Definitions
- the present invention relates to an apparatus for serving glass of a liquid, especially wine, contained in a container. Due to the evolution of wine consumption in restaurants and bars, professionals have been equipped with appliances to serve the glass of wine contained in its original bottle. The wine can thus be progressively withdrawn from its bottle, to flow in a glass, via a spout or the like, while, generally, the bottle is kept at an optimal tasting temperature for the wine served.
- GB-A-1 415 734 proposes, for its part, a glass service apparatus for an alcohol.
- This apparatus comprises a liquid withdrawal duct, which can be connected to the lower part of an alcohol bottle and through which the alcohol can be pumped from this lower part, in order to be then served in a glass.
- this device is associated with a special plug which, by admission of outside air, avoids the appearance of a depression in the bottle. This device does not ensure the preservation of the flavor of the liquid.
- DE-A-101 44 922 provides an example. These devices are not widespread because their handling is tedious and their possible leaks are not compensated automatically, which makes them unreliable. In addition, these devices must be neutralized and released from the bottle each time you want to use it in glass, then it is necessary to react the devices to restore the vacuum, with the disadvantages mentioned above.
- the object of the present invention is to provide a glass service apparatus, which is both economical and simple to implement, while limiting the risk of alteration of the liquid served by this device.
- the subject of the invention is an apparatus for serving glass of a liquid, in particular wine, contained in a container, as defined in claim 1.
- the idea underlying the invention is to allowing the liquid, in particular the wine, contained in the container to be withdrawn, while maintaining above the liquid an air pressure comprised between the first and second predetermined values, therefore at a pressure of air less than the pressure atmospheric, which ensures its preservation.
- the progressive withdrawal of the liquid is not impeded by the presence of the partial vacuum in the upper part of the container, since the air pressure is never lowered below the second predetermined value.
- clever management of the vacuum allows to dispense with the use of a propellant, which is less restrictive and more economical.
- Other advantageous features of the apparatus according to the invention, taken individually or in any technically possible combination, are specified in the dependent claims 2 to 14.
- FIG. 1 is a diagram of an apparatus according to the invention.
- FIG. 2 is a diagram of only part of this device, made according to a variant of the invention.
- Figure 1 an apparatus 1 for serving in a glass 2 wine 3 initially contained in a bottle 4 which typically corresponds to the bottle in which the wine 3 is marketed and aged.
- the apparatus 1 mainly comprises, on the one hand, a first assembly 10 making it possible to lower the pressure in the upper part 4A of the bottle 4 and maintain this pressure in a range of predetermined values, as explained in more detail below, and, secondly, a second assembly 20 for withdrawing the wine 3 from the lower part 4B of the bottle 4, to the distribute in the glass 2, also as explained in detail later.
- the first assembly 10 comprises a vacuum pump 11, for example an electric pump, connected by a duct 12 to the upper part 4A of the bottle 4, in particular via a sealing plug 5 which closes the high end neck 4Ai of the bottle and which is traversed from one side through the conduit 12.
- the vacuum pump 11 is associated with a control pressure switch 13 which is designed to actuate the vacuum pump as long as the gas pressure in the duct 12 is greater than a first predetermined value designated below as Pi, for example equal to in absolute pressure at 600 mbar.
- the assembly 10 also comprises a valve 14 connected, on one side, to the conduit 12 and, on the opposite side, to an outlet opening 15.
- the valve 14 is calibrated at a pressure equal to a second value predetermined, hereinafter referred to as P 2 and strictly less than the pressure value Pi.
- P 2 a second value predetermined
- P 1 is 600 mbar
- P 2 is 550 mbar.
- the calibration of the valve 14 is provided to maintain closed this valve as the gas pressure in the conduit 12 is greater than the pressure value P 2 while, as soon as the pressure in this conduit 12 passes below the value P 2 , the valve 14 opens and thus connects the conduit 12 to the open air via its outlet 15.
- the assembly 20 comprises a self-priming liquid pump 21, whose inlet is connected to a conduit 22 which opens into the bottom 4B 1 of the bottle 4, after having passed through the sealing cap 5, and whose the outlet is connected to another conduit 23 which opens into a spout 24.
- This liquid pump 21 is thus able to suck the wine 3 contained in the lower part 4B of the bottle 4, automatically starting up , and to send it to the spout 24, from which it can flow into the glass 2.
- the liquid pump 21 is made of so-called food grade materials, that is, to say in materials compatible with the contact of liquid foodstuffs.
- the liquid pump 21 is a peristaltic pump, preferably reversible so that, by means of an ad hoc command, the pump can pump back into the bottle 4 the stagnant wine in the conduits 22 and 23, in particular when a prolonged period of inactivity of the pump to withdraw the bottle.
- the liquid pump 21 such as a piston electromagnetic pump.
- the liquid pump 21 has a constant pumping rate, which allows to adjust the quantity served wine 3 by counting time.
- the liquid pump 21 is associated with a flow sensor 25 placed in series with the liquid pump, for example at the outlet of the latter as shown in Figure 1.
- the quantity served by the 3 will be determined on the basis of the measurements provided by this flow sensor 25.
- the flow rate value for the liquid pump 21 is, for example, of the order of 1.5 l / min.
- the service can be ordered solely on the basis of the arbitrary appreciation of the user, without assistance of a dedicated means to dose or adjust the amount of wine served .
- the spout 24 includes venting means 26 to prevent the retention of wine in the spout.
- the latter is preferably made in the form of a flexible material tubing, as short as possible to reduce as much as possible the circulation path of the wine 3 between the outlet of the liquid pump 21 and the inlet of the spout 24.
- the spout 24 carries an actuator 27 for controlling the liquid pump 21, for example a switch-button connected to the engine of the liquid pump.
- An example of the operation of the apparatus 1 is as follows. Initially, after opening the bottle 4 for the first time, that is to say having removed the original cap, typically cork, the neck 4Ai of the bottle is sealed by the cap 5.
- the pump at empty 1 1 and its associated pressure switch 13 are then put into operation: the pressure switch 13 measures while the pressure in the conduit 12 is greater than the pressure value Pi, since it is initially equal to the atmospheric pressure, so that 'he operates the vacuum pump 1 1.
- the air pressure in the upper part 4A of the bottle 4 decreases progressively until reaching the pressure value Pi, at which the pressure switch commands the shutdown of the vacuum pump.
- the wine 3 contained in the lower part 4B of the bottle is then preserved remarkably thanks to the beneficial effect of the partial vacuum prevailing in the upper part 4A of the bottle.
- the liquid pump 21 withdraws the wine 3 from the bottom 4Bi of the bottle 4, via the conduit 22, and feeds the conduit 23 with this wine.
- the glass 2 then fills up progressively, until, after a given duration, is predetermined in the case where the liquid pump 21 has a constant flow, is determined in real time on the basis of flow measurements. provided by the sensor 25, the liquid pump 21 stops.
- the wine 3 then stagnant in the spout 24, or even in the conduit 23, escapes and flows freely in the glass 2, in particular under the effect of venting the means 26.
- the withdrawal of the volume of wine 3 sucked by the liquid pump 21 in the lower part 4B of the bottle 4 causes the lowering of the level of the surface 4C of the wine in the bottle and, consequently, the increasing the intensity of the vacuum in the upper part 4A of the bottle.
- the pressure in this upper part 4A decreases, thus from the pressure value Pi to a lower pressure value, until, if necessary, reaching the pressure value P 2 , for which the valve 14 s opens. Outside air is then admitted into the upper part 4A of the bottle 4, via the valve 14 open, until the pressure in this upper part 4A returns above the pressure value P 2 .
- the calibrated valve 14 enters the upper part 4A of the bottle 4 a volume of air compensating the volume of the wine 3 withdrawn by the liquid pump 21, while maintaining the air pressure in the upper part 4A of the bottle 4 has a value slightly greater than the pressure value P 2 .
- this value is detected by the pressure switch 13 which then controls the actuation of the vacuum pump 11 to lower the pressure again below the pressure value P 1 .
- this additional action of the vacuum pump 11 can be regularly implemented through the pressure switch 13 if the sealing of the plug 5 is not strictly perfect.
- FIG 2 is shown an alternative embodiment of the conduit connecting the bottom 4B 1 of the bottle 4 and the inlet of the liquid pump 21.
- the conduit 22 'shown in Figure 2 consists of two distinct parts, namely a portion 22'A placed inside the bottle 4, extending from its bottom 4B 1 up to its neck 4A 1 , and a portion 22'B which, on the outside of the bottle, connects the portion 22'A to the inlet of the liquid pump 21.
- the outlet of the conduit portion 22'B opposite the outlet connected to the liquid pump 21, is sealingly connected to the outlet of the portion 22'A, located at the neck 4A 1 of the bottle 4, as in Figure 2.
- the wine 3 withdrawn from the bottom 4B 1 under the action of the liquid pump successively supplies the portions 22'A and 22'B.
- the end of the portion 22'A is integral with, or even integral with, a discoidal element 5'A sealing support on the drinking of the neck 4A 1 of the bottle 4.
- the duct portion 22'A can thus be arranged inside the bottle, without running the risk of escaping from it.
- This support element 5'A delimits a through hole 5'A 1 through which the duct 12 passes.
- the duct 12 and the duct portion 22'B are connected to the same support member 5'B which when the apparatus 1 is in use, together with the support element 5'A forms a plug 5 'functionally similar to the plug 5 considered in FIG.
- the advantage of the variant of Figure 2 is that, rather than having to regularly clean the entire conduit 22, the user can, at each change of bottle 4 to withdraw, take in a stock of clean parts a new part of conduit 22'A.
- the part of the duct 22 ', intended to be placed inside the bottles 4, can be easily changed, the user disposing of permanence of at least a portion of 22'A duct clean while other parts of duct 22'A already used can be cleaned at the same time.
- a first solution is to mechanically fix the two elements 5'A and 5'B to each other.
- Another solution is to use the element 5'B to firmly press the element 5'A against the rim of the neck 4Ai of the bottle 4, so as to crush this element 5'A sealingly against the neck bottle.
- the plug 5 ' consisting of the two elements 5'A and 5'B, is then similar to what is called a vacuum draw head in the aforementioned document, it being understood that, in the context of the present invention, the plug 5 'accumulates a function of emptying and a wine racking function as explained previously.
- the plug 5 ' can be made by providing that its element 5'B moves mechanically guided relative to the element 5'A based on the neck 4A 1 of the bottle 4.
- this outlet can be connected to a dedicated gas source, typically a cartridge of neutral gas, such as nitrogen, argon, etc., or a carbon dioxide cartridge, as shown in dashed lines in Figure 1 as 16; in this way, neutral gas or carbon dioxide is injected into the upper part 4A of the bottle 4 each time the valve 14 opens to compensate for a volume of wine 3 withdrawn by the liquid pump 21; the admission into the bottle 4 of oxygen contained in the air is thus limited, without the source of gas used being used to propel the wine outside the bottle since the pressure in the upper part 4A of this bottle is maintained at a value lower than the atmospheric pressure, more precisely between the pressure values P 1 and P 2 as explained above; and or
- valve 14 can be directly connected in a sealed manner to the upper part 4A of the bottle 4, that is to say via its own conduit, passing through the cap 5 or 5 '.
