The present invention relates to a cooking device.
An example of a conventional cooking device is a grilled cooking device such as a seven wheel. Such a grilled cooking device has a configuration in which a heat source such as a heating wire or charcoal is disposed below a mesh on which an object to be heated such as food is placed.
As another example of a conventional cooking device, there is an oven-type cooking device that oven-heats an object to be heated, such as a food housed in a heating chamber, such as a microwave oven. Such an oven-type cooking device generally includes a heater composed of a fan and a hot air heater, and is heated by the hot air circulated from the heater through a ventilation port provided in the heating chamber. It is the composition which performs. Recently, there is an oven-type cooking device that employs heating using steam. Such an oven-type cooking device is disclosed in Patent Document 1, for example.
Japanese Patent Publication “Japanese Unexamined Patent Application Publication No. 2007-10163 (Published January 18, 2007)”
The above-mentioned grilled cooking device has the advantage that the heated object can be easily operated during cooking in order to uniformly adjust the heating status (baked color, baking, shape, etc.) of the heated object. is there. For example, it is possible to easily perform operations such as moving the object to be heated to an area where the heating power on the net is strong, or turning the object to be heated to burn the surface of the object to be heated. Moreover, since the grilled cooking device is usually cooked in an open space, there is an advantage that the cooking process of the object to be heated can be easily understood. On the other hand, in the grilled cooking device, the object to be heated is heated using a heat source such as a heating wire or charcoal, so that the moisture evaporates from the object to be heated as the cooking time elapses. Therefore, there is a defect that the object to be heated is dried and it is difficult to cook with a moist finish.
On the other hand, in the oven-type cooking device disclosed in Patent Document 1, since water vapor and radiant heat from the heater are used to heat the object to be heated, the moisture in the object to be heated is prevented from evaporating, resulting in a moist finish. Can be cooked. On the other hand, the oven-type cooking device heats the object to be heated in a sealed space called a heating chamber, so that it is difficult to perform operations such as moving the object to be heated during cooking and turning it over. There is a drawback of being.
Thus, there is no conventional cooking device that has the advantages of both a grilled cooking device and an oven cooking device using steam.
The present invention has been made in view of the above-mentioned problems, and the object thereof is a completely new concept capable of cooking using steam while easily operating an object to be heated during cooking. It is in realizing a heating cooker having.
In order to solve the above problems, a heating cooker according to an aspect of the present invention includes a heating furnace and a steam generation unit that generates steam to be supplied to the heating furnace, and the heating furnace is open to the top. And a steam outlet is provided on the inner surface of the heating furnace.
According to one embodiment of the present invention, there is an effect that cooking can be performed using steam while easily operating an object to be heated during cooking.

Embodiment 1
Hereinafter, an embodiment of the present invention will be described in detail. FIG. 1 is a perspective view showing a configuration of a heating cooker 1A according to the present embodiment. Moreover, FIG. 2 is a perspective view which shows the structure inside the heating cooker 1A. Moreover, (a) of FIG. 3 is sectional drawing which shows the structure of 1 A of heating cookers.
As shown in FIGS. 1 to 3A, the heating cooker 1A includes a heating furnace 20, a steam generation unit 30, a net member 4, and a water supply unit 50. Further, the heating furnace 20, the steam generation unit 30, the net member 4, and the water supply unit 50 are accommodated in the housing 6. The housing 6 has a quadrangular prism shape having a square bottom surface.
The heating furnace 20 is a concave container having an open portion 21 at the top. In the heating cooker 1A according to the present embodiment, the heating furnace 20 is in the form of a square container. A steam outlet 22 is provided on the inner surface of each of the four side walls 23 of the heating furnace 20.
The mesh member 4 has a mesh structure, and is provided so that the upper surface thereof is located in the open portion 21 of the heating furnace 20. The net member 4 is in the form of a container that matches the shape of the upper portion of the heating furnace 20, and a heated object such as a food that is a cooking target of the heating cooker 1A is placed on the bottom surface. The bottom surface of the net member 4 is located below the open portion 21 of the heating furnace 20. The object to be heated placed on the bottom surface of the net member 4 can be turned over or moved through the opening 21 using, for example, a chopping tool, a tongue or the like.
The steam generating unit 30 is a device that generates superheated steam to be supplied to the heating furnace 20, and is provided on the outer surface of each of the four side walls 23 constituting the heating furnace 20.
Four water supply units 50 are provided corresponding to the steam generation unit 30. The water supply unit 50 includes a water supply tube 51 connected to the steam generation unit 30, and supplies water to the steam generation unit 30. The water supply unit 50 includes a water supply pump (not shown), a water supply tank (not shown), and the like.
The superheated steam generated by the four steam generating units 30 is supplied into the heating furnace 20 through the steam outlet 22 provided on the inner surface of the side wall 23 of the heating furnace 20. The superheated steam supplied from the steam outlet 22 fills the space below the open portion 21 of the heating furnace 20. At this time, the object to be heated placed on the mesh member 4 is cooked by superheated steam filled in a space below the opening 21.
FIG. 4 is a cross-sectional view showing the configuration of the steam generating unit 30 in the heating cooker 1A according to the present embodiment. In FIG. 4, the switching unit 35 is schematically illustrated.
As shown in FIG. 4, the steam generating unit 30 includes a steam generating heater 31 (first heater), a superheated steam generating heater 32 (second heater), the steam generating heater 31, and the superheater. And a switching unit 35 that independently switches on / off the water vapor generating heater 32. The steam generating unit 30 is configured as a unit in which a steam generating heater 31 and a superheated steam generating heater 32 are incorporated in a housing 33. A partition wall 33 </ b> C is provided in the housing 33. The partition wall 33C divides the internal space of the housing 33 into a steam generation space 33A in which the steam generation heater 31 is accommodated and a superheated steam generation space 33B in which the superheated steam generation heater 32 is accommodated. .
The partition wall 33C has a base material made of heat-resistant stainless steel such as SUS304 (18 chrome stainless steel) and a film covering the base material. This film has heat resistance and is formed by, for example, black coating.
The superheated steam generation space 33B is provided in the steam generation space 33A. The steam generation space 33A and the superheated steam generation space 33B communicate with each other so that steam can enter and exit. The superheated steam generation space 33 </ b> B is provided with a steam discharge pipe 34 that communicates with the space in the heating furnace 20. The steam discharge pipe 34 is provided so as to penetrate the steam outlet 22 of the heating furnace 20.
The housing 33 has a base material cast by a metal die casting method such as aluminum, and a coating covering the base material. This film has water repellency and prevents the precipitation of oxides such as rust from the surface of the substrate. This film is formed by painting, for example.
Water from the water supply unit 50 is dripped into the housing 33 of the steam generation unit 30. The steam generating heater 31 heats the housing 33 and evaporates the water dropped on the housing 33. Thereby, about 100 degreeC saturated water vapor | steam generate | occur | produces in the steam generation space 33A.
Here, the steam generating heater 31 is cast in the housing 33. Therefore, the contact area between the steam generating heater 31 and the housing 33 can be increased. As a result, the heat of the steam generating heater 31 can be efficiently transmitted to the housing 33, and the evaporation efficiency is improved.
Saturated steam generated in the steam generation space 33A flows into the superheated steam generation space 33B. Then, in the superheated steam generation space 33B, the superheated steam is heated by the superheated steam generation heater 32 to become overheated steam of 100 ° C. or higher (for example, about 300 ° C.). Here, the superheated steam means steam heated to a superheated state of 100 ° C. or higher. The superheated steam generated in the superheated steam generation space 33 </ b> B passes through the steam discharge pipe 34 and is supplied to the heating furnace 20.
Thus, the object to be heated placed on the mesh member 4 is cooked by superheated steam at 100 ° C. or higher (for example, about 300 ° C.) blown out from the steam outlet 22 of the heating furnace 20. At this time, superheated steam is supplied to and adhered to the surface of the object to be heated, condenses on the surface of the object to be heated, and gives a large amount of condensation latent heat to the object to be heated. Therefore, heat can be efficiently transferred to the object to be heated.
Moreover, in the heating cooker 1A, since cooking is performed using superheated steam, it is possible to suppress moisture from evaporating from the heated object and drying. Therefore, the object to be heated can be cooked in a moist finish that retains moderate moisture.
Further, according to the heating cooker 1 </ b> A, the bottom surface of the mesh member 4 on which the object to be heated is placed is located below the open portion 21 of the heating furnace 20. And the to-be-heated material mounted in the net | network member 4 can be turned over or moved through the open part 21, for example using a chopping and a tong. Therefore, the object to be heated heated by the superheated steam can be easily operated according to the heating situation.
Therefore, according to the configuration of the heating cooker 1A, it is possible to cook by using superheated steam while easily operating the object to be heated during cooking. The cooking device 1A is a completely new cooking device that has the advantages of both a grilled cooking device and an oven cooking device using superheated steam.
Moreover, in the heating cooker 1A, cooking using only superheated steam is possible. On the other hand, an oven-type heating cooker using superheated steam cooks by using radiant heat of a heating chamber heated by a heater in addition to superheated steam.
Unlike the oven-type heating cooker using superheated steam, the heating cooker 1A is configured to supply superheated steam in a heating furnace 20 (non-sealed space) having an open portion 21 communicating with the outside. Moreover, the heating cooker 1A is configured to heat and cook an object to be heated only with superheated steam. The steam generation unit 30 continues to generate superheated steam to heat the object to be heated placed on the mesh member 4, but senses the heating condition of the object to be heated using a sensor or the like, and generates superheated steam. May be controlled.
Further, as shown in FIG. 4, the steam generation unit 30 includes a switching unit 35 that independently switches on / off of the steam generation heater 31 and the superheated steam generation heater 32. Therefore, in the heating cooker 1A, both heating cooking using superheated steam and steaming cooking using saturated steam can be performed.
When steaming and cooking the object to be heated, the switching unit 35 controls to turn on the heater 31 for generating steam and to turn off the heater 32 for generating superheated steam. Thereby, the steam generation unit 30 supplies the saturated steam generated by the steam generation heater 31 to the inside of the heating furnace 20. In the heating furnace 20, the space below the open portion 21 is filled with saturated steam, and steamed cooking of the object to be heated placed on the mesh member 4 becomes possible.
When the object to be heated is cooked with superheated steam, the switching unit 35 controls to turn on both the steam generating heater 31 and the superheated steam generating heater 32. Thereby, the steam generation unit 30 supplies the superheated steam generated by the superheated steam generation heater 32 to the inside of the heating furnace 20. In the heating furnace 20, the space below the open portion 21 is filled with superheated steam, and the object to be heated placed on the net member 4 can be cooked with superheated steam.
Thus, in the heating cooker 1A, healthy cooking can be performed by using superheated steam or saturated steam. In the heating cooker 1 </ b> A, superheated steam or saturated steam is supplied to the surface of the object to be heated placed on the mesh member 4. And superheated steam or saturated steam adheres to the surface of the object to be heated as condensed water. Thereby, the salt or oil in the heated object is dropped together with the condensed water adhering to the surface of the heated object. As a result, it is possible to reduce salt or oil in the heated object.
Furthermore, since the steam generation unit 30 continues to generate superheated steam or saturated steam to heat the object to be heated placed on the mesh member 4, the steam generation unit 30 around the object to be heated placed on the mesh member 4 The space is filled with superheated steam or saturated steam and becomes oxygen-free. Thereby, the heat cooking which suppressed the oxidation of the to-be-heated material is attained.
Moreover, in the heating cooker 1A according to the present embodiment, the steam outlet 22 that blows out superheated steam or saturated steam is provided only on the inner surface of the side wall 23 of the heating furnace 20. No heat source such as a steam outlet 22 or a heater is provided on the bottom surface 24 located immediately below the object to be heated placed on the net member 4. Thereby, even if the fats and oils or juice which came out of the to-be-heated material dripped during the cooking process, it is possible to prevent these oils and fats from being heated and producing smoke.
Moreover, the heating cooker 1 </ b> A may include a lid member that covers the open portion 21 of the heating furnace 20. And according to the kind of to-be-heated material, you may make it perform the cooking using a cover member. For example, when cooking food that is difficult for heat to pass through, cooking is performed with the lid 21 covering the open portion 21 of the heating furnace 20 in order to efficiently heat the object to be heated.
The member on which the object to be heated is placed is not limited to the net member 4 having a mesh structure, and the support that can support the object to be heated at the open portion 21 of the heating furnace 20 or a position below the open portion 21. If it is a member, it will not specifically limit. For example, a tray etc. are mentioned as a supporting member which supports a to-be-heated material.
The mesh member 4 supports the object to be heated so as to come into contact with the superheated steam filled in the heating furnace 20 by the mesh structure. Therefore, the object to be heated can be cooked without unevenness.
Further, as shown in FIG. 1 to FIG. 3A, the inner surface of the side wall 23 of the heating furnace 20 is inclined with respect to the bottom surface 24. More specifically, the side wall 23 of the heating furnace 20 is configured such that the interval between the inner surfaces of the side walls 23 facing each other becomes narrower toward the bottom surface 24.
With such a configuration, it becomes possible to blow superheated steam obliquely upward from the steam outlet 22. Therefore, the object to be heated placed on the mesh member 4 can be easily cooked from below.
In the configuration shown in FIGS. 1 to 3A, the cooking device 1A is provided with the steam outlet 22 only on the inner surface of the side wall 23 of the heating furnace 20. However, the steam outlet 22 should just be arrange | positioned in the heating furnace 20 so that the fats and oils dripped from the to-be-heated material in the cooking process may be avoided.
FIG. 3 (b) is a plan view schematically showing an example of the arrangement of the steam outlets 22 which is different from the configuration shown in FIGS. 1 to 3 (a). As shown in FIG. 3B, the steam outlet 22 may be provided on the bottom surface 24 of the heating furnace 20. The steam outlet 22 is preferably provided on the outer peripheral side of the bottom surface 24 with respect to the region overlapping the bottom surface 41 of the net member 4.
The fat or juice from the object to be heated during the cooking process can be dropped on the bottom surface 24 of the heating furnace 20 in a region overlapping with the bottom surface 41 of the net member 4. According to the configuration shown in FIG. 3B, the steam outlet 22 is provided on the outer peripheral side of the bottom surface 24 with respect to the region overlapping with the bottom surface 41 of the mesh member 4, so that the oil or juice is not It is possible to prevent smoke from being heated.
In addition, the saucer 25 which receives the fats and oils or juice which came from the to-be-heated material in the cooking process may be installed in the bottom face 24 of the heating furnace 20. FIG. The tray 25 is provided in a portion of the heating furnace 20 other than the portion where the steam outlet 22 is formed. The tray 25 can be removed from the heating furnace 20.
[Embodiment 2]
The following will describe another embodiment of the present invention with reference to FIGS. FIG. 5 is a perspective view showing the configuration of the heating cooker 1B according to the present embodiment. Moreover, FIG. 6 is a perspective view which shows the structure inside the heating cooker 1B. Moreover, FIG. 7 is sectional drawing which shows the structure of the heating cooker 1B. For convenience of explanation, members having the same functions as those described in the embodiment are given the same reference numerals, and descriptions thereof are omitted.
As shown in FIGS. 5 to 7, the heating cooker 1B according to the present embodiment is different from the first embodiment in the shape of the heating furnace 20B. In the heating cooker 1B according to the present embodiment, the heating furnace 20B is a recess-shaped container having an open part 21B at the top, and is in the form of a rectangular container. And the steam blower outlet 22 is provided in each inner surface of the two side walls 23B including the rectangular long side among the four side walls 23B of the heating furnace 20B.
Two steam generators 30 for generating saturated steam or superheated steam to be supplied to the heating furnace 20B through the steam outlet 22 are provided. And these two steam generation parts 30 are provided in the outer surface of each of the two side walls 23B containing the rectangular long side among the four side walls 23B which comprise the heating furnace 20B.
The net member 4B is in the form of a container adapted to the upper part having the open part 21B in the heating furnace 20B. That is, it is in the form of a rectangular container.
Also, two water supply units 50B are provided corresponding to the steam generation unit 30. The water supply unit 50 </ b> B includes a water supply tube 51 </ b> B connected to the steam generation unit 30, and supplies water to the steam generation unit 30.
Further, the heating furnace 20B, the steam generation unit 30, and the water supply unit 50B are accommodated in the housing 6B. The housing 6B has a quadrangular prism shape having a rectangular bottom surface.
As described above, the heating cooker 1B according to the present embodiment is a recess-shaped container in which the heating furnace 20B has the open part 21B in the upper part, and is in the form of a rectangular container. Moreover, the steam blower outlet 22 is provided in the inner surface of the two side walls 23B which the heating furnace 20B opposes. The cooking device 1B having the heating furnace 20B having such a shape is suitable for cooking of skewers such as yakitori. Therefore, the size of the heating furnace 20B can be set according to the size of the skewer.
Further, in the configuration shown in FIGS. 5 to 7, the steam outlet 22 is provided on the inner surfaces of the two opposite side walls 23B of the heating furnace 20B. However, the position of the steam outlet 22 can be appropriately set according to the size of the heating furnace 20B, the size of the bottom surface on which the object to be heated in the mesh member 4B is placed, and the like. When the size of the bottom surface on which the object to be heated is placed in the net member 4B is relatively large and the heating cooker 1B is configured to be able to heat many objects to be heated at a time, the steam outlet 22 is a heating furnace. It is preferable to be provided on the bottom surface 24B of 20B.
The closer the distance between the heated object placed on the net member 4B and the steam outlet 22, the more efficiently the heated object can be cooked. When the size of the bottom surface on which the object to be heated is placed in the mesh member 4B is relatively large, if the distance between the individual object to be heated placed on the mesh member 4B and the steam outlet 22 is not uniform, the object to be heated is heated. The heating situation is uneven for each item. When the steam outlet 22 is provided on the bottom surface 24B of the heating furnace 20B, the distance between the individual objects to be heated placed on the mesh member 4B and the steam outlet 22 is uniform. be able to.
Further, when the steam outlet 22 is provided on the bottom surface 24B of the heating furnace 20B, as shown in FIG. 8, the steam outlet 22 is provided in the outer peripheral region of the bottom surface 24B of the heating furnace 20B. preferable. FIG. 8 shows another modification of the heating cooker 1B according to this embodiment, and is a plan view schematically showing a configuration in which the steam outlet 22 is formed on the bottom surface 24B of the heating furnace 20B.
When a skewer such as a grilled chicken is placed on the mesh member 4B as the object to be heated and cooked by heating, the oil or juice from the object to be heated during the cooking process is not removed from the mesh member 4B on the bottom surface 24B of the heating furnace 20B. It is dripped at the area | region which overlaps with the bottom face 41B. In the configuration shown in FIG. 8, the steam outlet 22 serving as a heat source is provided in a region on the outer peripheral side with respect to the region overlapping the bottom surface 41 </ b> B of the net member 4 </ b> B on the bottom surface 24 </ b> B. Therefore, even if the fat or juice from the object to be heated is dripped during the cooking process, it is possible to prevent the fat or juice from being heated and generating smoke.
In addition, the saucer 25B which receives the fats and oils which came from the to-be-heated material in the cooking process may be installed in the bottom face 24B of the heating furnace 20B. The tray 25B is provided to avoid the steam outlet 22 formed on the bottom surface 24B of the heating furnace 20B. Further, the tray 25B is removable from the heating furnace 20B.
[Embodiment 3]
The following will describe another embodiment of the present invention with reference to FIGS. FIG. 9 is a perspective view showing a configuration of a heating cooker 1C according to the present embodiment. FIG. 10 is a perspective view showing an internal configuration of the heating cooker 1C. Moreover, FIG. 11 is sectional drawing which shows the structure of 1C of heating cookers. For convenience of explanation, members having the same functions as those described in the embodiment are given the same reference numerals, and descriptions thereof are omitted.
9 to 11, the heating cooker 1C according to the present embodiment is different from the first or second embodiment in the shape of the heating furnace 20C. In the heating cooker 1C according to the present embodiment, the heating furnace 20B is a recess-shaped container having an open portion 21C at the top, and is in the form of a cylindrical container. And the steam blower outlet 22 is provided in the outer surface of the side wall 23C which comprises the cylindrical part of the heating furnace 20C.
Four steam generators 30 for generating saturated steam or superheated steam to be supplied to the heating furnace 20C via the steam outlet 22 are provided. These four steam generation units 30 are provided on the outer surface of the cylindrical side wall 23C of the heating furnace 20C, and are disposed so as to surround the cylindrical side wall 23C from four orthogonal directions.
The mesh member 4C is in the form of a container adapted to the upper part having the open portion 21C in the heating furnace 20C. That is, it is in the form of a cylindrical container.
Further, four water supply units 50C are provided corresponding to the steam generation unit 30. The water supply unit 50 </ b> C includes a water supply tube 51 </ b> C connected to the steam generation unit 30, and supplies water to the steam generation unit 30.
Moreover, the heating furnace 20C, the steam generation unit 30, and the water supply unit 50C are accommodated in the housing 6C. The casing 6C has a cylindrical shape having a circular bottom surface.
The heating cooker 1C according to the present embodiment can cook by using superheated steam while easily operating an object to be heated during cooking as in the first embodiment.
In addition, the heating furnace 20C may be provided with a receiving tray 25C that receives oil or juice from the object to be heated during the cooking process. The tray 25C is separated from the bottom surface 24C of the heating furnace 20C. Since the bottom surface 24C and the tray 25C are separated from each other in this manner, there is a heat insulating effect that suppresses the heat of superheated steam blown from the steam outlet 22 formed on the side wall 23C from being transmitted to the bottom surface 24C of the heating furnace 20C. .
The receiving tray 25C may be provided in a portion other than the portion where the steam outlet 22 is formed, and may be installed in contact with the bottom surface 24C of the heating furnace 20C as in the first and second embodiments.
