Abstract

La présente invention concerne un procédé de préparation d'un extrait de Hovenia dulcis présentant une teneur accrue en un flavonoïde spécifique et un composé polyphénol. Plus particulièrement, un extrait de Hovenia dulcis, préparé par un procédé de préparation de la présente invention comprenant une fermentation oxydative, présente une teneur fortement accrue en un flavonoïde spécifique et un composé polyphénol, et ainsi les ingrédients fonctionnels de celui-ci sont renforcés. De plus, l'extrait de Hovenia dulcis peut être utilisé de manière utile dans des boissons fonctionnelles comme une odeur désagréable des feuilles de Hovenia dulcis est éliminée.
