Abstract

La présente invention porte sur des delta5 désaturases mutantes, qui ont l'aptitude de convertir l'acide dihomo-γ-linolénique [DGLA; 20:3 ω-6] en acide arachidonique [ARA; 20:4 ω-6] et/ou l'acide eicosatétraénoïque [ETA; 20:4 ω-3] en acide eicosapentaénoïque [EPA; 20:5 ω-3] et qui possèdent au moins une mutation dans le motif HPGG du domaine de type cytochrome b 5. L'invention porte sur des fragments d'acide nucléique isolés et des produits de construction recombinants comprenant de tels fragments codant pour les delta5 désaturases, conjointement avec un procédé de production d'acides gras polyinsaturés à longue chaîne [« PUFA »] à l'aide de ces delta5 désaturases mutantes dans une levure oléagineuse.
