Abstract

L'invention concerne une boisson contenant une bactérie lactique dont l'activité antiallergique est réduite, réduction qui se produit essentiellement pendant la fabrication, la distribution et la consommation de la boisson ou au cours d'un entreposage prolongé ou lorsque l'historique thermique, comme la chaleur, n'a pas lieu ; et un procédé de prévention de la réduction de l'activité antiallergique d'une bactérie lactique. Une réduction de l'activité antiallergique d'une bactérie lactique contenue dans une boisson est empêchée par l'ajout de cellules sèches de la bactérie lactique qui possède l'activité antiallergique avec un ingrédient laitier.
