L'invention concerne un dispositif servant au découpage d'un bloc de produit alimentaire en tranches de produit alimentaire, le dispositif présentant une lame périphérique asymétrique amovible, ainsi qu'un logement de lame amovible conçu pour correspondre à la forme de la lame périphérique, le rapport entre la surface du logement de lame et celle de la lame périphérique étant conçu de telle manière que la lame périphérique ne représente qu'une petite partie de la surface totale et donc un bord étroit.
