Abstract

Cette invention concerne des pigments anthocyanes stabilisés à titre de colorants pour aliments, boissons, applications cosmétiques et pharmaceutiques, ainsi que des procédés pour stabiliser lesdits pigments anthocyanes, comprenant les pigments anthocyanes du Raphanus sativus (radis rouge), à l'aide d'acide rosmarinique. La présente invention concerne, en outre, une combinaison compositionnelle d'anthocyanes de radis rouge et d'acide rosmarinique, qui peut être mélangée à d'autres pigments anthocyanes et couleurs pour stabiliser la composition d'anthocyane obtenue.
