Abstract

Cette invention porte sur une encre comestible, et, en particulier, sur une encre appropriée pour l'impression par une imprimante à jet d'encre, laquelle encre peut être imprimée sur du chocolat, en particulier sur des produits de crème glacée recouverts de chocolat. A l'heure actuelle, des produits de crème glacée recouverts de chocolat sont imprimés au tampon par un élément décoratif afin de les rendre plus distincts et attractifs, et de réduire leur contrefaçon. Il y a un certain nombre d'inconvénients associés à ce procédé de décoration. Les problèmes précédemment mentionnés sont résolus par le fait de procurer un procédé d'impression à jet d'encre d'une encre non conductrice comestible sur du chocolat, lequel procédé comprend les étapes consistant à : a) appliquer l'encre sur du chocolat à l'aide d'une imprimante à jet d'encre, de façon à produire ainsi un chocolat imprimé, puis ; b) stocker le chocolat imprimé à une température inférieure à zéro, de préférence dans la plage de zéro à -30, de la façon la plus préférable dans la plage de -5 à -20 degrés Celsius ; l'encre comprenant un liant polymère, un colorant et au moins un solvant organique, le liant polymère comprenant au moins une substance choisie dans le groupe comprenant des polysaccharides, des glycoprotéines, des esters, des polyesters, de la poly(vinylpyrrolidone), des dérivés de ceux-ci et des mélanges de ceux-ci, le liant polymère ayant une masse moléculaire moyenne en nombre soit non supérieure à 100.000, soit, lorsqu'elle est supérieure à 100.000, ayant un rapport de concentration de polymère de l'encre à la concentration de recouvrement de polymère inférieure ou égale à 1, la concentration de recouvrement de polymère étant l'inverse de la viscosité intrinsèque du liant polymère dans l'encre, le colorant étant soluble dans l'huile, l'encre se présentant sous la forme d'une solution isotrope et ayant un nombre de Ohnesorge (Oh) supérieur à 0,1 mais inférieur à 1, l'encre comprenant moins de 1 %, de préférence moins de 0,5 %, de façon plus préférable moins de 0,01 %, de façon encore plus préférable moins de 0,001 %, et, de la façon la plus préférable, zéro %, en poids, de colorant soluble dans l'eau.
