Abstract

L'invention concerne une chambre (1) et un procédé de changement de température de produits alimentaires. La chambre (1) comprend un compartiment alimentaire (6) doté d'une entrée (61) et d'une sortie (62) et d'au moins un canal (60) s'étendant entre l'entrée (61) et la sortie (62) permettant l'écoulement de gaz à travers le compartiment alimentaire (6), un canal d'écoulement primaire (20) s'étendant entre l'entrée (61) et la sortie (62) du compartiment alimentaire (6) ; au moins un dispositif de changement de température (2) agencé pour changer la température du gaz provenant du compartiment alimentaire (6), un canal d'écoulement de recirculation (30) s'étendant entre l'entrée (61) et la sortie (62) du compartiment alimentaire (6) ; et au moins un ventilateur de recirculation (3) agencé pour faire recirculer une partie de l'écoulement de gaz entrant à travers le compartiment alimentaire (6).
