Abstract
In einem Verfahren zur gesteuerten Hefeproduktion werden Hefezellen in einem wässrigen Kulturmedium unter Zufuhr einer verwertbaren Kohlenstoffquelle und von Luft wachsen gelassen. Das Medium weist eine verwertbare Kohlenstoffquelle auf und befindet sich in einem Behältnis. Es wird die Ethanolkonzentration im Kulturmedium erfasst und die erforderliche Zufuhr der verwertbaren Kohlenstoffquelle an Hand eines mathematischen Modells bestimmt.
