙げられる。

本発明の水中油型乳化物には必要に応じた副原料を調合することができる。例えば、乳原料(生乳、脱脂濃縮乳、脱脂粉乳、生クリーム、バター等)や、糖質甘味料(砂糖、水あめ、果糖、ぶどう糖、糖アルコール、トレハロース等)や、安定剤(グアーガム、ローカストビーンガム、キサンタンガム、アラビアガム、カラギナン、アルギン酸ナトリウム、CMC、水溶性セルロース、ゼラチン、ペクチン等)や、澱粉(小麦・米等の穀類由来の澱粉や、トウモロコシ由来の澱粉や、馬鈴薯・タピオカ等のいも類由来の澱粉等、もしくはこれらの加工澱粉や化工澱粉等)や、乳化剤(レシチン、ショ糖脂肪酸エステル、プロピレングリコール脂肪酸エステル、ソルビタン脂肪酸エステル、グリセリン脂肪酸エステル、ポリグリセリン脂肪酸エステル、有機酸モノグリセリド等)や、食塩や、着香料や、着色料や、酸味料や、風味原料(コーヒー、ココア、茶類、チョコレート原料、果汁、果肉、種実類、蜂蜜、メープルシロップ、酒類等)や、各種栄養素(蛋白質や、アミノ酸や、ポリデキストロース、イヌリン、難消化性デキストリンなどの食物繊維や、ビタミン類や、ミネラル類等)等が挙げられる。
前記乳化工程を経て得られた水中油型乳化物は、さらにホイップ工程に供することによりホイップドクリーム(ホイップ後のホイップクリーム)を調製できる。ホイップ工程では、乳化工程で形成された乳化物が部分的に解乳化するとともに、組成物が抱気することにより、ホイップドクリームが得られる。
また、前記乳化工程を経て得られた水中油型乳化物はフリージング工程および硬化工程に供することで冷菓を調製できる。フリージング工程では、ミックスをフリーザーにより急激に冷却させて水分を凍結させながら適当量の空気を混入させ、ミックス中に微細な空気の泡と氷の結晶粒、脂肪粒子を分散させ、半流動状のソフトクリーム状とする。硬化工程では、これを充填・成形・包装した後、-20~-40℃に急冷却し、一定の形を保持し凍結させる。
また、前記乳化工程を経て得られた水中油型乳化物はフリージング工程および硬化工程に供することで冷菓を調製できる。フリージング工程では、ミックスをフリーザーにより急激に冷却させて水分を凍結させながら適当量の空気を混入させ、ミックス中に微細な空気の泡と氷の結晶粒、脂肪粒子を分散させ、半流動状のソフトクリーム状とする。硬化工程では、これを充填・成形・包装した後、-20~-40℃に急冷却し、一定の形を保持し凍結させる。
以下に実施例を示し、本発明をより詳細に説明する。
なお製造例、実施例、比較例中の「%」は、いずれも重量%である。

(製造例1~4)
市販植物乳である豆乳Aおよび豆乳B(商品名「低脂肪豆乳」、「豆乳クリーム」、いずれも不二製油社製)、豆乳C(商品名「おいしい無調整豆乳」、キッコーマン社製)、アーモンドミルク(商品名「無添加 濃いアーモンドミルク 砂糖不使用」、筑波乳業社製)にフィターゼ(商品名「スミチームPHYF-L」、新日本化学社製)を植物乳重量に対して0.1%加え、50℃で1時間攪拌し酵素反応を実施した。反応後、液温を70℃に昇温して酵素処理植物乳を得た。
市販植物乳である豆乳Aおよび豆乳B(商品名「低脂肪豆乳」、「豆乳クリーム」、いずれも不二製油社製)、豆乳C(商品名「おいしい無調整豆乳」、キッコーマン社製)、アーモンドミルク(商品名「無添加 濃いアーモンドミルク 砂糖不使用」、筑波乳業社製)にフィターゼ(商品名「スミチームPHYF-L」、新日本化学社製)を植物乳重量に対して0.1%加え、50℃で1時間攪拌し酵素反応を実施した。反応後、液温を70℃に昇温して酵素処理植物乳を得た。
(フィチン酸含量の分析)
製造例1~4で使用した植物乳および得られた酵素処理植物乳について、フィチン酸含量と遊離リン酸含量を、先に示したモリブデン・ブルー法によりフィチン酸測定キット(Megazyme社製)を用いて測定し、結果を表1に纏めて示した。

(実施例1)
製造例2で得られた酵素処理植物乳を用いて、表2の配合に従い、先に示した一般的な公知の製造方法で水中油型乳化物である実施例1を得た。

(比較例2~4)
製造例2で使用した豆乳Bおよび製造例2で得られた酵素処理植物乳を用いて、表2の配合に従い、実施例2同様に水中油型乳化物である比較例1~3を得た。
製造例2で使用した豆乳Bおよび製造例2で得られた酵素処理植物乳を用いて、表2の配合に従い、実施例2同様に水中油型乳化物である比較例1~3を得た。
実施例1および比較例1~3について、パネラー5名により官能評価を行った。官能評価は呈味の強さ、コクの強さ、植物乳特有の臭みの少なさについて、1~5の五段階(比較として酵素処理未実施品を3とし、5を最高評価とした)で評価して平均値をとり、酵素処理前後で1以上の違いがあった項目を有意差ありと判断した。上記3項目について、全て酵素処理前後で1以上の違いがあったものを合格とした。また、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表3に示した。
表4より、遊離リン酸/フィチン酸が0.7以上において風味が改善された。
(実施例2~5)
製造例1~4で得られた酵素処理植物乳を用いて、表4の配合に従い、実施例1と同様の工程で酵素処理植物乳含有水中油型乳化物とした。得られた水中油型乳化物について、先に示した一般的な公知の製造方法で冷菓とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表6に示した。
製造例1~4で得られた酵素処理植物乳を用いて、表4の配合に従い、実施例1と同様の工程で酵素処理植物乳含有水中油型乳化物とした。得られた水中油型乳化物について、先に示した一般的な公知の製造方法で冷菓とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表6に示した。
(比較例4~7)
製造例1~4で使用した植物乳を用いて、表5の配合に従い、実施例1と同様の工程で酵素処理植物乳含有水中油型乳化物とした。得られた水中油型乳化物について、実施例2~5と同様の工程により冷菓とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表7に示した。
製造例1~4で使用した植物乳を用いて、表5の配合に従い、実施例1と同様の工程で酵素処理植物乳含有水中油型乳化物とした。得られた水中油型乳化物について、実施例2~5と同様の工程により冷菓とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表7に示した。
表6より、フィチン酸を含有する植物乳であればフィチン酸分解酵素による処理により風味が改善された。
(実施例6、7)
製造例4で使用したアーモンドミルクおよび製造例4で得られた酵素処理アーモンドミルクを用いて、表8の配合に従い先に示した一般的な公知の製造方法で水中油型乳化物である実施例6、7を得た。

(比較例8)
製造例4で使用したアーモンドミルクを用いて表8の配合に従い、実施例5同様に水中油型乳化物である比較例8を得た。

実施例6、7および比較例8について、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表9に示した。
表9より、実施例6、7は全ての項目において改善が確認された。
(実施例8)
市販植物乳水中油型乳化物である豆乳ホイップクリームA(商品名「乳製品を使っていない豆乳入りホイップ」、名古屋製酪社製)について製造例1と同様の工程で酵素処理植物乳含有水中油型乳化物を得た。得られた水中油型乳化物について実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表10に示した。

市販植物乳水中油型乳化物である豆乳ホイップクリームA(商品名「乳製品を使っていない豆乳入りホイップ」、名古屋製酪社製)を比較例10とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表10に示した。
市販植物乳水中油型乳化物である豆乳ホイップクリームA(商品名「乳製品を使っていない豆乳入りホイップ」、名古屋製酪社製)を比較例10とし、実施例1と同様の方法による官能評価および、製造例1と同様の工程でフィチン酸含量と遊離リン酸含量を測定した結果を表10に示した。
表10より、フィチン酸分解酵素処理は植物乳以外に副原料を含む水中油型乳化物に対し風味が改善された。
Claims (6)
- 植物乳を含む水中油型乳化物であって、フィチン酸分解酵素処理された植物乳を含有し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量が重量比0.7以上であることを特徴とする水中油型乳化物。
- 動物由来原料を含まない請求項1の水中油型乳化物。
- 植物乳が豆類あるいは種実類を原料とする請求項1の水中油型乳化物。
- 植物乳を加配する水中油型乳化物の製造方法において、フィチン酸分解酵素処理された植物乳を加配し、水中油型乳化物中のフィチン酸に対する遊離リン酸含量を重量比0.7以上とすることを特徴とする水中油型乳化物の製造方法。
- 動物由来原料を含まない請求項4の製造方法。
- 植物乳が豆類あるいは種実類を原料とする請求項4の製造方法。
