Abstract

La invención describe un método para identificar las bacterias Oenococcus, Leuconostoc, Pediococcus y Lactobacillus en una muestra de fermentación, que comprende los pasos de a) obtención de una muestra desde una fermentación; b) eliminación de sustancias colorantes, fenoles y otras sustancias inhibidoras del PCR de la muestra; c) lisis de las bacterias presentes en la muestra; d) extracción del DNA de las muestras; e) amplificación por PCR del DNA extraído usando partidores universales diseñados para una zona objetivo del gen 16S r RNA, f) digestión de los amplificados usando una solución de restricción con enzimas elegidas por análisis teórico; g) incubación; h) electroforesis de los fragmentos obtenidos. La invención también provee un kit para aplicar el método descrito.
