Abstract
Sesame milk comprises of sesame seeds, sunflower lecithin, maltodextrin, polydextrose, gellan gum, sugar and water. The manufacturing process of sesame milk comprises of: washing sesame seeds, performing water extraction, filtering via high-performance centrifuge, mixing sesame milk with other ingredients, and packaging, sterilizing and cooling down.

Title of the invention
FORMULA AND MANUFACTURING PROCESS OF SESAME MILK
Field of the invention
The invention relates to the field of food science and technology in relation to the formula and manufacturing process of sesame milk.
Background of the invention
Sesame is one of the significant industrial crops in Thailand due to the tendency of increasing market demands every year. Sesame is the plant that provides several benefits; it is also widely popular grain; and it is the grain that can be eaten regularly since sesame is highly rich in nutrients, e.g. protein, carbohydrate, such highly-healthy fat as essential amino acids: methionine and tryptophan which cannot be found in bean or any other oilseed plants, and vitamins and minerals: every type of vitamin E and vitamin B except vitamin B12, calcium, magnesium, potassium, sodium, phosphorus, zinc, and iron. Additionally, sesame contains fiber which belongs to lignans, e.g. sesamin, sesamolin, and also rich in phytosterols. These substances in sesame seeds help provide anti-aging effect, reduce cholesterol in blood, improve cardiovascular system, and decrease chemical reactions causing cancer. The utilization of sesame can be a direct consumption or a processing, e.g. roasted sesame seeds, sesame oil extract, sesame cookies, and sesame ice cream. Moreover, sesame can be processed into various products, e.g. healthy food, medicine, and cosmetics: lotion, shampoo, conditioner, etc.
Products derived from sesame processing are goods and foods, e.g. sesame oil, sesame lotion, sesame cream, sesame cookies, sesame chips, sesame instant powder drink, sesame milk, and various kinds of food product containing sesame that are considered as popular healthy products. As healthy products presently become famous among people, healthy drink or sesame milk becomes a trend since it is on the market and easy to eat and carry. Sesame milk is also a choice for consumers who are allergic to protein in breast/cow’s milk or soymilk since sesame milk does not cause an allergic reaction and it is highly rich in nutrients. In the prior art, similar processing of sesame milk has been mentioned as follows:
Thai petty patent no. 940 illustrates black sesame drink. According to the invention, roasted black sesame seeds are mixed with clean water and grinded, blended, and filtered out the pomace— leaving only sesame water. Then, mix sesame water with rice water wherein the rice has been grinded and blended with clean water and filtered out the pomace as well. Boil and simmer the
mixture until it is boiling, and then add some sugar.
Thai petty patent no. 1654 illustrates sesame milky drink which contains black sesame seeds 3-5% by weight; pigeon pea 1.5-2% by weight; unsweetened condensed filled milk, palm oil formula 6-7% by weight; brown sugar 6-6.5% by weight; and water 82-83% by weight as well as the manufacturing process of sesame milky drink according to this invention. The invention of sesame milky drink will help to provide consumers consuming nut milk with more complete essential amino acid than consuming nut milk alone; and to enhance the benefits of sesame, the development of white sesame seeds to black sesame seeds and white sugar to brown sugar has been carried out in accordance with soymilk and white sesame seeds.
As mentioned above, it is found that the manufacturing process of sesame milky drink can be varied; the inventor, thus, comes up with an idea to utilize sesame for sesame milk product wherein the preparation of sesame in pre-production has been taken as priority, e.g. a result of sesame seed roasting before sesame milk extraction and a result of heat for sterilization on sesame milk quality, especially the amount of antioxidant, sesamin, and sesamolin which are essential substances in sesame, in order to produce sesame milk product with highly amount of sesamin wherein the sesamin derived from the sesame milk extraction is much more than the previous sesame oil extraction and the derived sesame milk product is different since it is pure sesame milk excluding nut or other grains.
Summary of the invention
Sesame milk formula comprises of sesame seeds, sweetener, water, stabilizer, sunflower lecithin, and vitamin E. The manufacturing of sesame milk starts with sesame seed roasting at proper temperature to produce its milk wherein the sesame seeds can be white seeds, black seeds, or a mix of white seeds and black seeds. Then, perform a water extraction via milling or thoroughly blending, filter, and crush to get sesame water. The objective of this invention is to perform the processing of sesame extract-based product without mixing with other drinks, e.g. cow’s milk or soymilk, in order to meet consumers’ need for highly benefits of sesame and to be a choice for people consuming milk as well as various kinds of healthy drink wherein sesame milk provides benefits from essential amino acid, increase value of sesame via processing for shelf-life improvement, and encourage farmers to plant more sesame.
Detailed description of the invention
Sesame milk product is an alternative healthy drink for people who avoid cow’s milk or soymilk consumption wherein the manufacturing process of sesame milk is as follows: use sesame seeds which can be chosen from white seeds, black seeds, or a mix of white seeds and black seeds to perform water extraction via milling or blending with high-performance blender; filter; crush to get sesame milk; and mix with other ingredients.

Sesame seeds 6.00-19.00% by weight Sunflower lecithin 0.10-1.00% by weight Maltodextrin 2.00-5.00% by weight Polydextrose 2.00-5.00% by weight Gellan gum 0.01-0.05% by weight Sugar 1.00-5.00% by weight
Clean water 70.00-90.00% by weight wherein sesame seeds can be chosen from white seeds, black seeds, or a mix of white seeds and black seeds.
The manufacturing process of sesame milk is as follows: a) select quality sesame seeds which can be roasted or none-roasted seeds to wash them up; b) perform water extraction of sesame seeds derived from a) via milling or blending with high-performance blender, and then filter them via high-performance centrifuge to separate water phase and sesame sediment;
c) mix sesame milk deri ved from the extraction with said mixture. Then, mix them until they are homogenous mixture and package them;
d) perform sterilization of packaged products wherein the sterilization methods can be pasteurization or sterilization. Then, cool them down using cold water to decrease the temperature of sesame milk product.
Any modification of this invention may be clearly understood and performed by those experts with skills in the related arts or related fields. This may be subjected to the scope and intent of this present invention as described in the claims attached.

Claims
1. Sesame milk formula comprises of:
Sesame seeds 6.00-19.00% by weight Sunflower lecithin 0.10-1.00% by weight Maltodextrin 2.00-5.00% by weight Polydextrose 2.00-5.00% by weight Gellan gum 0.01-0.05% by weight Sugar 1.00-5.00% by weight
Water 70.00-90.00% by weight
2. The manufacturing process of sesame milk according to claim 1 comprises the following steps:
a. Select quality sesame seeds which can be roasted or none-roasted seeds to wash them up.
b. Perform water extraction of sesame seeds derived from a) via milling or blending with high-performance blender, and then filter them via high-performance centrifuge to separate water part and sediment.
c. Mix sesame milk derived from the extraction with said mixture. Then, mix them until they are homogenous mixture and package them.
d. Perform sterilization of packaged products and then cool them down using cold water to decrease the temperature of sesame milk product.
3. Sesame milk formula according to any of claims 1 or 2 wherein sesame seeds are chosen from white sesame seeds, black sesame seeds, or a mix of white sesame seeds and black sesame seeds.
4. The manufacturing process of sesame milk according to claim 2 wherein the sterilization of sesame milk is chosen from pasteurization or sterilization.
